6 Eggs, beaten
1/4 cup minced scallions
1/2 cup shredded Chinese Cabbage
1/2 cup minced water chestnuts
1/2 pound Ground chicken
1 tablespoon Soy Sauce or Coconut Aminos
4 tablespoons avocado oil for cooking
2 cups chicken Broth
2 tablespoons Soy Sauce or Coconut Aminos
1 tablespoon Granular Sweetener (Click here to see my favorite on Amazon)
1 tablespoon Vinegar
1/2 teaspoon xanthan gum (click here to see my favorite brand on Amazon)

Steps:

  • In a large mixing bowl combine the egg, scallions, cabbage, water chestnuts, chicken and soy sauce.
  • Heat 1/2 tablespoon of oil in a 4-6 inch skillet over medium heat and add 1/4 cup of the mixture to the pan. Flatten the top like a pancake.
  • Cook the pancake until set and brown. Should take about 3 minutes. Flip and cook the other side for a couple of minutes more.
  • Remove from the skillet and set aside on a sheet pan. Place the sheet pan in the oven set to 250F to keep the pancakes warm.
  • Continue with the remaining batter, being sure to stir the mixture before adding to the pan. Makes approximately 8 pancakes.
  • When all of the pancakes are cooked, add the chicken broth, soy sauce, sweetener, vinegar and xanthan gum to a sauce pan. Whisk to combine and bring to a boil to thicken. Remove from heat.
  • Serve the egg foo young pancakes with the sauce.

8 ounces Chicken (fineley chopped and cooked )
1/2 Red Bell Pepper (finely chopped )
1/2 Medium Onion (finely chopped )
1/2 cup Bean Sprouts
1/3 cup Green Onion (chopped )
1/2 tsp Garlic Powder
1 cup Chicken Broth
1/2 tbsp Rice Wine Vinegar
2 tbsp Soy Sauce
1/2 tsp Xanthan Gum

Steps:

  • Combine all of the ingredients for the egg foo young together in a large mixing bowl, and whisk to combine well.
  • Heat a few inches of oil in a deep sided skillet over medium high heat on the stove.
  • Drop ⅓ cup of the mixture at a time into the heated oil, and cook for 2-4 minutes on each side until done to your liking. Drain on a paper towel lined rack to cool.
  • Add the chicken broth, rice wine vinegar and soy sauce to a saucepan over medium heat on the stove until heated through.
  • Sprinkle the xanthan gum onto the mixture a little at a time, and whisk to combine. Continue to cook until the mixture has thickened and then let cool.
  • Serve the egg foo young topped with gravy with additional green onions for garnish if desired.

6 eggs
1/4 cup coconut flour
1 teaspoon fish sauce (or kosher salt, to taste)
1/2 teaspoon apple cider vinegar
1 cup diced ham (or cooked meat of choice)
10 ounces frozen spinach, thawed and squeezed dry
2 scallions, sliced
1 tablespoon minced fresh cilantro
1 cup raw mung bean sprouts
1/2 cup bamboo shoot (canned, strips, rinsed)
1/2 teaspoon baking soda
1/4 teaspoon fresh ground black pepper
4 tablespoons butter (or coconut oil for frying)

Steps:

  • In a large bowl, whisk together the eggs, coconut flour, fish sauce, and apple cider vinegar until smooth.
  • Mix in the ham, spinach, scallions, cilantro, mung bean sprouts, bamboo shoots, baking soda, and some freshly ground black pepper.
  • Melt a tablespoon of butter in a cast iron skillet over medium heat. Use a large scoop (3-tablespoon size) to plop the batter in the pan, and flatten the pancake to ½-inch thick with the back of a spoon. I can comfortably fit 3 pancakes in my 12-inch skillet at a time - don't overcrowd them!
  • Fry without disturbing the patties for 2 minutes before flipping the pancakes over and cooking it on the other side for about 1-2 minutes more. The pancakes are cooked through when the centers bounce back when you press down on them with your finger.
  • Repeat until you're out of batter. I like these pancakes plain, but they're also great topped with sriracha.

1/2 teaspoon xanthan gum

Steps:

  • Beat eggs in a large bowl and then stir in remaining ingredients for the omelette.
  • Heat 1-2 tablespoons oil in a medium skillet over medium heat. When pan is hot, drop about 1/2 to 2/3 of omelette mixture into pan at a time. Brown each omelette on both sides, about 2-3 minutes each. Remove each cooked omelette to a plate.

4 tablespoons canola oil
1/4 cup onion (chopped)
2 cups cabbage (shredded)
6 eggs
1 tablespoon soy sauce
2 tablespoons sesame oil
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon fresh ground black pepper
1 cup bean sprouts (pressed down firmly in cup)
1 cup cooked small shrimp (or large dice medium)

Steps:

  • Place 2 tablespoons oil in large skillet, and cook onions and cabbage over medium-high heat until tender.
  • Remove from heat and drain off excess liquid and set the onions and cabbage to the side.
  • Whisk eggs in a bowl and mix in soy sauce, sesame oil, spices, onion and cabbage mixture, and sprouts.
  • Using a non-stick pan over medium-high heat, heat the remaining 2 tablespoons of oil.
  • Ladle about 4 ounces of the mixture into the hot pan, as you would for pancakes, and sprinkle the shrimp evenly on top of each.
  • Cook for about 3 minutes, or until edges begin to brown, and when jiggled, they slide in the pan.
  • Flip them over and cook another 2 to 3 minutes until cooked through.
  • NOTE: If the Egg Foo Young becomes brown too quickly, finish it by baking in a preheated 350 degree oven for a few minutes.

  • Heat oil in skillet.
  • Mix eggs and vegetables.
  • Pour about 1/4 cup mixture in pan as to make a small 3" omelet; fry till golden brown. Make as many as needed or can save some mixture for later.

1 head cauliflower
4 garlic cloves, minced
1 tablespoon olive oil
3 eggs, beaten
1 cup mozzarella cheese, divided
1/2 teaspoon onion powder
1/4 teaspoon salt
1 dash pepper

Steps:

  • Chop the cauliflower into chunks and place into microwave for about 8 minutes or until soft. It is easier to work with if you then let it cool a bit.
  • Preheat oven to 450.
  • Place the cauliflower and garlic into a food processor and blend, drizzle in olive oil and continue blending until cauliflower is the texture of mashed potatoes.
  • In a large bowl, stir together cauliflower, eggs, 1/2 cup cheese, onion powder, salt and pepper.
  • Spray a baking pan, 11.5" x 7", with oil and pat mixture into pan. It should be abour 1/2 inch thick.
  • Bake at 450 degrees for 25 minutes or until the top starts to brown.
  • Add remaining cheese to the top and melt.
  • Cool slightly, then cut and serve.
