1/4 cup butter, cubed
1/4 cup semisweet chocolate chips
1-1/2 teaspoons instant coffee granules
1/3 cup sugar
1/3 cup packed brown sugar
1 large egg, room temperature, lightly beaten
1 teaspoon vanilla extract
1 cup all-purpose flour
2 tablespoons plus 2 teaspoons baking cocoa
1/4 teaspoon baking powder
1/8 teaspoon salt
1/3 cup English toffee bits or almond brickle chips
1 ounce milk chocolate, melted

Steps:

  • In a microwave-safe bowl, melt butter and chocolate; stir until smooth. Stir in coffee granules until dissolved; cool for 5 minutes. Transfer to a small bowl. Add the sugars, egg and vanilla., Combine the flour, cocoa, baking powder and salt; add to chocolate mixture and mix well. Stir in toffee bits. Drop by rounded tablespoonfuls 2 in. apart onto a baking sheet lightly coated with cooking spray. , Bake at 350° for 8-10 minutes or until set. Cool for 1 minute before removing to a wire rack to cool completely. Drizzle with melted milk chocolate.

3/4 cup sugar
1/4 cup brown sugar, Packed
1 egg
1 1/2 cups flour
2 tablespoons instant coffee, No crystals
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 teaspoons vanilla
1 cup walnuts, Finely chopped
12 ounces semi-sweet chocolate chips

Steps:

  • Preheat oven to 350.
  • Cream butter.
  • Add both sugars and beat well.
  • Add egg and mix well.
  • Add flour, coffee powder, baking powder, salt, cinnamon, vanilla, and 1/2 c walnuts.
  • Mix well.
  • Wrap dough in wax paper and chill thouroughly in refrigerator (at least two hours).
  • Remove dough from refrigerator.
  • Using rounded teaspoonfuls of dough, shape into balls using palms of hands and place 2 inches apart on an ungreased cookie sheet.
  • Bake 12-15 minutes.
  • Remove cookie sheet from oven and working quickly place 3-4 chocolate chips in the center of each hot cookie.
  • When chocolate has softened, spread over top and sprinkle with balance of walnuts.
  • Remove to wire rack and cool.

Steps:

  • In a meta bowl set over a saucepan of simmering water melt the unsweetened chocolate, 1 1/2 cups of the chocolate chips, and the butter, stirring until the mixture is smooth, and remove the bowl from the heat. In a small bowl stir together the flour, the baking powder, and the salt. In a bowl beat the eggs with the sugar until the mixture is thick and pale and beat in the espresso powder and the vanilla. Fold the chocolate mixture into the egg mixture, fold in the flour mixture, and stir in the remaining 1 1/2 cups chocolate chips. Let the batter stand for 15 minutes. Drop the batter by heaping tablespoons into baking sheets lined with parchment paper and bake the cookies in the middle of a preheated oven at 350 degrees for 8 to 10 minutes, or until they are puffed and shiny and cracked on top. Let the cookies cool on the baking sheets, transfer them to racks, and let them cool completely

1 cup buttermilk
3 cups sifted cake flour
¼ cup cocoa powder
¼ teaspoon salt
1 cup unsalted butter, softened
2 ½ cups white sugar
1 tablespoon strong brewed coffee
2 teaspoons strong brewed coffee
2 teaspoons vanilla extract
5 large egg whites
½ cup unsalted butter, softened
2 tablespoons unsweetened cocoa powder
4 ½ cups sifted powdered sugar
1 large egg yolk, beaten
2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 8-inch round cake pans.
  • Dissolve baking soda in buttermilk. Combine flour, cocoa powder, and salt in a separate bowl.
  • Beat butter in a mixing bowl until creamy. Gradually add sugar, beating well. Add flour mixture alternately with the buttermilk mixture, beginning and ending with the flour mixture; mix well after each addition. Stir in 1 tablespoon plus 2 teaspoons coffee and vanilla.
  • Beat egg whites in a glass, metal, or ceramic bowl until stiff peaks form. Gently fold into the creamed mixture. Pour batter into the prepared cake pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool in the pans for 10 minutes. Run a table knife around the edges to loosen. Invert cakes carefully onto a serving plate or cooling rack. Let cool, about 20 more minutes.
  • While the cake is cooling, beat butter and cocoa powder for frosting in a bowl until well creamed. Add powdered sugar, egg yolk, and vanilla and beat until smooth.
  • Stack the 3 cake layers on top of each other, spreading frosting between layers, and on top of the cake.

1-1/4 cups sugar
1 egg
1 tsp. vanilla
1/3 cup milk
1-1/4 cups flour
1/2 cup MAXWELL HOUSE INTERNATIONAL Suisse Mocha
2 tsp. baking powder

Steps:

  • Preheat oven to 350°F. Microwave chocolate in large microwaveable bowl on HIGH 1-1/2 min. or until chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted.
  • Add butter and sugar; beat with electric mixer on medium speed until well blended. Add egg and vanilla; mix well. Blend in milk. Add flour, flavored instant coffee and baking powder; beat on low speed until well blended. Drop tablespoonfuls of dough, 2 inches apart, onto ungreased baking sheets.
  • Bake 9 min. or until cookies are puffed and leave a slight indentation when touched lightly in centers with fingers. Cool 2 min. on baking sheets; remove to wire racks. Cool completely.
