¾ cup walnut halves
10 ounces mixed salad greens with arugula
2 large navel oranges, peeled and sectioned
½ cup sliced red onion
¼ cup olive oil
¼ cup vegetable oil
⅔ cup orange juice
¼ cup white sugar
2 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
¼ teaspoon dried oregano
¼ teaspoon ground black pepper
¼ cup crumbled Gorgonzola cheese

Steps:

  • Place the walnuts in a skillet over medium heat. Cook 5 minutes, stirring constantly, until lightly browned.
  • In a large bowl, toss the toasted walnuts, salad greens, oranges, and red onion.
  • In a large jar with a lid, mix the olive oil, vegetable oil, orange juice, sugar, vinegar, mustard, oregano, and pepper. Seal jar, and shake to mix.
  • Divide the salad greens mixture into individual servings. To serve, sprinkle with Gorgonzola cheese, and drizzle with the dressing mixture.

1/2 c oil (your choice but i have switched to coconut oil)
1/4 c sugar
1/4 c balsamic vinegar
1 tsp each of salt and pepper
1 tsp dry mustard
1 tsp worcestershire sauce
1/2 medium red onion, diced small
2 tsp dried parsley
SALAD INGREDIENTS:
1 bag(s) baby spinach
1 bag(s) mixed greens (mesculin)
2 can(s) mandarin oranges
1 small cucumber, sliced thin and halved
1/2 medium red onion, sliced thin

  • 1. DRESSING: Mix all dressing ingredients and let stand in the refrigerator for AT LEAST 4 hours, but preferably overnight. (The longer that it stands the better the flavor!)

1/2 cup white sugar
1/2 cup water
1 large orange ((1 tablespoon zest and 1/2 cup juice))
1/2 teaspoon pure vanilla extract
16 ounces fresh strawberries (hulled and thinly sliced (~2 cups))
1 pint (6 ounces) blueberries
2 ripe peaches (pit removed and thinly sliced (~2 cups))
1 pint (6 ounces) fresh blackberries ((~1 and 3/4 cup))
Fresh mint leaves (optional)

Steps:

  • DRESSING: Place the sugar, water, orange juice and orange zest in a small pan over medium heat. Stir until the sugar is dissolved and bring to a boil. Lower the heat and simmer for about 15-20 minutes or until slightly thickened. Transfer mixture to a Mason jar and stir in the vanilla extract. Add a tiny pinch of salt if desired (to intensify flavor). Put the lid on the jar and refrigerate until ready to serve. This helps concentrate and intensify flavors. You don't want to pour the dressing over the fruit if it is at all warm.
  • FRUIT SALAD: Prepare the fruit by washing and thoroughly drying (wet fruit waters down the salad). Remove the stems and thinly slice the strawberries. Remove any stray stems from the blueberries. Remove the pits and thinly slice the peaches. Remove any leaves/stems from blackberries. Combine all the fruit in a large bowl and gently toss. Tear off and add in a few mint leaves if desired. Pour the cooled dressing over the fruit and gently toss again.
  • STORAGE: Fruit Salad is best enjoyed the same day it is dressed. If you'd like to have leftovers, store dressing and salad separately and only add dressing to the salad.

1 tablespoon olive oil
2 tablespoons red wine vinegar

1 cup chopped red cabbage

Steps:

  • Drain mandarin oranges, reserving oranges in a large bowl and juice in a medium bowl.

It may take about 10 minutes, depending on the heat of your burner. Cool almonds. (These may also be made ahead and stored for future use.)
  • Combine lettuce, celery and onions in a large bowl. (If you want to make ahead, I always line the bowl with a paper towel. Add the lettuce. Cover the top of the bowl with a paper towel and store in the fridge until ready to use. Add chopped celery and green onions before serving.)

  • CANDIED ALMONDS: Place the sliced almonds and white sugar in a large skillet and heat to medium and stir nearly constantly. The sugar will begin to melt and become a sticky liquid and then stick to the almonds. This takes about 3-4 minutes -- watch carefully and stir near constantly to avoid burning the nuts. As soon as the sugar turns to liquid, remove the pan from the heat and continue stirring until nuts are completely coated in the sugar. Spread the candied almonds onto a sheet of parchment paper and let harden. Break apart.
  • SALAD: Add the lettuce to a large bowl or salad platter. Peel and segment oranges or drain a can of mandarin oranges. Add to the salad. Thinly slice the apples and, if desired, toss with lemon juice. Add to the salad along with the dried cranberries and feta cheese.
  • DRESSING: Combine all of the ingredients together except for the oil and poppy seeds in a blender. Blend until all ingredients are well incorporated and zest has broken down. Transfer dressing to a mason jar and add in the olive oil and poppy seeds. Place the lid on the jar and shake until well combined.
  • ENJOY: Right before eating, add the dressing to the salad (add to taste -- you may not need it all) and candied almonds (add as many as you'd like; we typically add about 1/3 cup (See Note 2). Toss and enjoy immediately.
