MINT CHOCOLATE BONBONS

Nonstick cooking spray, for the pan
1 quart chocolate ice cream, softened (or your favorite non-dairy ice cream!)
24 mint chocolate cookies, preferably Grasshoppers
One 7.25-ounce bottle chocolate shell ice cream sauce, store-bought, or 1 cup homemade
1/2 cup chopped mint chocolate candies, preferably Andes

Steps:

  • Spray a 24-count mini muffin pan with nonstick cooking spray. Place an approximately 20-inch-long piece of plastic wrap over the muffin pan, leaving about 4 inches of excess plastic hanging over the ends of the pan. Press the plastic into each cup of the pan, making sure the cups are completely lined with the plastic wrap.
  • Using a small ice cream scoop or tablespoon measure, scoop about 1 1/2 tablespoons ice cream into each muffin cup so they are filled to the top. Place a chocolate cookie on top of each ice cream-filled muffin cup and gently press down. Freeze until the ice cream hardens, about 3 hours.
  • Place a wire rack over a baking sheet. Line a second baking sheet with parchment paper.
  • Carefully remove the plastic wrap from the muffin pan to release the bonbons from the muffin cups. Place the bonbons cookie-side down on the baking sheet lined with the wire rack. Slowly pour some of the chocolate shell ice cream sauce over about 1 to 2 bonbons at a time to cover completely. Before the sauce hardens, sprinkle the top of the bonbon with the chopped mint candies. The sauce will harden in about 30 seconds, so continue to coat 1 to 2 bonbons at a time before topping them with the chopped candies, until all 24 are coated and topped.
  • Transfer the bonbons from the rack to the parchment-lined baking sheet with an offset spatula or butter knife. If needed, dip the offset spatula in hot water, then use it to remove the bonbons from rack. (The hot spatula will help prevent the chocolate shell from cracking when you remove them.) Store in a resealable container in the freezer until ready to serve, for up to one week.

9 ounces (255g) bittersweet chocolate (chips or chopped chocolate bar)
9 ounces (255g) milk chocolate (chips or chopped chocolate bar)
1 teaspoon vanilla extract
1 tablespoon cognac ((optional))
Dippers such as fruits (strawberries and bananas are a favorite!), brownies, marshmallow, cookies, etc.

Steps:

  • Heat the heavy cream and the salt in a saucepan, over medium heat, until steaming.
  • Remove from heat and add the chocolate. Let it stand for a couple of minutes, then whisk or stir until melted.
  • Stir in the vanilla extract and, if using, the cognac.
  • Adjust the texture by adding more heavy cream or chocolate if needed. Heavy cream will thin it out and chocolate will thicken.
  • Pour into a fondue pot and serve with your favorite dippers!

1 pound bittersweet chocolate, chopped
1/4 cup heavy cream
1/4 cup Grand Marnier
1 cup raspberries
1 cup strawberries
1/2 cup small marshmallows
1 cup pound cake, cut into cubes
1 banana, sliced
1 apple, sliced

Steps:

  • In a small saucepan heat cream and Grand Marnier to a boil. Place chocolate in a fondue pot or top of a double broiler. Pour cream mixture over chocolate and heat over low heat, stirring constantly, until smooth. Arrange fruits on a pretty platter, garnished with mint sprigs. Place pot of chocolate over a small candle or alcohol burner and adjust so heat is very low. Use long forks to dip fruits and sweets into chocolate.

My comments submitted as a review when I first tried it were, "Excellent chocolate fondue. I cut the recipe in half and prepared it with Ghirardelli Semi-sweet chocolate and heavy cream. Hubby and I ate an entire pound of strawberries dipped in this luxury while watching movies tonight." I have made this many times since for just Hubby and I, and for guests. It is a very good chocolate fondue.

10 ounces bittersweet chocolate or 10 ounces semisweet chocolate, chopped into small pieces
1/2-3/4 cup half-and-half (or 1/2 to 3/4 cup milk plus 2 tablespoons unsalted butter) or 1/2-3/4 cup heavy cream (or 1/2 to 3/4 cup milk plus 2 tablespoons unsalted butter)
1/2 teaspoon vanilla extract

Steps:

  • To make the sauce, in a small bowl, combine the chocolate and 1/2 cup milk or cream and melt gently in a barely simmering water bath or microwave on Medium (50 percent) power for about 2 minutes.
  • Stir until smooth.
  • Add more liquid if the sauce seems too thick or look curdled.
  • Remove from the heat and stir in the vanilla.
  • Use warm fondue immediately or set aside until needed and rewarm briefly.
  • Have forks, skewers, or pretty (or goofy) swizzle sticks available for guests to dip with.
  • If the fondue gets too thick or cool, reheat gently (without boiling) for 1 minute in the microwave on Medium (50percent) power or set in a pan of barely simmering water.
  • Leftover sauce keeps several days in the refrigerator.
  • It is a prefect topping for ice cream.
  • Note: This is a versatile recipe that can be tailored to your taste and the type of chocolate you are using.
  • For the most intense chocolate fondue, use milk, rather than half-and-half or cream, and omit the butter.
  • For even greater intensity, choose a bittersweet chocolate labeled anywhere from 66 percent to 70 percent and use the greater amount of liquid called for.
  • Butter or cream results in a softer, mellower chocolate flavor.
  • Ideas for dipping: Kumquats or segments of seedless clementines, oranges, or ruby grapefruit- If possible, separate the citrus into segments without breaking the membrane.
  • If you set the segments on a rack to dry in a warm place or in the oven, preheated to 200° F, then turned off for several hours, the membrane will dry like crisp paper and the juices will burst in your mouth when you take a bite.
