Steps:
- Preheat oven to 350˚F. Grease a 24-cup mini muffin pan with cooking oil spray.
- Whisk flour and baking powder in a small bowl to combine.
- Add milk, egg, salt, herbs, and seasonings to the flour mixture, and whisk until combined. Stir in mozzarella and pepperoni until combined.
- Let stand 10 minutes.
- Stir mixture again and pour into muffin cups, filling each about 3/4 full. Sprinkle Parmesan evenly over the top of each cup.
- Bake until puffed and golden, about 20 minutes.
- Warm sauce in a small saucepan over medium heat or serve cold with the bites for dipping.

- Preheat oven to 450° degrees F.
- Place crust on large pizza pan or baking sheet. Spread olive oil evenly over pizza crust, add the grated Fontina cheese. Arrange leeks or onions atop the cheese. Add the chopped tomatoes and thyme. Season with salt to taste and add the pepper.
- Bake pizza until crust is golden and cheese melts, about 15 minutes. Remove from the oven and cool in pan for 5 minutes. Cut into triangles or squares or diamonds or wedges and serve.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, brown ground beef and sausage.
- Mix onion into the sausage and beef mixture, and saute it until tender. Drain grease out of skillet. Stir processed cheese food into the mixture. Continue cooking until cheese melts. Arrange slices of bread on a cookie sheet, place heaping spoonfuls of the mixture onto each slice of bread.
- Bake 12 to 15 minutes.

- Preheat oven to 375°. Separate tubes of dough into 8 rolls each; halve the rolls. Press dough onto the bottom and up the sides of miniature muffin cups coated with cooking spray. , Spoon pizza sauce into each cup. Sprinkle with onion, green pepper, pepperoni and cheese. MINI DEEP-DISH PIZZAS
Steps:
- Preheat the oven to 425 degrees F. Spray the cavities of a mini muffin pan with cooking spray.
- Remove the pizza dough from the packaging and allow it to come to room temperature on a floured surface.
- Using a rolling pin or your hands, roll it out into a VERY thin layer. Using either a small round cookie cutter (about 2 inches) or an empty 4.5-ounce can, cut it into rounds.
- Using your fingers, stretch the dough without tearing and press into the prepared muffin cups.
- Next, assemble the pizzas. Spoon about 2 teaspoons of the crushed tomatoes into each cup. Sprinkle with a little Italian seasoning and top with about 1 tablespoon of mozzarella. Top with the mushrooms, sausage and pepperoni or whatever toppings you prefer.
- Bake until the crust is golden brown and the cheese is melty and bubbly, 15 to 20 minutes.
