2 ½ cups shredded cheddar cheese, divided
1 cup unsalted butter, 2 sticks, room temperature
2 cups all-purpose flour, plus more for dusting
1 tablespoon paprika
1 tablespoon garlic powder
2 ½ teaspoons salt, divided
5 tablespoons ice water
4 strips bacon
2 cups small broccoli floret
6 large eggs
1 cup milk
½ teaspoon pepper
pie weight, coffee beans, or dried beans

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Add 2 cups (200 g) of cheddar cheese and the butter to a large bowl. Mix to combine with an electric hand mixer or stand mixer.
  • Add the flour, paprika, garlic powder, and 2 teaspoons salt and mix well. Add 3 tablespoons of ice water and mix. Add the remaining ice water 1 tablespoon at a time. The dough should hold together when pinched, but crumble apart if you break it up in your hand. If it seems too dry, add a bit more ice water.
  • Transfer the dough to a clean surface and knead with your hands until it comes together. Shape the dough into a disc, then wrap in plastic wrap and chill in the refrigerator for 30 minutes.
  • Lightly flour a clean surface and roll out the dough into a circle about ⅛ inch (8 mm) thick. Carefully transfer the crust to a 9½-inch (24-cm) glass pie dish.
  • Trim the edges (save the trimmings to make crackers!). Poke holes in the bottom of the crust with a fork, then use the tines to crimp the edges. Line the dough with parchment paper and fill with pie weights.
  • Bake for 30 minutes, until the edges are crisp.
  • While the crust is baking, prepare the fillings. In a large skillet over medium-high heat, cook the bacon until crisp, 5-7 minutes. Using tongs, remove the bacon from the skillet and let drain on paper towels until cool enough to handle.
  • Add the broccoli to the skillet and cook until lightly browned, about 5 minutes. Remove the pan from the heat.
  • Chop the bacon.
  • Remove the pie weights from the crust, then add the broccoli and chopped bacon to the center. Sprinkle with the remaining shredded cheddar cheese.
  • In a medium bowl, lightly beat the eggs. Add the milk, remaining ½ teaspoon salt, and the pepper. Whisk to combine.
  • Pour the egg mixture over the fillings in the crust.
  • Bake for 35-40 minutes, or until the eggs are set and the top is lightly browned. Cover the edges with tinfoil if they are starting to burn.
  • Let the quiche cool for 15 minutes before slicing and serving.

3 cups potato, frozen, shredded
1 ½ cups shredded cheddar cheese, divided
1 teaspoon salt, divided

1 tablespoon olive oil
6 eggs
1 cup broccoli, chopped
1 tomato, diced
1 small onion, diced
2 tablespoons half & half

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a bowl, add broccoli, potatoes, 1 cup (100 g) cheddar, ½ teaspoon salt salt, and ¼ teaspoon pepper. Stir to combine.
  • Grease a 9-inch (23 cm) nonstick tart pan with olive oil. Pour the broccoli mixture into the pan. Press evenly into the pan and the sides of the pan until firm using a measuring cup.
  • Bake for 45 minutes until the potatoes begin to brown.
  • In a bowl, mix together the eggs, broccoli, tomatoes, onion, remaining cheddar, half-and-half, and the rest of the salt and pepper.
  • Pour the egg mixture into the cooked crust. Bake for 25 minutes until eggs are firm.
  • Let cool, then serve.

4 oz. cream cheese, room temperature ($0.58)
1 cup + 2 Tbsp all-purpose flour ($0.07)
2 large eggs ($0.46)
1/2 cup milk ($0.10)
1/4 cup grated Parmesan ($0.44)
1/4 tsp garlic powder ($0.02)
1/4 tsp freshly cracked pepper ($0.02)
1/4 tsp salt ($0.02)
1/2 lb. frozen broccoli florets, thawed ($1.08)
4 oz. cheddar cheese, shredded ($0.58)

Steps:

  • Preheat the oven to 350ºF. Add the room temperature butter and room temperature cream cheese to a bowl. Use a mixer to whip them together until evenly combined.
  • Begin stirring in the flour, about ¼ cup at a time, until a dough forms. The dough should be soft, but not sticky.
  • Divide the dough into 12 equal portions (begin by dividing into four pieces, then divide each quarter into three equal-sized pieces). Roll each piece of dough into a ball, then drop each one into the well of a muffin tin. Use your fingers to press the dough down into the center and up the sides of the wells (see step by step photos below for more help).
  • Whisk together the eggs, milk, Parmesan, garlic powder, pepper, and salt in a bowl.
  • Finely chop the thawed broccoli florets (about 1.5 cups once chopped). Shred the cheddar cheese (about 1 cup shredded). Add the broccoli and cheddar to the egg mixture and stir to combine.
  • Divide the broccoli cheddar mixture between the twelve mini pie crusts. The liquid egg mixture will not fully submerge the broccoli and cheddar in the crusts, but it will puff up and fill the crust once baked.
  • Bake the mini quiches in the preheated oven for 35 minutes or until puffed in the center and golden brown around the edges.
  • Carefully transfer the baked quiches to a wire rack to cool. Serve warm, or at room temperature within two hours of baking.

2 cups broccoli florets (fresh)
1 cup milk (do not use skim milk)
1 cup heavy cream
2 large eggs, plus
2 large egg yolks
1 cup cheddar cheese, grated
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground nutmeg (or use fresh parsley or even a bit of garlic) (optional)

Steps:

  • Preheat oven to 350F and line a large rimmed baking sheet with foil.
  • Grease 10-12 cups in a 12-cup muffin tin and set aside.
  • Cook broccoli in a steamer basket over 1 inch of water for 6 minutes or microwave in a dish with a little water, cover and cook on HIGH until tender, about 5 minutes.
  • Let broccoli cool slightly, then chop into small pieces.
  • In a medium bowl, whisk together milk, cream, eggs, and egg yolks.
  • Stir in cheese, salt, pepper and nutmeg.
  • Add chopped broccoli to the mixture.
  • Put muffin tin on baking sheet and then ladle egg mixture into prepared muffin cups, filling each cup.
  • Bake until lightly browned and no longer jiggly in center, about 25-35 minutes.
  • Let cool slightly, then run a knife around each quiche.
  • Place a clean baking sheet on top of muffin pan and invert to unmold quiches.
  • Serve warm or at room temperature.

Don't let the "dairy-free'' title fool you - this beautiful broccoli "cheddar" quiche is still creamy and cheesy in texture and taste. For this recipe, we use delicate broccolini, but you can easily substitute in broccoli florets. This quiche is the perfect centerpiece for any brunch, lunch, or weeknight dinner!

1 Vegan Quiche Crust, dough chilled
1 package silken tofu
2 tablespoons water
2 heads broccolini, tough stems removed, rough chopped (about 2 cups total)
1 ½ teaspoons kosher salt, plus more taste
2 teaspoons olive oil
½ medium white onion, diced
¼ cup chickpea flour
⅔ cup unsweetened oat milk
2 tablespoons coconut oil, refined
¼ teaspoon ground turmeric
½ teaspoon garlic powder
½ teaspoon kala namak, black salt
2 tablespoons corn starch, or arrowroot powder
1 tablespoon white miso
2 tablespoons nutritional yeast
½ teaspoon freshly ground black pepper
⅓ cup fresh chives, thinly sliced
pie weight

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Roll out the crust on a lightly floured surface to a 12-inch (25 cm) round about ⅛ inch (3 mm) thick. Gently transfer the crust to a 9-inch (22 cm) pie dish. Trim any excess dough around the edges. Fold the edges of dough back underneath itself, then crimp using an index finger knuckle on one hand and the thumb and index finger on the other hand.
  • Place a piece of parchment paper in the center of the crust. Add the dried beans to the center and spread toward the sides of the crust - this will add weight to keep the crust from puffing up and hold up the walls while baking.
  • Bake the crust for 15 minutes. Carefully remove the weights by lifting out the parchment paper, then bake for 5 minutes more, until the dough no longer looks raw. Remove from the oven and let cool.
  • While the crust bakes, make the filling: Set the tofu in a fine-mesh strainer set over a bowl. Let drain for 10 minutes.
  • In a large skillet, combine the water, broccolini, and ¼ teaspoon salt. Cover and steam over medium-high heat for 2-3 minutes, until the broccolini is bright green and tender. Remove the pan from the heat and set aside.
  • Heat 2 teaspoons of olive oil in a medium pan over medium heat until just shimmering. Add the onion and ¼ teaspoon salt. Sauté for 3-4 minutes, until the onion is translucent. Remove the pan from the heat and set aside.
  • Crumble the tofu into a blender. Add the chickpea flour, oat milk, coconut oil, turmeric, garlic powder, kala namak, remaining teaspoon of salt, the cornstarch, miso, and nutritional yeast. Blend on high speed for 60-90 seconds, until completely smooth, scraping down the sides as needed. Transfer the mixture to a medium bowl.
  • Season the filling with the pepper. Set aside a few larger pieces of broccolini for topping, then fold the rest of the steamed broccolini and sautéed onions into the "egg" mixture.
  • Pour the mixture into the prepared crust. Arrange the reserved broccolini on top.
  • Cover the quiche with aluminum foil and bake for 35 minutes. Remove the foil and bake for another 10-15 minutes, until the quiche is set and no longer jiggling in the center and the crust is beginning to brown. Let cool for 30 minutes before slicing.
  • Garnish the quiche with the chives, then slice and serve.
  • Enjoy!

  • Heat oven to 375°F.

1 cup milk
4 eggs (slightly beaten)
1/4 teaspoon dry mustard
1 pinch pepper
1 pinch salt
1 3/4 cups cheddar cheese (shredded)
1 1/2 cups frozen broccoli florets
1 medium yellow onion (chopped )
3 slices sourdough bread (or favorite type of bread)

Steps:

  • Preheat oven to 350 derees.
  • Prepare muffin tins with cooking spray. I used larger muffin tins but size doesn't necessarily matter.
  • Place 3 thick slices of bread in oven on the rack for about 4 minutes. Just long enough for the bread to get toasted. Upon removing bread from the oven, cut each piece of bread into 4 pieces. Place one piece of toasted bread in each tin.
  • In a skillet, saute 2T. butter with onion until onion is soft and browned.
  • In medium bowl, combine milk, eggs, dry mustard, and pepper; set aside.
  • Layer cheese, broccoli and onion around the bread in the muffin tin. Pour egg mixture over bread, cheese, onion and broccoli.
  • Bake for 30 minutes or until knife inserted in center comes out clean. Cool 5 minutes before serving.
  • Makes 6 large muffin tin quiche's.
