This quick and tasty hors d'oeuvre recipe comes to us from Kay Gillis Perry of Silver Spring, Maryland.

1/2 pound extra-sharp cheddar, cut into 1/2-inch cubes
2 slices bacon, coarsely chopped
1 small white onion, coarsely chopped
1 loaf cocktail bread (rye or pumpernickel), sliced 1/4 inch thick

Steps:

  • Preheat oven to 375 degrees. In a food processor, combine cheddar, bacon, and onion. Process until a smooth paste forms, and transfer to a small bowl.
  • Arrange bread on two rimmed baking sheets. Bake until crisp but not browned, about 6 minutes. Remove from oven and let cool completely.
  • Heat broiler. Top each toast with 2 tablespoons cheese mixture. Broil until topping is lightly browned, about 4 minutes.

1/2 lb extra-sharp white Cheddar, coarsely grated (2 cups)
1/2 lb cold sliced lean bacon, finely chopped
1 small onion, finely chopped (1/3 cup)
1 1/2 tablespoons drained bottled horseradish
1/2 teaspoon salt
1/4 teaspoon black pepper
14 very thin slices firm white sandwich bread

Steps:

  • Put oven rack in middle position and preheat oven to 375°F.
  • Stir together cheese, bacon, onion, horseradish, salt, and pepper in a bowl with a rubber spatula until blended well.
  • Spread about 1 1/2 tablespoons mixture evenly to edges of each slice of bread with a small offset spatula or butter knife. Arrange slices in 1 layer on a large baking sheet and freeze, covered with wax paper, until firm, about 15 minutes.
  • Trim crusts off bread and reserve for another use (see cooks' note, below), then cut each slice into 4 squares. Bake toasts on baking sheet until beginning to brown on edges, about 20 minutes.

1 (12 ounce) loaf cocktail-size rye bread

Steps:

  • Mix processed cheese food, Cheddar cheese, bacon, Worcestershire sauce, and dry mustard together in a bowl.
  • Heat skillet over medium heat.
  • Butter both sides of each slice of bread and toast in skillet until browned, 1 to 2 minutes per side; arrange onto a baking sheet. Repeat toasting with remaining butter and bread slices.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Spoon cheese-and-bacon mixture atop the toasts. Arrange toasts on a baking sheet.
  • Heat toasts under the broiler until the topping is hot and bubbling, about 2 minutes.

Kosher salt
8 strips bacon
4 slices Texas toast or other thick sandwich bread
3/4 cup grated cheddar cheese
3/4 cup grated part-skim mozzarella cheese
3/4 cup mayonnaise
5 scallions, finely chopped
1/4 cup chopped fresh parsley
1/2 small zucchini, very thinly sliced
Freshly ground pepper

Steps:

  • Preheat the oven to 400 degrees. Core the tomatoes and thinly slice. Place in a colander in the sink and sprinkle with 1/2 teaspoon salt; let drain for at least 15 minutes.
  • Meanwhile, cook the bacon in a large skillet over medium heat until crisp, about 10 minutes; transfer to a paper-towel-lined plate. Pour off and reserve the drippings, leaving 1 tablespoon in the skillet; toast the bread on one side in the drippings until golden (do this in batches, adding more drippings as needed). Place the bread, toasted-side down, on a baking sheet.
  • Combine the cheeses with the mayonnaise, scallions and parsley in a bowl. Spread the cheese mixture on the toasts, reserving about 1/3 cup. Crumble the bacon on top. Shake any excess liquid from the tomatoes; distribute the zucchini and tomatoes among the toasts. Dot with the reserved cheese mixture and season with pepper. Bake until golden brown, 15 to 20 minutes. Serve warm.

All-purpose flour, for dusting
4 slices bacon
4 large eggs
1/4 cup heavy cream
Kosher salt and freshly ground pepper
Chopped fresh chives, for topping

Steps:

  • Preheat the oven to 350˚. Roll out 1 sheet of pie dough on a lightly floured surface until very thin and about 14 inches in diameter. Cut out 12 rounds with a 2 3/4- to 3-inch cookie cutter. Repeat with the remaining sheet of pie dough. Press the rounds firmly into each cup of a 24-cup mini-muffin pan (preferably nonstick). Lightly prick the bottoms and sides with a fork.
  • Bake the crusts until lightly browned, 12 to 15 minutes. Let cool slightly.
  • Meanwhile, cook the bacon in a small skillet over medium heat, turning, until crisp, about 8 minutes. Transfer to paper towels to drain, then finely chop. Whisk the eggs, heavy cream and a pinch each of salt and pepper in a bowl until well combined.
  • Sprinkle the bacon in the bottom of each crust. Fill with the egg mixture and top with chives. Bake until just set, about 15 minutes (it's OK if some egg leaks through the pastry). Let cool 10 minutes, then remove from the pan.

1 cup 2% milk
5 large eggs
¼ cup heavy cream
1 cup frozen chopped spinach, thawed and drained
1 cup shredded Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place bacon slices in a single layer on a bacon rack or foil-lined, rimmed baking sheet, making sure they do not overlap.
  • Bake in the preheated oven until browned and crisp, 10 to 11 minutes. Remove from the pan and drain bacon slices on a paper towel-lined plate.
  • Increase the oven to 425 degrees F (220 degrees C). Grease a 12-cup muffin tin with some of the rendered bacon fat.
  • Saute onion and garlic in a little bacon fat over medium heat until translucent, about 5 minutes. Remove from the heat.
  • Beat milk, eggs, and cream in a mixing bowl with an electric mixer until fluffy. Add spinach, Cheddar cheese, and the cooked onion mixture. Season with salt and pepper and mix with a spatula to combine.
  • Make a ring of bacon by running a slice around the sides of each muffin cup. Scoop egg mixture into the center of each bacon ring.
  • Bake in the preheated oven until a toothpick inserted into the centers comes out clean, about 15 minutes.
