1 lb ground chicken
1 TBS peanut oil
½ onion (minced)
1 cup red or green pepper (diced)
1 8 oz can water chestnuts (drained and minced)
3 TBS soy sauce*
3 TBS hoisin sauce**
1 TBS sesame oil
1 TBS rice vinegar
1 TBS peanut butter
1 TBS honey
2 tsp sweet chili sauce ((Trader Joe's!))
½ tsp garlic powder
¼ tsp powdered ginger
¼ cup peanuts (crushed.)
Lettuce or your favorite Asian salad

Steps:

  • Whisk together sauce ingredients until well combined. If you use a firmer peanut butter you may need to microwave the mixture for 30-60 seconds in order to melt it and ensure everything is well-mixed.
  • Heat 2 TBS peanut oil in a frying pan. Once hot, add ground chicken.
  • Cook until some pieces are starting to brown. Add onion and cook for 5 minutes or until the onion is becoming translucent.
  • Add the peppers and water chestnuts and cook about 5 minutes or until peppers are becoming soft.
  • Add sauce and simmer on low heat until the chicken and veggies are evenly coated and everything is heated through.
  • Serve in lettuce leaves, on top of your favorite Asian salad, or over noodles or rice!

1/2 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon minced garlic
1 tablespoon minced peeled ginger
1 tablespoon sambal oelek (Asian chili sauce)
1 tablespoon plum sauce
1 tablespoon hoisin sauce
1 tablespoon mirin (sweet rice wine)
1 teaspoon chopped fresh cilantro
1 teaspoon sesame seeds, toasted
1/4 teaspoon toasted sesame oil
6 tablespoons canola oil
1 pound skinless, boneless chicken thighs, diced
1/3 cup diced carrot
1/3 cup diced celery
1/3 cup diced red bell pepper
1/3 cup diced sugar snap peas
1/3 cup diced red onion
1 teaspoon minced peeled ginger
1 teaspoon minced garlic
1/3 cup mung bean sprouts, halved
1/2 cup sliced shiitake mushroom caps
2 tablespoons diced scallions
1 tablespoon crushed peanuts
6 wonton wrappers
Kosher salt
Iceberg lettuce leaves, for serving
1/2 teaspoon black sesame seeds

Steps:

  • Make the sauce: Combine all the ingredients in a bowl and set aside. Stir again just before using.
  • Prepare the cups: Heat 2 tablespoons canola oil in a skillet over high heat. Add the chicken and stir-fry until cooked through, about 3 minutes. Add the carrot, celery, bell pepper, peas and red onion and stir-fry about 3 minutes. Add the ginger, garlic, sprouts and shiitakes. Add 1/4 cup of the prepared sauce and cook until thickened, about 30 seconds, scraping up any browned bits. Transfer the stir-fry to a bowl; top with the scallions and peanuts.
  • Wipe out the skillet. Heat the remaining 4 tablespoons canola oil over high heat. Fry the wontons until golden and crisp, about 15 seconds per side. Transfer to paper towels and season with salt.
  • Fill the lettuce leaves with the stir-fry. Sprinkle with the sesame seeds. Crumble the wontons on top or serve alongside. Serve with the remaining sauce.

Chinese cooks don't use a lot of raw vegetables, but instead prefer to stir-fry or braise them. There are a few exceptions, however, and in Hong Kong cooks fill crisp iceberg lettuce leaves with savory minced pigeon meat. Since we have no intention of domesticating the pigeons outside my New York City apartment window (pigeon meat is hard to find in the United States), we've substituted chicken in this recipe, which tastes equally as delicious. Chuck all the filling ingredients in a food processor if you're in a hurry, but larger chunks of mushrooms and water chestnuts add texture. Don't forget the fresh cilantro leaves heaped on top.

1 tablespoon hoisin sauce
2 tablespoons clear rice vinegar
1/2 teaspoon salt
1/2 teaspoon sugar
3 tablespoons vegetable oil
2 cloves garlic, minced

1 cup chopped canned button mushrooms
1/2 cup water chestnuts, minced
1 pound boneless, skinless chicken breasts, minced
8 to 10 inner leaves iceberg lettuce, edges trimmed and chilled
Handful of fresh cilantro leaves, coarsely chopped
1/4 cup unsalted roasted cashews, coarsely chopped

Steps:

  • Combine the soy sauce, hoisin sauce, rice vinegar, salt, and sugar in a small bowl and mix together until the sugar dissolves.
  • Heat 1 tablespoon of the oil in a wok over high heat. Stir-fry the garlic and ginger for 10 seconds. Add the onion, mushrooms, and water chestnuts and stir-fry for 2 minutes. Remove the contents of the wok.
  • Heat the remaining 2 tablespoons of oil in the wok. Swish the oil around, add the chicken, and brown for 1 minute, or until no longer pink. Add the cooked vegetable mixture back to the wok, decrease the heat, and stir in the sauce mixture. Stir for 1 minute, or until the sauce is heated and the chicken is cooked through.
  • Spoon the filling in equal amounts into the lettuce cups. Top each lettuce cup with cilantro and sprinkle with chopped cashews. Serve warm.

8 whole romaine or butter lettuce leaves
1 rib celery, thinly sliced on the bias
1/2 cup crumbled blue cheese
1/4 cup flat-leaf parsley leaves, roughly chopped
1 1/4 pounds coarsely ground chicken or turkey breast
2 teaspoons hot sauce
1/2 teaspoon dried thyme
1/2 teaspoon chile flakes
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter
1 teaspoon olive oil
1/3 cup minced yellow onion
2 cloves garlic, minced
Pickled Red Onion Vinaigrette (recipe follows)
1 cup red wine vinegar
1 teaspoon sugar
Kosher salt and freshly ground black pepper
1 cup very thinly sliced red onions
1/2 cup olive oil
2 teaspoons finely grated lemon zest

Steps:

  • Place the lettuce leaves on a serving platter and arrange the celery, blue cheese and parsley in small individual serving bowls and set aside.
  • Toss the ground chicken or turkey with the hot sauce, thyme, chile flakes and 1 1/2 teaspoons black pepper, or to taste, until combined in a medium bowl; set aside.
  • In a small skillet, heat the butter and oil over medium-high heat. When the butter is almost melted, add the onion and 1 teaspoon salt. Cook, stirring occasionally, for 2 minutes, then stir in the garlic. Cook until the onion is golden and tender, then stir in the ground chicken mixture. Cook until browned all over, stirring occasionally, about 6 minutes. Spoon into a serving bowl and serve with the platter of lettuce leaves, bowls of garnish and the Pickled Red Onion Vinaigrette.
  • Place the vinegar, sugar, 1/2 cup water and 1 teaspoon salt in a 2-quart saucepan over medium-high heat and bring to a boil; stir in the red onions and let simmer for 5 minutes, then remove the pan from the heat and let cool.
  • Drain the onions, reserving the pickling liquid. Put the onions in a blender with the olive oil, lemon zest, 1 teaspoon salt and 1 teaspoon pepper, and blend on high while slowly drizzling in just enough of the reserved pickled liquid until emulsified and at a pourable consistency (you will not use all the liquid). Makes about 2 cups. Can be refrigerated in an airtight container for up to 2 weeks.

Return to slow cooker. Stir in 1-1/2 cups basil and hoisin sauce; heat through., Serve in lettuce leaves with rice, green onions, carrots, radishes and remaining basil. Freeze option: Freeze cooled chicken mixture and juices in freezer containers. To use, partially thaw in refrigerator overnight. 2 tablespoons hoisin sauce
1/2 skinless boneless chicken breast, chilled (about 6 ounces)
1 1/2 teaspoons cornstarch
2 teaspoons dry white wine
1/3 cup canned water chestnuts (about 2 ounces), rinsed, drained and chopped fine
1/2 red bell pepper, chopped fine
1/4 teaspoon salt
1 large egg white, beaten lightly
For sauce
4 teaspoons oyster sauce
1 teaspoon Asian sesame oil
1/2 teaspoon sugar
1/4 teaspoon white pepper
1/2 teaspoon salt
2 tablespoons vegetable oil
1 small garlic clove, minced
2 tablespoons pine nuts, toasted

Steps:

  • Brush inside of each lettuce leaf with 1/2 tablespoon hoisin sauce and chill.
  • In a food processor pulse chicken until chopped fine. In a small cup stir together cornstarch and wine and in a bowl stir together chicken, cornstarch mixture, water chestnuts, bell pepper, salt and egg white. Marinate chicken mixture 5 minutes.
  • Make sauce:
  • In a small bowl, stir together sauce ingredients until sugar is dissolved.
  • In a large saucepan with 6 cups salted boiling water cook chicken mixture, stirring constantly to break up lumps, until chicken is no longer pink, about 3 minutes. Drain chicken mixture in sieve.
  • In a large non-stick skillet heat vegetable oil over moderately high heat until hot but not smoking and cook garlic, stirring until softened. Add chicken mixture and cook, stirring, until golden, about 2 minutes. Add sauce and cook, stirring, until mixture is coated, about 2 minutes.
  • Divide chicken mixture among prepared lettuce leaves and sprinkle with pine nuts. Wrap leaves loosely around filling.

1 head of butter lettuce
4 organic chicken breasts
1/2-cup unsalted peanuts
1 bunch fresh chives
1 mango (ripe, diced or cubed)
2 jalapenos (chopped and seeded)
1/4-cup fresh lime juice

Steps:

  • Separate and remove leaves from lettuce stalk. Wash under cold water and place on paper towels to dry.
  • Place your four chicken breasts in a pre-heated 400-degree oven for 20 minutes or until chicken is cooked through. Remove chicken and let cool. Remove skin and bones from the chicken and cut into small cubes.
  • Roast peanuts until golden brown. Set aside and cool. Crush the peanuts in the plastic bag with a meat tenderizer and dice the mango.
  • In a bowl combine diced mango, jalapeno, peanuts and limejuice. Add chicken. With a tablespoon fill the lettuce cups with the chicken mixture, fold over and gently tie with a long piece of fresh chives and serve.

50g glass noodles
2 tbsp vegetable oil
3 garlic cloves , finely chopped
1 bird's-eye chilli , finely chopped (seeds removed if you like it less hot)
2 lemongrass stalks, finely chopped (tender parts only, see 'Tip')
10 green beans , finely chopped
1 medium carrot , finely chopped
140g minced chicken
140g raw prawns , peeled and chopped
1 ½ tbsp oyster sauce
1 tbsp fish sauce
½ tsp rice wine vinegar
2 Baby Gem lettuces or 1 iceberg
140g roasted peanuts , coarsely crushed
lime wedges, to serve

Steps:

  • Soak the glass noodles in boiling water and leave for 5 mins, then drain and run under cold water. Using scissors, cut into little pieces. Heat the oil in a wok, add the garlic, chilli and lemongrass and fry until fragrant. Add the green beans and carrot, and stir-fry for 2 mins until the vegetables lose their rawness but maintain their crunch.
  • Add the chicken mince and break into small pieces with a wooden spoon while mixing with the vegetables. Once the chicken turns opaque and starts to cook through, add the prawns. Season with oyster and fish sauce, and pepper, and cook for 1-2 mins.
  • Add the noodles, mix well, cook for 1 min more making sure that the chicken and prawns are cooked. Add the rice wine vinegar, mix well and turn off the heat. Set aside and cool for 10 mins.
  • Peel the leaves off the lettuce carefully. If using iceberg lettuce, use scissors and, following the curve of the leaf, cut away the green floppy edge. You will be left with a firmer section, which acts like a cup. Spoon the chicken mixture onto the lettuce and sprinkle liberally with peanuts. Squeeze a little lime juice all over before serving.

2 garlic cloves , crushed
2 red chillies , deseeded and finely sliced

85g light brown sugar

2 lime leaves , finely shredded
mix of iceberg lettuce , Little Gem and cos leaves
large handful mint and coriander leaves, very roughly chopped

2 shallots , finely sliced into rings

Steps:

  • Heat the oil in a large frying pan. Fry the ginger, garlic and chillies for 1 min. Add the mince, then cook on a high heat until golden brown, breaking it up with a wooden spoon as you go. Sprinkle over the brown sugar, fish sauce, lime juice and shredded lime leaves, then cook everything down until sticky.
  • Tip the mince into a serving bowl, then serve with a bowl of lettuce leaves for wrapping the mince in; the herbs, shallots and peanuts for scattering over; and the lime wedges for squeezing.

A not too far from traditional Chinese dish served in many restaurants near here. These make a great lunch or starter for a dinner party. Serving amount is an estimate for lunch portions. From the Kikkoman website. Cook time does not include chilling time. I usually serve these "warmish."

2 teaspoons peanut oil
8 ounces ground chicken
1 tablespoon minced ginger
2 teaspoons hoisin sauce
2 tablespoons light soy sauce
1 teaspoon sesame oil
2 teaspoons rice vinegar
2 teaspoons granulated sugar
2 heads iceberg lettuce
2 tablespoons scallions, sliced thin
1/4 cup jicama
1/2 cup pomegranate seeds

Steps:

  • Heat a medium saute pan over high heat, add the peanut oil and the minced chicken. Reduce heat to medium and cook, stirring occasionally, until cooked through. Add the ginger and cook another 30 seconds. Remove from heat and drain, then chill.
  • Combine hoisin sauce, soy sauce, sesame oil, vinegar and sugar to make dressing. Set aside.
  • Cut the core from the iceberg lettuce and soak in ice water for 10 minutes to help separate the leaves. Carefully remove the leaves from the heads of lettuce one at a time, then take each leaf and trim into a perfect circle using kitchen scissors. You should get about 12 nice lettuce cups out of each head, depending on the size and condition of the lettuce. You can save the leftovers to add to salad.
  • Combine the chicken, scallions and jicama with the dressing, and place about 3 T of the mixture into each lettuce cup. Garnish with pomegranate seeds. I left the seeds off as they were impossible to find when I made these.

100 g rice noodles
2 tablespoons olive oil
500 g lean ground chicken
2 garlic cloves, crushed
1 teaspoon grated ginger
1/3 cup mild sweet chili sauce
1 tablespoon fish sauce
2 tablespoons soy sauce
1/2 cup coriander leaves, roughly chopped
4 lettuce cups

Steps:

  • Pour boiling water over the rice noodles.
  • Allow to sit for 5 minutes then drain.
  • Cut into smaller lengths.
  • Heat a wok or non stick pan over a high heat with the oil.
  • Add the chicken mince and stir fry for 4 minutes or until cooked through breaking up with a wooden spoon.
  • Add the garlic and ginger and fry for a further 2 minutes.
  • Toss in the noodles and stir until heated through.
  • In a small bowl combine the sweet chilli sauce, fish sauce and soy sauce and stir through the mince.
  • Remove from the heat and stir through the coriander.
  • Serve in the lettuce cups.
