This is my garandmothers PERFECT chili recipe. It isn't awfully spicy, but it has a zing to it. To be honest, I really don't like chili very much, but this takes the cake. This is the perfect chili for chili dogs, too. It is very easy & you will love it! Serves 4.

4 tablespoons olive oil
1 cup diced onion
1 diced garlic clove
3 tablespoons chili powder
1 -2 teaspoon salt
1 -2 teaspoon sugar
1/2 teaspoon black pepper
1 lb ground beef
2 cups canned tomatoes
1/4 cup water
1 cup diced celery (optional)
1 cup green bell pepper, diced
1 (16 ounce) can showboat brand beans
1 -2 cup red kidney beans
1/2 teaspoon cumin

Steps:

  • Brown beef, onion, garlic, bell pepper, & celery (optional).
  • Drain.
  • Mix tomatoes, salt, pepper, chili powder, & water.
  • Add beans then simmer 30-45 minutes.

It is the best I have had and make it often. I also give it as gifts (see Note). It is actually my daughter's base for chili and my spices. The two combined make a delicious pot. NOTE: For gift giving just package up the first 4 ingredients in one baggie. In another baggie place the last 8 ingredients. Give with the recipe on how to prepare it printed on a pretty tag. Also, if you are feeling really lazy, you could substitute about 3-4 cans of kidney beans/pinto beans or a mixture of both in place of the dry beans.

1/2 cup dry pinto beans
1/2 cup dried kidney beans
2 tablespoons dried onion flakes
1/2 teaspoon instant minced garlic
2 cups onions (chopped fine)
2 lbs hamburger
1 (14 ounce) bottle catsup
1 tablespoon Worcestershire sauce
2 (8 ounce) cans tomato sauce
1 1/2 teaspoons paprika
1 teaspoon cumin
5 teaspoons chili powder
1/2 teaspoon instant minced garlic
1/2 teaspoon turmeric
1/2 teaspoon black pepper
1/8 teaspoon red pepper flakes
1 teaspoon salt

Steps:

  • Wash beans and place in pot with the next two ingredients--minced onion and minced garlic.
  • Cover beans with cold water and boil for 10 minutes with lid on; turn off heat and let sit for 1 hour.
  • Drain but do not rinse.
  • Cover with fresh water and simmer for 60-90 minutes till tender.
  • Drain and set aside.
  • Saute the onions and then add the hamburg and cook till done.
  • Add the rest of the ingredients and simmer for 10-15 minutes.
  • Now you may put it in the crockpot on high for 1-2 hours and then on low for 4-6 hours stirring occasionally OR may be cooked on lowest setting on stove for 2-3 hours.
  • Watch that it does not get dry.

I don't know why it is called "Chili" Soup but that is the name. I got this from my daughter and it is soooo easy and soooo delicious. Great for the long and cold winter evenings. Just have some crusty garlic bread or my Recipe #329435 to put it into. It calls for spaghetti sauce in a jar and I use Paul Newman's Sockaroonie. Yummmm!

1 cup coarsely chopped zucchini (set aside)
1/4 cup coarsely chopped onion
1 lb sweet Italian turkey sausage (or regular)
2 garlic cloves (minced)
1 (26 ounce) jar spaghetti sauce
2 (14 1/2 ounce) cans beef broth
1 cup water
1 1/2 cups uncooked pasta, nuggets (radiatore)
2 tablespoons snipped basil (optional)

Steps:

  • Coarsely chop zucchini and set aside.
  • Coarsely chop onion and put into pot with turkey sausage which has been crumbled up as best you can.
  • Heat pan to medium and cook till sausage is done continuing to break up sausage, adding the garlic while it is cooking; drain.
  • Add spaghetti sauce, broth, and water; bring to a boil.
  • Stir in pasta; reduce heat cook covered for about 7 minutes.
  • Stir in zucchini and cook for 2-4 more minutes or till zucchini is done.
  • Stir in basil.
  • Ladle soup into bowls and enjoy.

MIMI'S ARTISAN BREAD BOWLS

I got this out of the King Arthur Catalogue. I added the honey after a suggestion from one of the reviewers. I tried it and liked it. These bowls can be made by hand, mixer, or bread machine. The recipe makes five, five-inch bowls. Just cut the top off, hollow out the center, and fill each with your favorite soup, stew, or chili. Yumm! Time below does not include the refrigeration time.

3 3/4 cups unbleached flour
1/2 cup whole wheat flour
1/4 cup nonfat dry milk powder
1 1/2 teaspoons instant yeast
2 teaspoons salt
2 tablespoons olive oil
2 tablespoons honey
1 1/2 cups lukewarm water (enough to make a smooth, soft dough)

Steps:

  • If using a bread machine, put the ingredients in according to your own directions; put on dough cycle and keep checking to make sure you have a smooth dough.
  • By mixer or by hand, mix till you have a smooth dough; rise covered for 45 minutes.
  • When machine is done its cycle or dough has risen the manual way for 45 minutes, divide into five pieces.
  • Roll each piece into a ball and place on a lightly greased baking sheet.
  • Cover the balls with greased plastic wrap.
  • Refrigerate for 4 hours (or up to 24 hours)--this step will give the bread bowls extra flavor and a delightfully crisp-chewy texture.
  • Two or more hours before serving, remove from refrigerator.
  • Uncover and let them sit for about another 30 minutes while you preheat the oven to 425 degrees.
  • Just before baking, slash the top surface several times, very carefully, which will allow them to expand.
  • Bake at 425 degrees for 22-28 minutes till bowls are a deep golden brown and sound hollow when thumped on the bottom.

This is a savory scone. Serve them warm with butter and Recipe #212646 or honey. They are good with chili, or any bean dish, or just by themselves with the jelly.

Number Of Ingredients 7

2 cups flour
1/3 cup cornmeal
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup firm butter, cut into 8 pieces
3/4 cup buttermilk (see note below)

Steps:

  • Mix first 5 ingredients in a medium bowl.
  • Cut in the butter using pastry blended till it looks like fine crumbs.
  • Stir in buttermilk so dough leaves sides of bowl and forms a ball.
  • Turn dough onto lightly floured surface and knead lightly about 10 times.
  • Pat or roll into a 7-inch circle on ungreased cookie sheet that has been sprinkled with cornmeal.
  • Score into 8 wedges, cutting down halfway to the bottom.
  • Bake in 400 degree oven for 20-25 minutes or till light brown.
  • Immediately remove from sheet and carefully separate wedges.
  • Serve warm.
  • NOTE: If the dough is too dry, stir in an additional 1-2 tablespoons of buttermilk; sometimes I will add an extra tablespoon while mixing, but you try it for the first time.
