This is a great recipe for a quick pie that does taste like a million bucks. My daughter has been making this every Thanksgiving since she was 11. Very easy preparation. The recipe calls for 2 graham cracker crusts, but we have also made it with the chocolate crumb crusts as well. They are delicious as well.

2 graham cracker pie crusts
1 (14 ounce) can Eagle Brand Condensed Milk
1 (10 ounce) can crushed pineapple
9 ounces Cool Whip
3 tablespoons lemon juice
3/4 cup pecans

Steps:

  • Mix all ingredients.
  • Pour into crusts. Garnish with extra pecans if you wish.
  • Refrigerate 2 hours before serving.

1 (9 inch) pie crust, baked
1 (3 ounce) package cream cheese
1 (8 ounce) can pineapple tidbits, drained with juice reserved
1 banana, peeled and sliced
1 quart fresh strawberries
1 cup white sugar
2 tablespoons cornstarch
3 drops red food coloring
3 cups frozen whipped topping, thawed
½ cup flaked coconut, toasted
½ cup slivered almonds, toasted

Steps:

  • Slice the strawberries and combine them with sugar, corn starch and red food coloring (if desired). Mix well. In a medium saucepan cook the strawberry mixture over medium heat until thickened. Set aside to cool.
  • Cream together 2 tablespoons of pineapple syrup and cream cheese. Spread mixture in the bottom of the pastry shell. Slice the bananas on top of the cream cheese and pour the drained pineapple tidbits over the top of the bananas. Pour the strawberry mixture over the cream cheese/banana filling. Add your favorite whipped topping and sprinkle the top with toasted coconut and nuts. Serve.

2 prepared 8 inch pastry shells, baked and cooled
3 tablespoons lemon juice
¾ cup chopped pecans
1 (10 ounce) jar maraschino cherries, drained and chopped
1 (14 ounce) can sweetened condensed milk
1 (20 ounce) can crushed pineapple, drained
1 (16 ounce) package frozen whipped topping, thawed
2 tablespoons maraschino cherries, chopped
¼ cup chopped pecans

Steps:

  • In a large bowl, combine lemon juice, pecans, cherries, condensed milk, and pineapple. Mix well, then gently fold in whipped topping until all ingredients are thoroughly combined.
  • Pour mixture into pie shells. Chill before serving. Garnish with chopped cherries and pecans if desired.

This was a hit for Christmas Eve. I found it in Our Favorite Recipes (Pilot Club of Greater Kanawha Valley). Instead of the ready graham cracker crust, I made a pecan crust out of Joy of Cooking which was simple and delicious (no baking required). The crust was probably the best part of the pie. Chill time is excluded from cooking time. To make the Nut Crust, chop 2 cups walnuts or pecans (I used pecans). Melt 1/4 cup unsalted butter and mix with the nuts. Add 3 tablespoons granulated sugar and 1/4 teaspoon salt (I used salted butter and opted out of the salt).

1/2 cup lemon juice
1/2 teaspoon vanilla
1 (9 inch) graham cracker pie crust (see above Nut Crust recipe)
16 ounces whipped topping
1 cup crushed pineapple, drained

Steps:

  • In a medium bowl, combine milk, lemon juice, and vanilla and mix well.
  • Fold in remaining ingredients one at a time, mixing well.
  • Mound mixture into pie crust.
  • Freeze until firm (2 to 3 hours).
  • Let stand at room temperature for 15 minutes before serving pie.

Nice light & Fluffy pie for a summer day. Great to take to pot-lucks because it makes two nine inch pies. You can take both, or keep one for yourself :) Cook time is chill time for pie to set up. You can chill for less time if necessary, but I find it really cuts nicely if you chill overnight.

1 (14 ounce) can Eagle Brand Condensed Milk
1/3 cup lemon juice (bottled is fine)
1 cup flaked coconut
1 cup chopped pecans
1 cup chopped maraschino cherry (you can use a litte of the juice to give the pie a pink tint)
1 (12 ounce) container Cool Whip
2 graham cracker pie crusts, 9 inch

Steps:

  • Mix all ingredients together until well blended.
  • Pour into Graham Cracker Crusts.
  • Chill a minimum of 4 hours, but overnight is best.
