CHOCOLATE CHOCOLATE-CHIP MUFFINS

Steps:
- Preheat the oven to 400 degrees F.
- Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips into a large bowl. Pour all the liquid ingredients into a measuring jug. Mix the dry and wet ingredients together, remembering that a lumpy batter makes the best muffins. Spoon into the prepared muffin cases. Sprinkle the remaining 1/4 cup chocolate chips on top and then bake for 20 minutes or until the muffins are dark, risen and springy.
CHOCOLATE CHIP MUFFINS
These double chocolate chip muffins are more cake-y than some versions, but that means they keep for longer. Ideal if you're making for hungry mouths who have a few days off school.

- Preheat the oven to 200C/180C Fan/Gas 6. Grease a 12-hole muffin tin and line with paper cases.
- Sift the flour and cocoa into a large mixing bowl. Tip in the sugars, baking powder and salt and mix together. Make a well in the centre.
- Whisk together the eggs, buttermilk, vanilla extract and hot water. Pour into the well, then quickly use a spatula to blend into the dry ingredients, followed by the melted butter. Fold in most of the chocolate chips. Divide the batter between the paper cases - they should be about three-quarters full. Scatter the rest of the chocolate chips over the top and bake for 18-20 minutes until well risen and cooked.

- Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
- In a medium bowl, combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
- Fill cups 2/3 full. Sprinkle tops of muffins before baking with a combination of 3 tablespoons sugar and 2 tablespoon brown sugar.
- Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

- Heat oven to 200C/180C fan/gas 6 and line a 12-hole muffin tin with paper cases. Sift the flour and bicarbonate of soda into a large bowl, then stir in the chocolate chips and sugar. Add the beaten eggs, yogurt and butter, and stir to combine. It doesn't matter if the mixture looks a bit lumpy, it's more important not to overmix or the muffins will turn out tough.
- Fill the paper cases and bake for 20-25 mins until risen and golden brown. Transfer to a rack to cool - or eat slightly warm. Will keep for three days in an airtight container.

- Preheat oven to 400 degrees Fahrenheit.
- Butter 12 large muffin pans well or line with paper muffin cups.
- Sift together all-purpose flour, whole wheat flour, and baking powder. Reserve.
- Combine mashed banana with brown sugar until smooth.
- Beat in eggs, milk and melted butter.
- Stir in dry ingredients only until blended.
- Quickly stir in chocolate chips. Do not overbeat.
- Spoon mixture into prepared muffin cups. An ice cream scoop works well for this.
- Bake 25 minutes or until browned slightly.
- Cool on racks.
- Preparation time 15 minutes, Cooking Time 25 minutes, Yield 12 large muffins.
- RJ's Note: Tested recipe August 31, 1999.
- I substituted 1/3 cup canola oil instead of butter.
- The banana and chocolate chips give the muffin a nice flavour and it is not overly sweet. Tastes almost healthy :-).

- preheat the oven to 200 c / 400 f / gas mark . line 12 muffin cases.
- Mix the flour and baking powder together in a large bowl. Rub in the butter untill the mixture is like breadcrumbs. Stir in the sugar and the chocolate chips.
- In a separate bowl mix the eggs , milk and vanilla extract together , then pour the mixture all at once into the dry ingredients and mix briefly.
- Spoon the batter into the muffin cases and bake for 15-20 minutes or until risen , golden and firm to touch. cool in the tin for 10 minutes.
- after 10 minutes of cooling in the tin , transfer to a cooling rack or serve straight away.
LIGHT CHOCOLATE CHIP MUFFINS

- Preheat oven to 400°F.
- Coat a 12-muffin tin with nonstick cooking spray.
- Whisk the flour with the baking powder and salt and set aside.
- Beat the egg, sugar and margarine with an electric mixer set on medium until smooth.
- Add the milk and vanilla and beat again.
- Mix the flour and chocolate chips into the batter by hand just until combined.
- Spoon the batter into the muffin cups so that each is about two-thirds full.
- Top each muffin cup with cinnamon/sugar mixture, if desired.
- Bake for about 15 minutes or until the muffins are lightly browned, puff up and a toothpick inserted in the center comes out clean.
- Cool in the tin set on a wire rack for about 10 minutes.
- Remove the muffins from the tin and eat them warm or let them cool completely on a wire rack.

- Set oven to 350 degrees.
- Set oven rack to second-lowest position.
- Grease 12 regular size muffin tins or line with paper liners.
- In a medium bowl sift together the flour with cocoa powder, baking powder, baking soda, salt and cinnamon.
- In another large bowl whisk togther milk, egg, oil and vanilla until well combined.
- Add in the dry ingredients using a wodden spoon until just combined (do not overmix!).
- Mix in the chocolate chips.
- Divide the batter evenly between the muffin tins.
- Sprinkle white sugar over the top of each muffin (use any amount of sugar desired).
- Bake for about 20-25 minutes or until the muffins test done.
