Oat, Nut, and Seed Milk image

Our versatile recipe for plant-based milk works great with old-fashioned oats as well as with raw almonds, cashews, walnuts, and pecans. For a gluten- and nut-free option, try using hemp seeds.

Number Of Ingredients 4

1 cup preferred nuts or old-fashioned rolled oats, or 1/2 cup hulled hemp seeds
Kosher salt
1 to 2 teaspoons pure maple syrup, optional
1 to 2 teaspoons pure vanilla extract, optional

Steps:

  • Cover nuts or oats in 2 inches cold water. (Hemp seeds do not need to be soaked.) Refrigerate overnight.
  • Drain and rinse, then transfer to a blender with 3 cups room-temperature or cold water and a pinch of salt. Blend until completely smooth.
  • Strain mixture through a fine sieve lined with two layers of cheesecloth, pressing on solids to extract as much liquid as possible.
  • Add maple syrup and vanilla to taste, if desired. Transfer to sealed containers and refrigerate until cold before serving. Milk can be refrigerated up to 1 week. Shake well before serving.

Based on a recipe from Victoria Boutenko's book, 12 Steps to Raw Foods. Preparation time doesn't include overnight soaking of nuts or seeds. I haven't tried this yet.

1 cup nuts (any) or 1 cup seeds, soaked overnight
2 cups distilled water (recipe calls for "pure water")
2 -3 dates
1/4 teaspoon celtic sea salt (optional)

Steps:

  • Add all ingredients to a blender and blend until smooth.
  • Strain mixture through a nut milk bag or sprout bag.
  • Pour into a jar.

SESAME SEED / NUT MILK



Sesame Seed / Nut Milk image

I needed an alternate calcium source for my daughter and found that one cup of natural sesame seed milk has a lot of calcium in it, depending on the seed you use it can be as much as 3+ times the amount found in milk. For more information on sesame seeds go to www.vegparadise.com/highestperch41.html using the Google search engine. For those that like a sweeter milk, add 1 Tablespoon honey or 2-3 dates and 1/4 teaspoon salt optional. Myself I prefer the natural taste of plain sesame seed milk. If you want to make a nut milk, follow the same process with your desired nut. Add your sweetener and salt just before blending.

Steps:

  • Soak 1 cup of seeds in 2 cups of water overnight.
  • In morning, blend in blender for 5 minutes or until smooth.
  • Strain and pour into a jar.
  • Note: I strain the seeds then add fresh water before blending although it's not necessary.

This gem of a recipe was found in the 2005 cookbook, Raw Food -- Real World. NOTE: For those who might be concerned about whether or not agave nectar is a raw food, here is a quote from the internet = "To make the agave nectar, sap is extracted from the pina, filtered, and heated at a low temperature, which breaks down the carbohydrates into sugars. Lighter and darker varieties of agave nectar are made from the same plants. Because of the low temperatures used in processing many varieties (under 118°F) raw foods enthusiasts generally regard agave nectar as a raw food."

2 tablespoons almond butter (actually raw almond butter, measures!)
2 cups bottled water (actually filtered water)
1 pinch sea salt
2 tablespoons agave nectar
1/2 teaspoon vanilla extract
1 tablespoon coconut butter (optional)

Steps:

  • Place all the ingredients in a blender & puree until smooth.
  • Can be used as a beverage 'straight up,' or as an ingredient for other shakes requiring a nut milk.

From Recipes for Food Allergies by Marilyn Gioannini. Any seed or nut that can be made into milk can be used to make a milk shake. Brazil nuts are used here as an example. Frozen bananas are an important ingredient - they serve the same purpose as ice cream in dairy milk shakes. Bananas should be frozen when fully rips. Peel them and place in a plastic bag. They will keep in the freezer without turning dark for up to a week.

5 brazil nuts
1 cup cold water
1 large frozen banana, cut into chunks
1 1/2 teaspoons carob powder

Steps:

  • Place Brazil nuts and 1 cup cold water into blender container. Blend on low a few secons, then turn it to high speed. Blend until the mixture is smooth, scraping sides of the container with a spatula, if necessary. Add frozen bananas and carob. Blend until smooth and creamy and serve.
  • NUTS VARIATIONS: Other "smooth" nuts, such as cashews, pecans and walnuts can be made directly into milk shakes. Place about 2 tablespoons of nuts into blender and proceed as above. "Grainy" seeds and nuts, such as almonds or quinoa seeds, may need to be strained before adding the bananas and carob.
  • FRUITS VARIATIONS: Fruits, fresh and frozen, can be blended with nut milks. Try peaches, strawberries, dates, figs, or mango in additional to the banana. Add a teaspoon of maple syrup, agave nectar or honey for sweetness, if necessary.
