MADE-OVER BLACKENED CAJUN SKILLET FRIES

3 medium russet potatoes
1 tablespoon olive oil
1 teaspoon Cajun seasoning
3 tablespoons nonfat Greek yogurt
1 tablespoon Creole mustard
Kosher salt

Steps:

  • Preheat the oven to 425 degrees F. Cut the potatoes into long wedges about 1-inch thick. Toss the potatoes with the olive oil and Cajun seasoning. Heat an ovenproof large nonstick skillet over medium-high heat and add the potatoes in a single layer. Cook, turning, until browned on all sides, about 15 minutes. Slowly add 1/4 cup water to the skillet and transfer the entire skillet to the oven.
  • Continue to cook the potatoes, turning once, until the potatoes are tender and the outsides are crisped, about 20 more minutes. Meanwhile, mix the yogurt with the mustard and a pinch salt. Serve the potatoes warm with the mustard dipping sauce.

A Cajun shrimp recipe cooked in a cast iron skillet and served with crusted French bread. I have made this twice for my wife and I, and we both love it. Try a nice Chardonnay with the shrimp to top off the meal.

1 tablespoon olive oil
2 cloves garlic
3 tablespoons butter
1 tablespoon Worcestershire sauce
1 tablespoon lemon juice
1 tablespoon Cajun seasoning
1 pound uncooked medium shrimp, peeled and deveined
1 loaf French bread

Steps:

  • Heat oil in a pan over medium heat. Saute garlic in the hot oil until brown, about 2 minutes. Add butter, Worcestershire, lemon juice, and Cajun seasoning. Let simmer until butter has melted through, 3 to 5 minutes.
  • Mix shrimp and butter mixture together in a cast iron skillet. Place in the refrigerator and allow to set for about 20 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C). Remove the skillet from the refrigerator.
  • Bake in the preheated oven for 10 minutes. Place the French bread into the skillet with the shrimp and continue to cook until shrimp are bright pink and bread is slightly brown on top, about 10 minutes more. Serve in the cast iron skillet and use the bread to dip up the sauce.

1 pkg. (9 oz.) refrigerated fettuccine
1 Tbsp. olive oil
1 lb. boneless skinless chicken breasts, cut into thin strips
1 Tbsp. Cajun seasoning, divided
1 cup each red and yellow pepper strips
1 pkg. (5 oz.) baby spinach leaves
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
3/4 cup milk
2 green onions, sliced
1/2 cup KRAFT Shredded Parmesan Cheese

Steps:

  • Cook pasta in boiling water in large skillet 2 min. Drain pasta in colander; set aside.
  • Heat oil in same skillet over medium heat. Add chicken; sprinkle evenly with 1 tsp. Cajun seasoning. Cook 5 min. or until chicken is done, stirring frequently. Spoon chicken into bowl; cover to keep warm.
  • Add peppers to skillet; sprinkle with 1 tsp. of the remaining Cajun seasoning. Cook and stir 5 min. or until peppers are crisp-tender. Return chicken to skillet. Add spinach; cook and stir 2 to 3 min. or just until spinach is wilted.
  • Add cream cheese, milk and remaining Cajun seasoning to chicken mixture; cook and stir 2 to 3 min. or until cream cheese is completely melted and sauce is well blended. Add pasta; cook 3 to 5 min. or until heated through, stirring frequently. Remove skillet from heat.
  • Top chicken mixture with onions and Parmesan.

2 tablespoons vegetable oil
1 cup chopped celery
1 1/2 cups chopped green bell peppers
1/2 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4-1/2 teaspoon black pepper
salt
cayenne pepper
2 cups chopped fresh tomatoes
1 tablespoon honey
1 tablespoon Dijon mustard
4 cups cooked black-eyed peas or 4 cups butter beans
chopped green onion

Steps:

  • In a skillet, cook the onion and garlic in heated oil over medium heat until onions start to become tender.
  • Add the celery and bell pepper; cook 5 minutes, stirring frequently.
  • Add the thyme, basil, oregano, pepper, cayenne, and salt; stir to mix.
  • Cover and cook 5 minutes or until onions are golden, stirring every now and then.
  • Add the tomatoes, honey, and mustard; stir to combine; simmer 5 minutes.
  • Add the beans; cover and let cook until heated through, stirring occasionally.
  • When plated, sprinkle with chopped green onion.

2 tablespoons olive oil
1/2 yellow onion, diced
2 garlic cloves, minced
1/2 green bell pepper, sliced
1/2 yellow bell pepper, sliced
1/2 red bell pepper, sliced
1/2 orange bell pepper, sliced
1 tablespoon cajun seasoning
1 1/2 cups long-grain white rice
2 3/4 cups chicken stock or 2 3/4 cups water
1 lb large peeled and deveined shrimp
1 lemon, juiced plus lemon wedges for garnish
2 tablespoons fresh parsley, chopped
3 tablespoons sliced scallions (to garnish)

Steps:

  • Preheat oven to 375 degrees F.
  • Heat oil in a large skillet over medium high heat. Add the onion, garlic, and peppers and cook until softened, about 5 to 8 minutes.
  • Season with half of the Cajun seasoning and then stir in the rice. Cook for about 1 to 2 minutes, stirring often. Add the chicken stock and bring to a simmer.
  • Cover with a lid, place in the oven and cook until the stock has absorbed and the rice is tender, about 18 to 20 minutes. Carefully remove from the oven and remove the lid.
  • Place the shrimp on top along with the remaining Cajun seasoning, and replace the lid. Return to the oven and cook for another 5 to 8 minutes or until the shrimp is fully cooked. Remove from the oven, remove lid and gently fold in the lemon juice and parsley. Garnish with sliced scallions and lemon wedges to serve.
