Time 35m

Yield 16 biscuits, 8 serving(s)

Number Of Ingredients 8

3 cups sifted flour
2 tablespoons sugar
4 1/2 teaspoons baking powder
3/4 teaspoon cream of tartar
3/4 teaspoon salt
3/4 cup shortening
1 beaten egg
1 cup milk

Steps:

  • Preheat oven to 450°F (230°C).
  • Sift together flour, sugar, baking powder, cream of tartar and salt.
  • Cut in shortening/butter with pastry blender or two knives until it resembles a coarse meal. (Or you can just rub it in with your fingers).
  • Combine egg and milk.
  • Add this to the flour mix all at once, stirring with fork just enough to make a soft dough that sticks together.
  • Knead lightly on lightly floured surface 15 times.
  • Roll out to 1" (2.5cm) thickness.
  • Cut with floured 2" (5cm) cutter and place 1" (2.5cm) apart on ungreased baking sheet.
  • Bake in oven 12 - 15 minutes or until golden brown.
  • Serve immediately.

Categories     Breads

Time 22m

Yield 12 serving(s)

Number Of Ingredients 6

2 cups all-purpose flour
4 teaspoons baking powder
2 tablespoons granulated sugar
1 teaspoon salt
1/3 cup butter or 1/3 cup margarine, cold
3/4 cup milk, cold

Steps:

  • Preheat oven to 425 F Mix first 4 ingredients together in a bowl.
  • Cut in butter with a pastry blender or a fork, or two knives, until crumbly.
  • Add milk.
  • Stir until it forms a ball.
  • Add a bit more milk if necessary to make a soft dough.
  • Roll or pat to 1 inch thick. (I usually pat the dough).
  • Cut into circles with a biscuit cutter or a floured glass.
  • Arrange on a greased baking sheet.
  • Bake in 425 F for about 10- 12 minutes or until risen and nicely browned. (in my oven it usually takes 15 minutes).
  • This is supposed to make 12, but I almost always only get 11 biscuits, with the size of the glass that I use.
  • Variations: Try adding some fresh or dried herbs. Some good pairings are basil and oregano, or parsley and fresh ground black pepper, or thyme and garlic, or add some grated sharp or old cheddar cheese.

MILE HIGH SCONES

Mile High Scones image

I received this recipe from a friend in London. The result is light, flaky, mile high scones, every time!

Provided by Clare Butler

Categories     Other Breakfast

Time 20m

Number Of Ingredients 10

2 1/2 c flour
1 1/2 Tbsp baking powder
1 1/4 tsp salt
6 Tbsp cold butter, cut into cubes
3 Tbsp sugar
3/4 c milk
1 tsp vanilla
1 dash(es) lemon juice
1 beaten egg
sugar for sprinkling

Steps:

  • 1. Preheat oven to 425 degrees. Place baking sheet in oven to preheat as well.
  • 2. Warm milk in the microwave for 30 seconds. Add vanilla and lemon juice to milk. Set aside. In a separate bowl, mix all dry ingredients with a whisk. Add butter to dry mixture and use your hands to quickly incorporate the butter until the mixture beings to crumble. Make a well in the center of the dry and add the wet, mixing just until combined.
  • 3. Gather dough together and on a floured surface fold the dough over itself 4 times, leaving it at 2 inches in height. Cut into scones using a sharp knife or round cutter. Brush beaten egg on and sprinkle sugar on top.
  • 4. Carefully place scones on hot baking sheet and bake for 10 minutes. Eat or freeze immediately. Serve with jam and homemade clotted cream!!!
