INDIVIDUAL MEAT LOAVES
Steps:
- Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense.
- Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.
HURRY-UP MEAT LOAVES
I recieved this recipe from my mother 7/22/00. It's very easy and my family loves it. Being 6 small meat loaves it's great to serve with a salad and mashed potatoes and corn for a couple of guests at the dinner table.

- Combine first 6 ingredients, stirring until mixture is thoroughly blended. Shape mixture into 6 loaves; place loaves on rack of greased broiler pan. Spoon barbecue sauce over loaves. Bake at 450 degrees for 25 minutes. Serve immediately.
LITTLE MEAT LOAVES
These individual meat loaves are topped with a sweet and tangy sauce. The sausage in this recipe yields a more complex flavor than your standard meat loaf.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the eggs, cracker crumbs, milk, cheese, onion, Worcestershire sauce, Italian-style seasoning, garlic salt, ground beef and ground sausage. Mix this together well and form into individual loaves. Place the loaves in a 9x13 inch baking dish.
- In a separate small bowl, combine the ketchup, brown sugar and Worcestershire sauce. Mix this together well and spoon some of this sauce over each loaf. Garnish each loaf with some Parmesan cheese and seasoning to taste.
- Bake at 350 degrees F (175 degrees C) for 45 to 60 minutes.

- In two very large bowls, combine the eggs, milk, cheese, bread, onions, carrots, salt and pepper. Crumble beef over mixture and mix well. Pat into four ungreased 9x5-in. loaf pans., Cover and freeze three meat loaves for up to 3 months. Bake the remaining loaf, uncovered, at 350° for 1 hour. Combine the brown sugar, ketchup and mustard; spread over loaf. Bake 15-20 minutes longer or until no pink remains and a thermometer reads 160°., To use frozen meat loaf: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 1 hour. Combine the brown sugar, ketchup and mustard; spread over loaf. Bake 30-35 minutes longer or until no pink remains and a thermometer reads 160°.

PIZZA MEAT LOAVES

- Preheat oven to 375°.
- Place bread slices in a food processor, and pulse 10 times or until fine crumbs measure 1 1/4 cups.
- Heat a medium nonstick skillet coated with cooking spray over medium-high heat. Add onion; sauté 4 minutes or until lightly browned. Place onion in food processor. Add bell peppers, and pulse 10 times or until the bell peppers are chopped.
- Combine breadcrumbs, onion mixture, cheese, pesto, salt, turkey, beef, and egg. Divide beef mixture into 9 equal portions, shaping each into a (3 x 1-inch) loaf. Place loaves on a broiler pan coated with cooking spray. Bake at 375° for 18 minutes or until lightly browned. Spoon about 1 1/2 teaspoons sauce over each loaf. Bake an additional 10 minutes or until a thermometer registers 160°.

"I've wanted to reduce the fat in my meat loaf for many years, so I finally came up with this recipe," explains Paul Soper of Sierra Vista, Arizona.
