I like to mince the herbs and the garlic in my food processor, it makes the job quick and easy and everything gets finely and evenly chopped.

Number Of Ingredients 15

15 ounce can of chickpeas, drained and well rinsed
7 ounces canned black beans, drained and rinsed
1/2 cup finely chopped tomatoes
1/3 cup minced red onion
1/3 cup finely chopped bell peppers, assorted colors
1/3 cup finely chopped cucumber
1/4 cup finely chopped black olive
1/4 cup halved or sliced stuffed green olives
2 cloves garlic, very finely minced
1 packed cup parsley leaves, minced
1/2 packed cup mint leaves, minced
1/4 cup extra virgin olive oil
1/4 cup fresh squeezed lemon juice
1 tsp sumac, or more to taste
salt and fresh cracked pepper to taste

Steps:

  • Whisk together the dressing and taste to adjust any of the ingredients.
  • Add all the salad ingredients to a large bowl and toss lightly with the dressing.
  • Serve with labneh, either along side, or on top, and fresh pita bread, toasted or not.

2 (15 ounce) cans garbanzo beans, drained and rinsed
2 (15 ounce) cans black beans, drained and rinsed
½ cup (packed) chopped fresh mint
½ cup (packed) chopped fresh parsley
½ cup chopped onion
1 pint grape tomatoes, halved
1 jalapeno pepper, finely chopped
1 clove garlic, minced
¼ cup olive oil
3 tablespoons lemon juice
5 tablespoons apple cider vinegar
salt and ground black pepper to taste

Steps:

  • In a salad bowl, lightly mix together the garbanzo beans, black beans, mint, parsley, onion, and grape tomatoes.
  • Place the jalapeno pepper, garlic, olive oil, lemon juice, and apple cider vinegar into a blender, and blend until thoroughly combined. Pour the dressing over the salad, and toss to mix; sprinkle with salt and black pepper to serve.

Recipe video above. The best Chickpea Salad I've ever had! Inspired by a recipe from "Jerusalem" by Yotam Ottolenghi, spiced chickpeas give this a wow factor and the Dressing is a beautiful lemon vinaigrette that is not as sharp as most lemon dressings.

400g / 14 oz can chickpeas, drained but still wet (Note 1)
2 tbsp olive oil
1 tsp ground cumin
1 1/2 tsp All Spice
1 tsp ground cardamon
1/4 tsp salt
2 cucumbers (, diced)
2 tomatoes ((or 3 medium tomatoes), diced)
1 red onion (small) (, diced)
1/4 cup coriander leaves (, roughly chopped)
1/4 cup parsley (, roughly chopped)
1 1/2 tbsp sherry vinegar ((Note 2))
Zest of half a lemon
2 tbsp lemon juice
1/4 cup extra virgin olive oil
1 tsp caster sugar
1 garlic clove, smashed ((Note 3))
Salt and pepper

Steps:

  • Combine the Dressing ingredients in a jar and shake. Set aside for 20 minutes to allow the flavours to develop.
  • Place chickpeas in a large bowl. Scatter over Spices, then toss to coat. The wetness of the chickpeas will make the spices stick.
  • Heat 2 tbsp olive oil in a large pan over high heat and fry the chickpeas for a couple of minutes. Shake the pan so the chickpeas roll, or stir gently (so the spice coating doesn't come off). Transfer into bowl and cool slightly.
  • Combine the Salad Ingredients in a bowl. Drizzle with a bit of Dressing and toss. Transfer to serving bowl.
  • Top salad with chickpeas (warm or at room temperature). Drizzle with more Dressing. Toss very gently, if desired (don't toss too much otherwise spice comes off chickpeas). Serve immediately.
  • Great served with a dollop of yoghurt and pita bread to stuff the salad into.

2 cans (14 oz.) chickpeas (garbanzo beans), drained and rinsed
1 can (14 oz.) black beans, drained and rinsed
2 firm roma tomatoes, seeds removed and diced
1/2 red onion, diced
1/2 English cucumber, diced
3 cloves garlic, minced
2 tablespoons fresh mint, chopped
1/4 cup fresh parsley, chopped
1 teaspoon sumac
mineral salt & fresh cracked pepper, to taste
3 - 4 tablespoons olive oil (I used a garlic infused olive oil)
juice of 1 large lemon
pita bread
hummus
arugula

Steps:

  • In a large mixing bowl, combine the chickpeas, black beans, tomatoes, onion, cucumber, garlic, mint and parsley. Add the sumac, a good drizzle of olive oil, lemon juice, salt and pepper. Mix well to combine.
  • Serve at room temperature or chilled. Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • This salad is perfect in pita bread that's been slathered with hummus and layered with arugula. Alternately, you can add a large handful of arugula to the salad and serve with pita bread and hummus on the side.
  • Serves 6
  • Try adding a dash of cayenne pepper or red pepper flakes for a little heat.

Pinch ground cumin
4 fresh scallions, thinly sliced on a bias
3 Roma tomatoes, diced
1 large avocado, pitted and diced
One 15-ounce can (about 1 3/4 cups) black beans, drained and rinsed
One 15-ounce can (about 1 cup) chickpeas, drained and rinsed
1 large ear sweet corn, kernels cut off
1 small jalapeno, minced
1 lime, juiced
1 red bell pepper, seeded and diced
One medium jicama root, peeled and sliced into flat rounds or half moons

Steps:

  • Combine the sesame seeds, salt pepper, cumin, scallions, tomatoes, avocado, black beans, chickpeas, corn, jalapeno, lime juice and pepper in a medium mixing bowl. Serve immediately, with fresh jicama rounds.
