1/4 cup oil
4 tablespoons dried minced onions
2 cloves garlic, minced ((or 1/2 teaspoon garlic powder))
1 tablespoon salt
1 tablespoon dried thyme
1 tablespoon dried rosemary
1 tablespoon dried oregano
1 tablespoon dried parsley
1 dash stevia extract ((optional--see Notes for alternatives))
56 ounces diced tomatoes ((canned or fresh))

Steps:

  • Place oil in pan.
  • Heat over medium heat.
  • Add onion and garlic. If using minced dried onion, add about 1/4 cup water to rehydrate. Cook for approximately 2 minutes until browned.
  • Add remaining ingredients and cook for about 7 minutes until the sauce is slightly darkened in color.
  • Serve over pasta.

1 large onion, finely chopped

3 tablespoons extra virgin olive oil
1/4 cup chopped fresh basil
1-1/2 teaspoons dried oregano
3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large saucepan, heat oil over medium-high heat. Add onions; cook and stir until tender, 3-5 minutes. Add garlic; cook and stir 1 minute longer. Stir in remaining ingredients. Bring to a boil. Reduce heat; cover and simmer until thickened and flavors are blended, 30-45 minutes, stirring occasionally and breaking up tomatoes with wooden spoon.

¼ of a small onion

  • In a food processor or blender, combine all ingredients and pulse until smooth.
  • Store in the fridge in a resealable container for up to 5 days. Or, you could also freeze the sauce in ice cube trays, pop out cubes, and place in a plastic bag to continue freezing.

I had been looking for an easy marinara sauce. I adapted this for my taste (I don't like a lot of heat); but you can make it as spicy as you like by adding more red pepper flakes. It's great for using as a dipping sauce for veggies or bread. You can use it on pasta or pizza.

1/4 tsp or so crushed red pepper flakes
1 can(s) (28 oz) chunky style crushed tomatoes
salt and pepper
1 Tbsp italian dried seasoning
1 Tbsp dried parsley
sugar to taste

Steps:

  • 1. Add olive oil to medium saucepan over medium heat.
  • 2. Add garlic and crushed pepper to heated oil. When pepper snaps and garlic starts to sizzle, stir in crushed tomatoes.
  • 3. Season with salt, pepper, sugar and Italian seasoning.
  • 4. Reduce to a simmer and cook for 5 minutes and stir in parsley.
  • 5. Adjust seasonings and serve.
