Steps:
- Place oil in pan.
- Heat over medium heat.
- Add onion and garlic. If using minced dried onion, add about 1/4 cup water to rehydrate. Cook for approximately 2 minutes until browned.
- Add remaining ingredients and cook for about 7 minutes until the sauce is slightly darkened in color.
- Serve over pasta.

Reduce heat; cover and simmer until thickened and flavors are blended, 30-45 minutes, stirring occasionally and breaking up tomatoes with wooden spoon.

5 MINUTE SPICY MARINARA SAUCE
I had been looking for an easy marinara sauce. I adapted this for my taste (I don't like a lot of heat); but you can make it as spicy as you like by adding more red pepper flakes. It's great for using as a dipping sauce for veggies or bread. You can use it on pasta or pizza.

- 1. Add olive oil to medium saucepan over medium heat.
- 2. Add garlic and crushed pepper to heated oil. When pepper snaps and garlic starts to sizzle, stir in crushed tomatoes.
- 3. Season with salt, pepper, sugar and Italian seasoning.
- 4. Reduce to a simmer and cook for 5 minutes and stir in parsley.
- 5. Adjust seasonings and serve.

- Crush the tomatoes by hand or by sticking kitchen shears in the can and snipping until the whole tomatoes are broken up into chunks. Set aside.
- When the onion starts to gently sizzle, add the garlic, tomatoes, salt, red pepper flakes, and basil. Swish about a 1/2 cup of water in the empty tomato can to get the rest of the tomatoes out, and add the tomato water to the skillet. Stir gently.
- When the tomatoes come to a boil, reduce heat to a low simmer and cook for 15 to 20 minutes, stirring frequently. Taste for seasoning. Depending on the acidity of the tomatoes, you may want to add a pinch or two of sugar, and maybe a little more salt. Remove onion pieces -- which should be falling apart -- before serving, but do not discard. They are delicious on crusty bread, or on their own.
