BLACKENED TILAPIA WITH ZUCCHINI NOODLES

Steps:
- Trim ends of zucchini. Using a spiralizer, cut zucchini into thin strands., Mix cumin, 1/2 teaspoon salt, smoked paprika, pepper and garlic powder; sprinkle generously onto both sides of tilapia. In a large nonstick skillet, heat oil over medium-high heat. In batches, cook tilapia until fish just begins to flake easily with a fork, 2-3 minutes per side. Remove from pan; keep warm., In same pan, cook zucchini with garlic over medium-high heat until slightly softened, 1-2 minutes, tossing constantly with tongs (do not overcook). Sprinkle with remaining salt. Serve with tilapia and pico de gallo.

SPICY TILAPIA WITH MUSHROOMS AND ZUCCHINI
I wanted to add more fish to my diet so one day I bought fresh Tilapia and looked online for an easy recipe to cook that evening because I never buy fresh fish and didn't know the first thing how to cook it. I found a recipe similar but I added my own special touch to it and pretty much changed the original. My husband and I loved it. Here's my version!

Steps:
- Instructions.
- Heat oil in large skillet over medium heat. Stir-fry onion, garlic clove and pepper until crisp-tender, then add zucchini and continue to cook for a short time. Finally add mushrooms. Push veggies off to the side. Sprinkle one side of Tilapia with Cajun seasoning. Add to skillet. Cook about three minutes and turn.
- Cut lime in half and squeeze lime juice on tilapia from one half of the lime. Use the other half for serving if you like to squeeze it fresh on your fish. Sprinkle cayenne pepper according to taste. Then cover and continue to cook until fish is done, about another three minutes. Serve.
- Pan may dry after sautéing veggies, so I spray some olive oil spray before I place tilapia in pan to keep it from sticking. I also like to add a sprinkle of Marjoram on fish.
- I like to serve it with Steamed Jasmine Rice.

- 1.Preheat oven to 350 degrees Fahrenheit. 2.Place the fillets and zucchini in a buttered baking dish. 3.Brush the tops with juice. 4.Bake fish in preheated oven 20 to 30 minutes or until fish just starts to flake. 5.Meanwhile, combine the cheese, butter, mayonnaise, onions and seasonings in a bowl. Mix well with fork. 6.When the fish is ready, spread the top with the cheese mixture and turn on the broiler or high heat, and bake until golden brown (about 5 minutes). *Baking time will depend on the thickness of the fish you use. Watch the fish closely so that it does not overcook.

- In a medium bowl cut zucchini in half length wise and make ribbons using a vegetable peeler.
- Add corn.
- Season with sesame oil, soy sauce, rice vinegar, sesame seeds (use only 1tsp of black sesame seeds). Toss well to coat and set aside in the fridge.
- Pre-heat oven to 375°F.
- Place each seasoned tilapia fillet on a 7" piece of foil. Drizzle some extra virgin olive oil and close the foil around it creating a loose pouch. Bake for 20 minutes.
- On a 24 muffin tin pan place the 4"x 3.5" pieces of foil in each muffin tin, pressing in the middle to create a cup.
- Brush each wonton wrapper with oil on both sides. Place each wonton wrapper on the foil pressing in the middle to form a cup.
- Bake for 7-8 minutes until edges start to get golden brown. Wonton cups may need a little more time depending on the thickness. Check on them after 7 minutes and add one minute at a time if necessary. Let them cool.
- To make the sauce mix together honey, lemon juice, grated ginger and sriracha.
- To assemble the cups put a little zucchini and corn mixture in the cup. Place a small piece of baked tilapia on top drizzle about 1/2 tsp of honey sriracha sauce and add some black sesame seeds on top.
- Enjoy.

- Cut four 8x14 pieces of foil.
- .Preheat barbecue to medium.
- Brush foil with oil, fold in half (to crease), then open. On one half, layer potatoes, zucchini and mushrooms. Place Tilapia on top of vegetables. Spoon pesto over fish; sprinkle with cheese.
- Fold foil over to cover and crimp edges to seal packages. Grill packages, with lid closed, until fish is firm and opaque and vegetables are tender, 10-15 minutes. Season to taste with salt and pepper.

- Mix first 4 ingredients until blended.
- Thread zucchini onto skewers. Brush zucchini, then fish with oil. Grill 10 min., turning after 5 min.

ZUCCHINI AND TILAPIA
Steps:
- Cut zucchini into 4 equal pieces lengthwise. Spread with butter. In bowl combine bread crumbs, cheese, lemon pepper and parsley; stir well. Set aside some crumb mixture for the tilapia. Sprinkle crumb mixture on zucchini. Place zucchini along outer edges of broiler pan.
- In the center of broiler pan place 4 frozen tilapia fillets. Spread butter on fish. Sprinkle lightly with lemon pepper.
- Broil on second shelf from top until top of fish is white and flaky. Turn fish, spread with butter. Sprinkle fish heavily with crumb mixture covering fish entirely. Broil until topping begins to brown. Serve immediately.

Steps:
- Chop finely the onion.
- Slice the zucchini (not to thick).
- Saute the zucchini with the onion, garlic.
- Add all your seasonings.
- Saute this for a few minutes in a pan sprayed with butter pam.
- Do not saute too long as you do not want the zucchini soft.
- Add the tomatoes and simmer few minutes.
- Remove from heat and serve on plates adding parmesan cheese on top.
