MICROWAVE RICE KRISPIE MEATLOAF
I don't know where my mother in law found this recipe originally, I changed one ingredient once because I did not have something and now it is even better and is a family favorite. It is super moist, easy to make and a very quick meal to make after work and tastes like you spent the whole day. Can be made ahead of time for quicker dinners.

Steps:
- Mix all ingredients together adding the rice krispies last. Save the bacon and catsup for the top.
- Mix well and place in a large shallow microwavable dish and flatten until about 2 inches thick. Place katsup generously on top and spread out with a spoon. Add sliced bacon to top. Cover with lid and microwave at 5 minute increments, draining off any grease each time and rotate dish for even cooking. Cook for about 25-35 minutes or until done.
- Excellent and if you are lucky enough to have any leftovers, makes a great meat loaf sandwich!
- **please note** Heinz 57 sauce has changed their formula recently and may not be dairy and seafood free-ALWAYS reread ingredients EACH time you purchase when cooking for someone with food allergies.

- Mix first five ingredients.
- Shape into round loaf in microwave safe dish [I use a glass pie plate].
- Zap on High 12 minutes, or until cooked through.
- Let stand 5 minutes, then brush with remaining barbeque sauce.
- Note -- I like to add Italian seasoning, and change the barbeque sauce to spaghetti or pizza sauce. You can also add shredded cheese.

- Preheat oven to 350°. In a small bowl, mix chili sauce and ketchup. In a large bowl, combine Rice Krispies, onion, green pepper, cheese, egg, salt and pepper; stir in half of the chili sauce mixture. Add beef; mix lightly but thoroughly., Transfer beef mixture to an ungreased 9x5-in. loaf pan. Make a shallow indentation down center of loaf. Spread remaining chili sauce mixture over loaf, being sure to fill indentation., Bake 60-70 minutes or until a thermometer reads 160°; use a turkey baster to remove drippings every 20 minutes. Let stand 10 minutes before slicing.

Instead of using bread crumbs or crushed crackers, I use rice krispies and they work great! After trying this recipe you will probaly only use rice krispies in your meatball from now on! You can also add 2 tbsp onion soup mix for extra flavor!

- Pat into a 9 x 5 loaf pan.

- Put marshmallows and butter into bowl.
- Microwave for 1 minute.
- Mix butter and butter together.
- Slowly mix in the 2 cups of rice krispies.
- After rice krispies are well combined with butter/marshmallow mixture put in microwave for 30 seconds.
- Mix mixture again.
- Make into any shape wanted.

Low in fat because you use a mixture of ground turkey, lean ground beef, rice krispies and egg substitute. A dear friend gave me this recipe and it is delicious. You could of coarse use real egg.

- Spray a microwave safe bowl with cooking spray. (Be sure to use a decent size, semi-deep bowl because the marshmallows will expand.)
- Add the marshmallows and microwave on high for 40-45 seconds. Watch closely so the marshmallows don’t expand too much and overflow the bowl. If they are getting close, simply pause the microwave. The marshmallows will deflate right away and then you can continue with the microwave time.
