Easy Cranberry Relish (Microwave) image

Make this condiment in only 15 minutes in your microwave when you're looking for something slightly different to serve with your holiday meal.

1 cup cranberries
1/4 cup water
1 pinch grated tangerine zest
2 tangerines, segmented, halved
1/4 granny smith apple, pared, cored, grated
1 tablespoon minced onion
2 tablespoons sugar

Steps:

  • Combine cranberries and the water in medium microwave-safe bowl. Cover with waxed paper and microwave on High power for 2 minutes.
  • Stir in remaining ingredients and microwave covered 2 minutes longer. Let cool to room temperature.

Steps:

  • Serve in sandwiches or with roast chicken, ham, turkey. In food processor or blender container, process cranberries, orange and apple until finely chopped. Place in shallow microwavable casserole. Stir in water, sugar, ginger and nutmeg. Microwave on High for 3 to 4 minutes; stir. Microwave on medium 50% power for 2 to 3 minutes. Cool slightly. Cover and refrigerate up to 2 weeks. Makes 2¼ cups. Preparation 10 minutes.

Steps:

  • In food processor or blender container, process cranberries, orange and apple until finely chopped.
  • Place in shallow microwavable casserole.
  • Stir in water, sugar, ginger and nutmeg.
  • Microwave on High for 3 to 4 min; stir.

Pair this cranberry and orange relish with turkey or a nut roast. Ideal at Christmas time, dried cranberries give it a lovely thick, jammy texture

200g dried cranberries
300ml orange juice
60g light muscovado sugar

Steps:

  • Tip the cranberries into a large pan with the orange juice and sugar, and bring to the boil. Turn down the heat to medium and bring to a gentle simmer, then continue to cook for 10 mins until the cranberries become plump and sticky.
  • Tip the mixture into a blender, blitz to a purée, then return to the pan and simmer over a low heat for 5 mins until thick and jammy. Leave to cool and tip into a serving dish or jar. Will keep in the fridge for four days or freezer for up to six months.

This is a very easy way to make cranberry sauce. Try to use orange juice if possible, it really brings out "life" to the cranberry sauce. This is a fantastic recipe for cranberry sauce, I make it all the time for holidays, you can prepare this well in advance even days ahead, cover and refrigerate. If you are doubling the recipe then make in two separate microwave-safe bowls, don't double the recipe into one bowl or it will overflow in the microwave.

12 ounces cranberries, fresh or frozen
1 1/4 cups sugar (a little more sugar, if you prefer it sweeter)
1/2 cup orange juice or 1/2 cup water
1 teaspoon grated orange rind

Steps:

  • Combine all ingredients in a 3-qt microsafe bowl; mix well.
  • Cover with wax paper.
  • Microwave on high for 5 minutes.
  • Stir well; recover with wax paper.
  • Microwave another 5-7 mins longer until cranberries pop, and sauce has thickened.
  • Let stand, covered until cool.
  • Transfer to serving bowl and chill for 3-4 hours.
