Steps:
- Cut the onion and the tomato into little pieces, as well as the serrano pepper. Wash very well the clams (almejas in Spanish) in their shells. Arrange them on a deep pan. Fill it with two cups of cold water, add chopped tomato, onion and pepper. Finally add the parsley, the cilantro , the olive oil and the salt and pepper until they season. Put the pan on the flame and put the cover on it, let it boil smoothly, remove the content every once in a while until is well done and the salsa has completely consumed. Serve it hot.

STEAMED CLAMS WITH CHORIZO AND TEQUILA

Steps:
- Heat a heavy, medium pot over medium heat. Add the chorizo, breaking up the large pieces with a wooden spoon. Saute until almost crisp, about 6 minutes. Using a slotted spoon, transfer the chorizo to paper towels to drain.
- Add the butter and onions and cook over medium-high heat until the onions are soft, about 5 minutes. Add the garlic and saute until fragrant, about 3 minutes longer. Add the tequila and clam juice and bring to a boil over medium-high heat, scraping up the browned bits at the bottom of the pan. Add the clams to the pot, cover and reduce the heat to medium. Cook until the clams open wide, 10 to 12 minutes (discard any clams that remain unopened). Return the chorizo to the pot and stir to combine. Divide between 2 bowls, sprinkle with the chopped cilantro and serve with the loaf of sourdough.

- Mix onion with lime juice in a small bowl and allow to stand for 10 minutes. Meanwhile, toss shrimp, roma tomatoes, cucumber, celery, jalapeno, salt, and black pepper in a bowl until thoroughly combined.

MEXICAN-STYLE STEAMED MUSSELS
I always keep an eye out for mussels to go on sale at the local fish counter, just so I can make this yummy recipe. It makes for a great quick light meal. Be warned, though: four pounds of well-prepared mussels can disappear much faster than you think. Also a great recipe to use with clams, if that's what you prefer. Prep time does not include time to clean the shellfish.

Steps:
- Heat the oil in a large pot (stock pot) over medium heat.
- Add the onions, garlic, tomato, and jalapenos.
- Cook just until softened.
- Add the wine, water, salt and pepper, and bring to a boil over high heat.
- Add the mussels and cilantro and cover the pot.
- Steam for 8-10 minutes, carefully shaking the pot occasionally to shift the mussels around.
- The mussels are cooked when they are fully opened.
- Be sure to discard any mussels that do not open.
- Dish the mussels and broth out into bowls.
- Serve with fresh crusty bread or warm fresh corn tortillas for sopping up the broth.

- Lay the clams in a wide pan, like a big frying pan, in one layer; you may need to do this batches. Pour 1 cup of white wine in the pan and turn the heat to high. Cover the pan and steam the clams open. Keep an eye on the pan and check every minute or two and remove each clam as soon as it pops open. Move the opened clams to a bowl. Keep doing this, adding and removing clams, until they are all opened. Tap on the shells of those clams that don't seem to want to open, and sometimes they'll pop. If they stay resolutely closed, toss them.
- Your choice here: I remove all but a few of the clams from their shells because it's easier to eat this way; I leave a few clams in the shells for garnish. Some people just like to pick through the whole shebang, and if you're one of those, go for it.
- OPTIONAL: Strain the clam juice through a paper towel to remove grit. You can use this for the finished dish.
- Wipe out the pan you cooked the clams in and heat the olive oil over medium-high heat. When it's hot, saute the onions until they are soft and the edges have browned a bit. Add the chiles, garlic and chorizo and cook for another minute or two.
