5 Tomatillos
1/4 - 1/2 bunch fresh Cilantro (finely chopped)
2 Cloves of Garlic
1/4 Onion
Jalapenos (1-3 depending on how spicy you want it)
Salt (to taste)
Olive Oil

Steps:

  • Slowly saute the tomatillos, the onion, and the jalapenos in a preheated frying pan with some olive oil for 5 minutes.
  • After 5 minutes, add the garlic cloves and continue cooking until the tomatillos are slightly browned.
  • Remove from the heat and blend the ingredients with the cilantro and salt in a blender.
  • If you want a thinner consistency, add a small amount of water.

8 ounces (5 to 6 medium) tomatillos, husked and rinsed
Fresh hot green chiles, to taste (roughly 2 serranos or 1 jalapeno), stemmed
5 or 6 sprigs fresh cilantro (thick stems removed), roughly chopped
Scant 1/4 cup finely chopped onion
Salt

Steps:

  • Whether you choose the verdant, slushy, herby freshness of the all-raw tomatillo salsa or the oil-colored, voluptuous, sweet-sour richness of the roasted version, tomatillos are about brightening tang. The buzz of the fresh hot green chile adds thrill, all of which adds up to a condiment most of us simply don't want to live without.
  • For the All-Raw version: Roughly chop the tomatillos and the chiles. In a blender or food processor, combine the tomatillos, chiles, cilantro and 1/4 cup water. Process to a coarse puree, then scrape into a serving dish. Rinse the onion under cold water, then shake to remove excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.
  • For the Roasted version:
  • Preheat a broiler.
  • Roast the tomatillos and chiles on a baking sheet 4 inches below a very hot broiler until darkly roasted, even blackened in spots, about 5 minutes. Flip them over and roast the other side, 4 to 5 minutes more will give you splotchy-black and blistered tomatillos and chiles. In a blender or food processor, combine the tomatillos and chiles, including all the delicious juice that has run onto the baking sheet. Add the cilantro and 1/4 cup water, blend to a coarse puree, and scrape into a serving dish. Rinse the onion under cold water, then shake to remove the excess moisture. Stir into the salsa and season with salt, usually a generous 1/4 teaspoon.

1 pound tomatillos
2 serrano peppers ((or use jalapeno peppers for a milder salsa verde))
3 garlic cloves (chopped)
1 small red onion (chopped)
1/2 cup chopped fresh cilantro
2 tablespoons white wine vinegar
1 tablespoon lime juice ((about 1 small lime))
Salt to taste ((I use a teaspoon of sea salt))

Steps:

  • Peel, rinse and dry the tomatillos. Slice them in half and set them onto a large lined baking sheet.
  • Slice 1 serrano pepper in half and set it on the baking sheet with the tomatillos, skin sides up.
  • Roast the tomatillos and serrano pepper at 425 degrees F. for 15 minutes, or until the tomatillos begin to char slightly. The skins will darken.
  • Remove and transfer to a food processor or blender.
  • Add the remaining ingredients and process until smooth. Adjust for salt and serve. Or, refrigerate in a sealed container to let the flavors mingle. Great with tortilla chips!

6 tomatillos (husked and washed. About 2 cups.)
3 tablespoon of chopped onion
1 clove of garlic
2 or 3 serranos peppers (if using Jalapeño peppers use 1)
Salt to taste
About 3 cups of water to cook the tomatoes and peppers.
4 tbsp Chopped Chilantro (Optional)

Steps:

  • In a saucepan, bring the water to a boil. Add the pepper and tomatillos, simmer, uncovered, for 12-15 minutes.
  • Drain, reserving 1/4 cup water of the liquid.
  • In a blender, puree the peppers, tomatillos, garlic and chopped onion, the cilantro if using, then add the reserved liquid if needed to get a saucier texture.
  • Transfer to a bowl and add salt to taste.

1 1/2 lbs 97% fat free ground beef
1/2 cup green tomatillo salsa
2 large eggs
1 (8 ounce) can diced green chilies
1 (8 ounce) can sliced black olives
1 cup plain breadcrumbs
1 teaspoon ground Mexican oregano
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 cup Cotija cheese (or other Mexican cheese, Cotija is a crumbly cheese with a distinct flavor)

Steps:

  • Preheat oven to 350.
  • Combine Ground Beef with eggs and a good amount of the Salsa. Start at about ½ a cup and add more as desired. Add green chiles & olives. Add about a teaspoon each of spices or more if desired. Add enough bread crumbs until meat mixture sticks together. Crumble in cheese as desired.
  • Grease pan as desired, form loaf in pan. Bake at 350 for 45 mins, and then check for doneness. Depending on your oven and how you shape the loaf this could take another 15-20 minutes.

1 lb tomatillo, husks removed and rinsed
3 serrano chilies, finely chopped
1/2 cup cilantro, roughly chopped and loosely packed
2 tablespoons cilantro, roughly chopped for garnish
1 garlic clove, roughly chopped
2 tablespoons white onions, roughly chopped
sea salt

Steps:

  • Put the tomatillos whole in a small saucepan, barely cover with water, and bring to a simmer. lower the heat and continue cooking until soft but not falling apart, about 5 minutes depending on size. Drain, reserving the cooking water.
  • Using a molcajete: Mash and grind together the chiles, 1/2 cup cilantro, the garlic, onion, and salt. Add the tomatillos a few at a time, crushing and grinding well after each addition and adding a little of the cooking liquid until you have a textured sauce of medium consistency. You will probably need about 1/2 cup or even more of the cooking liquid.
  • Using a blender: Put 1/3 cup of the cooking water into the blender jar. Add the chiles, 1/2 cup cilantro, the garlic, and the onion and grind to a paste. Add the tomatillos a little at a time, blending with about 1/3 cup more of the cooking liquid until you have a textured sauce of medium consistency. Add salt to taste.
  • To serve: Sprinkle the top with the extra cilantro.

You will want cracklins from pork, duck or goose to make this recipe. You can buy them in Latin markets, in Cajun markets and in some specialty markets, but mostly you will make this recipe after rendering some lard or duck fat yourself.

1 recipe salsa verde ((see notes))
4 tablespoons chopped cilantro
1/2 cup diced white onions
1/4 cup lime juice
Cotija cheese, crumbled, for garnish
18 corn tortillas

Steps:

  • Pour your salsa over the cracklins in a pot, cover the pot and bring to a simmer for 20 minutes. You might need to add a little water or stock to keep it from sticking. You want the mixture to be stiff enough to not splooge out of a taco, though. You can cook your cracklins for more than 20 minutes if you want a softer texture.
  • Heat up your tortillas and make your tacos! Top with cilantro, the onions soaked in the lime juice and cotija cheese.

  • Simmer tomatillos in water for 20-30 minutes on each side, until very soft, on very low heat
  • Place ingredients in blender, starting with 1 cup of water; puree until desired consistency is achieved, adding more water and salt, as needed

  • Place tomatillos in a large saucepan, and cover with water. Bring to a boil, and reduce heat to simmer until tomatillos have softened but not burst, about 5 minutes. Reserve 1 cup cooking liquid. Strain tomatillos through a fine sieve.
  • Puree tomatillos, onion, garlic, chiles, 2 teaspoons salt, and 1/2 cup reserved cooking liquid in a blender or food processor until smooth. For a thinner consistency, add remaining cooking liquid. Season with salt to taste.

Steps:

  • Preheat oven to 425°F.
  • Rinse and dry the tomatillos. Then spread the tomatillos out evenly on a baking sheet (I recommend lining it with foil for easy cleanup), along with the serrano pepper. Roast in the oven for 15 minutes, or until the tomatillos start to brown on top and are cooked through.
  • Remove from the oven, and transfer the tomatillos and serrano pepper to a blender or food processor. Add the garlic, cilantro, onion, lime juice, salt, and cumin (if using) to the blender or food processor, and pulse the mixture until it reaches your desired consistency. (Always be careful when blending hot mixtures, as they expand while blending.) Taste and season with extra salt and/or cilantro if needed.
  • Serve immediately, or refrigerate in a sealed container for up to 5 days.

Simmer at medium for about 10 minutes, or until tomatillos change their color from a bright to a pale green, are cooked through and are soft but are not coming apart.
