PEACH CRANBERRY YAM BAKE

Steps:
- 1. In a large bowl, mix the candied yams and the peaches. Blend the cranberry sauce with the reserved syrup, from yams. Drizzle over yams and peaches. Add nuts; gently toss ingredients to mix well.
- 2. Spoon mixture evenly into a 9 x 13 inch baking dish. Bake uncovered at 350 for 25 to 30 minutes or microwave uncovered on high for 10 to 15 minutes or til hot and bubbly. Garnish with parsley sprigs as desired. Serves 8
CRANBERRY PEACH CRISP
Have a taste for a fruit crisp but don't have time to make it from scratch? This clever recipe simply combines canned peaches and cranberry sauce with a cookie crumb topping for a sweet crunchy treat.

- Arrange peaches in a greased shallow 2-qt. baking dish. Stir cranberry sauce and pour over peaches. In a small bowl, combine the brown sugar, flour, cookie crumbs and nuts; sprinkle over fruit. Drizzle with butter. Bake, uncovered, at 400° for 18-20 minutes or until bubbly.

SOUTHERN PEACH YAM BAKE
This is a recipe I concocted myself. I've also used pineapple chunks in place of the peaches. Watch carefully once you top with the marshmallows.....they burn easily. Remove from oven once they start to expand and lightly brown.

- Add nuts (see note).
- Arrange yams and peaches in casserole; sprinkle w/sugar mixture.
- Pour some of the peach juice and yam juice around yams (about 1/2 to 1 cup).
- Bake@ 350 degrees, 35 minutes.
- Sprinkle w/mini mallows.
- Broil till lightly browned.
- Note:** I double the recipe for the topping, ingredients 1 to 4 only, but if you like additional nuts, add more.

SWEET POTATO PEACH BAKE
Peaches and sweet potatoes complement each other so well in this Sweet Potato Peach Bake. This sweet and delicious casserole is perfect for the holidays, and can be dressed up with marshmallows or peach preserves.

- Heat oven to 350 degrees F.
- Place Bruce's® Yams Cut Sweet Potatoes in a bowl and cut into slightly smaller pieces.
- Drain the peaches (reserving 4-5 slices for the top of the casserole) and add to the yams along with 1/2 cup peach juice, ground ginger, salt and pepper; stir to mix.
- Transfer to a 2 quart baking dish; set aside.
- In a separate bowl, stir together the brown sugar and pecans.
- Sprinkle over top of casserole and place reserved peach slices in a line down the center.
- Bake for 35-40 minutes until hot and bubbly.

SWEET POTATO CRANBERRY BAKE
My father's mother made this every year for our Thanksgiving dinner. It is not Thanksgiving to me without this dish. I do not like the tartness of most cranberry dishes, and sweet potatoes can be bland by themselves. This dish combines both to make a great all-in-one dish. When I take this dish to another person's home, I bake the first time and add the yams, cover, and then wait to heat until I am at their house.

- Preheat oven to 375 degrees F (190 degrees C).
- Combine cranberries, orange slices, sugar, pecans, orange juice, cinnamon, nutmeg, and mace in a 2-quart baking dish.
- Bake in preheated oven until cranberries soften, about 30 minutes. Stir yams into cranberry mixture and continue baking until heated through, about 15 minutes more.

CANDIED YAMS WITH CRANBERRIES
This is a delicious variation on candied yams. The fresh cranberries add a slight tartness that cuts down on the sweetness characteristic of traditional candied yams. This recipe was taken from a bag of miniature marshmallows many years ago and I recently re-discovered it. Hope you like it as much as I do!

- Preheat oven to 350*.
- Mix together flour, brown sugar, oats, and cinnamon; cut in butter.
- In large bowl, toss half of the crumb mixture with the yams and cranberry sauce and arrange in casserole dish.

- Bake for 35 minutes.
- Place marshmallows on top and put under broiler until marshmallows are golden brown and toasty.

PEACHY CRANBERRY PIE
Rich beautiful color and wonderful taste. Can be made any time of year using frozen cranberries but, of course, it's perfect at the holidays. For ZWT this is Northeastern/Midwestern States regional.

- Preheat oven to 375°F Drain peach slices, reserving 1/2 cup syrup. Cut the peach slices crosswise into thirds; set aside. In a large saucepan, combine reserved syrup and cranberries. Bring to boiling; reduce heat to medium. Cook, uncovered, until the cranberry skins pop, stirring occasionally (about 2 minutes).
- In a small bowl, stir together sugar and cornstarch. Add sugar mixture to the cranberry mixture. Cook and stir until thickened and bubbly. Remove from heat; stir in the peaches. Set aside and keep warm.
- In a medium bowl, stir together flour and salt. Using a pastry blender, cut in shortening until pieces are pea-size. Sprinkle 1 tablespoon of the water over part of the mixture; gently toss with a fork. Push moistened dough to side of the bowl. Repeat moistening dough, using 1 tablespoon of the water at a time, until the dough is moistened. Divide in half. Form each half into a ball.
- On a lightly floured surface, flatten one dough ball. Roll from center to edges into a 12-inch circle. To transfer pastry, wrap it around the rolling pin; unroll into a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch pastry. Trim bottom pastry to 1/2 inch beyond edge of pie plate.
- Roll out remaining pastry to a 12-inch circle and cut into 1/2-inch-wide strips. Fill pastry-lined pie plate with cranberry mixture. Lay half of the pastry strips 1/2 inch apart on top of the filling. Arrange remaining strips 1/2 inch apart on top of the first strips in a diamond-shaped pattern. Trim ends of strips even with edge of bottom pastry. Press ends of strips into crust rim. Fold edge of bottom pastry over edge of strips; seal and crimp edge as desired.
- Bake for 40 to 45 minutes or until filling is bubbly and pastry is golden brown. Cool on a wire rack at least 2 hours. Serve warm, or to store, cover and let stand at room temperature for up to 24 hours.

BERRY MALLOW YAM BAKE
My Yam Bake has become a holiday tradition in our family. The blend of cranberries and sweet potatoes in this recipe results in a very pretty appearance-and a unique taste. I grew up on a small Arkansas farm in the foothills of the Ozarks. Both my mother and father are excellent cooks, and I've been cooking since I was a little girl. Pour reserved yam liquid over all. , Bake at 350° for 35 minutes or until heated through. If desired, place several rings of marshmallows around the outer edge of baking dish. Bake just until marshmallows are puffed and lightly browned.
