I'm feeling quite proud of myself here as I kind of (literally only just) invented this (ok, ok - I was inspired by the nicest Peshwari Naan I've had in ages!), but this really works as a loaf. It's gorgeously light and fluffy, absolutely huge considering it doesn't require all that much flour and has a wonderful sweet taste that could even be used with (certain) savoury foods and types of meat as well as just butter or honeys or fruit preserves. Perhaps using part coconut milk instead of some of the water would be even nicer but I was being stingy and didn't want to open the can :) This one is just begging to be made again - I got so many compliments about this bread - even from a friend who doesn't like coconut much who said I was onto a winner! It's just SO nice!

240 ml water (at room temerature)
350 g white bread flour
15 g honey
11 g desiccated coconut (About 1 1/2 Tablespoons)
1/4 teaspoon vitamin C powder (optional)
1 teaspoon salt
15 g nonfat dry milk powder (1 Tablespoon, heaped)
5 g butter (or for creamier taste just use 13g of Butter and omit the margarine)
8 g firm margarine
3 3/4 g bread machine yeast (1 Tsp slightly heaped)
65 g sultanas (or Raisins- untested)
1 dash cardamom (optional)

Steps:

  • Weigh the main ingredients into the bread machine and select Raisin or Speciality Bread and preferred Crust type - I chose normal crust which worked nicely - and start the machine.
  • At the beep, if you trust your machine not to mash up the fruit like mine always does, add the sultanas with just an incredibly light dusting of cardamom (or omit it if you don't like cardamom). For my machine I ignored the beep and waited until just over 3 minutes remained of the 2nd knead cycle and that worked great - guess it depends how squishy your sultanas are :).
  • Cool on a wire rack.
  • Makes a loaf just under 1 1/2 Lb which you won't be able to stop eating!
  • Cooking time listed is the baking time for my machine.

3/4 cup milk
1/4 cup molasses
1 egg
3 tablespoons butter
3 1/3 cups bread flour
1 tablespoon brown sugar
3/4 teaspoon salt
3/4 teaspoon cinnamon
3/4 teaspoon ginger
2 1/4 teaspoons active dry yeast
1/3 cup raisins

Steps:

  • Put ingredients into bread machine in order listed, except the raisins. Leave those aside.
  • Set machine for 2 pound loaf, white bread, light crust.
  • Add raisins when the machine tells you to. (It should beep -- if it starts talking to you, you've got some real problems.).
  • Note: I used dried fruits not just raisins and found they added a little too much moisture because I soaked them. During the second rise I added a little more flour until the dough no longer stuck to the side of the pan.

This is our everyday bread that we use for sandwiches and toast. It's dairy and egg free which makes it a favorite of mine - this also makes it safe to use the bread machine timer. This recipe makes a 2 pound loaf, but you can easily halve it for smaller machines.

2 1/4 teaspoons yeast
4 cups bread flour
1 1/3 teaspoons sugar
1 1/2 teaspoons salt

  • Add ingredients in the order listed to your bread machine, or follow the manufacturers directions for adding ingredients.
  • Choose the basic cycle with regular or light crust. Rapid cycle will work, too.

This is the basic recipe for a loaf that came with the bread mix I buy. I sometimes find, depending on the weather, that I need to add a little bit more water, but I suggest only adding 1 tbs at a time, or you may quickly find it is too wet! If you wish to make this recipe a bit healthier, try using 3 cups of bread mix and top up with psyllium husk, but keep an eye on the dough ball to make sure it's mixed properly. (servings listed are for 2 slices ie. a sandwich!)

1 1/2 cups warm water
3 1/2 cups white bread mix (or 3 cups bread mix, and 1/2 cup of psyllium husk)
2 tablespoons oil
1 1/2 teaspoons yeast, rounded

Steps:

  • Add ingredients in the order the manufacturer of your particular bread machine tells you to.
  • Make sure the water is warm, not hot, as it will kill the yeast, and not cold as the yeast will take much longer to make the bread rise.
  • As the bread is mixing, make sure it mixes together to form a cohesive, slightly 'tacky' ball. If it is too dry, try adding an extra 1 tbs of water at a time until it looks right. If too wet, add 1 tbs of bread mix or flour at a time.

This came from my bread machine recipe book. I have made it a number of times and it comes out lovely. Fantastic as a breakfast toasted and buttered! Yum! I have altered the recipe slightly so that it is compatible with all of you. An Australian tablespoon = 4 tsp (20ml), so I have converted all measurements to teaspoons to avoid confusion. If you have a sweet bread cycle I'd recommend using that, but otherwise I'm pretty sure ordinary would work fine. I have frozen slices in plastic bags, so I always have some on hand if I get a craving. Nutella makes a good spread for this.

270 ml water
6 teaspoons butter or 6 teaspoons oil
1 1/2 teaspoons salt
6 teaspoons brown sugar
450 g white bread flour (3 cups)
6 teaspoons powdered milk
3 teaspoons ground mixed spice
2 teaspoons yeast
1/2 cup mixed dried fruit (I use sultanas and raisins, but you could use commercial mixed fruit or currants)
3 tablespoons water (optional)
6 teaspoons sugar (optional)
3 teaspoons gelatin (optional)

Steps:

  • Put all of the ingredients except the fruit in the order recommended by your manufacturer.
  • If you have a nuts dispenser place the fruit in there.
  • Otherwise add the fruit when the 2nd knead has 8 minutes to go.
  • If using the glaze, combine glaze ingredients in a small saucepan over a heat until the sugar and gelatine has dissolved.
  • Use the pause function if you have one, at fifteen minutes into the baking cycle, brush glaze over loaf.
