3 onions, sliced
6 lamb shanks
1 28 oz can tomatoes
3 teaspoons oregano
Salt
Pepper
2 cups orzo
2 cups hot chicken stock

Steps:

  • Preheat oven to 375 degrees. In large roasting pan drizzle oil and add onions. Place lamb shanks in pan. Cover with tin foil and roast for 20 minutes. Remove from oven and add tomatoes, oregano, a dash of salt and pepper. Toss ingredients to combine. Cover and roast for another 20 minutes. Remove from oven. Add orzo and heated stock. Cover and roast for another 20 minutes. Serve hot.

1 cup all-purpose flour
Kosher salt and freshly ground black pepper
4 lamb shanks (1 to 1 1/2 pounds each)
Grapeseed oil
2 tablespoons good olive oil
3 cups chopped yellow onions (2 to 3 onions)
2 cups medium-diced carrots (4 to 5 carrots)
2 cups medium-diced celery (3 stalks)
1 tablespoon minced fresh rosemary leaves
3 large garlic cloves, minced
2 (14.5-ounce) cans diced tomatoes, including the liquid
2 cups canned beef broth
1 1/2 cups dry white wine, plus extra for serving
2 bay leaves
2 cups orzo

Steps:

  • Preheat the oven to 325 degrees.
  • Combine the flour, 2 teaspoons salt, and 1 teaspoon pepper in a bowl and dredge the lamb shanks in the mixture, shaking off the excess. In a large (13-inch) Dutch oven such as Le Creuset, heat 3 tablespoons of the grapeseed oil over medium-high heat. Add 2 lamb shanks and cook for 10 minutes, turning every few minutes, until browned on all sides. Transfer the shanks to a plate, add more grapeseed oil, and brown the remaining 2 shanks.
  • Wipe out the Dutch oven with a paper towel, add the olive oil, and heat over medium to medium-high heat. Add the onions, carrots, celery, and rosemary and cook for 8 to 10 minutes, until the vegetables are tender. Add the garlic and cook 1 more minute. Add the tomatoes, beef broth, wine, 4 teaspoons salt, and 2 teaspoons pepper. Add the lamb shanks, arranging them so they're almost completely submerged in the liquid. Tuck in the bay leaves and bring to a simmer on top of the stove. Cover the pot and place it in the oven for 2 hours, turning the shanks once while they cook.
  • Stir in the orzo and return the lamb shanks to the oven for 20 to 30 minutes, until the orzo is cooked and the lamb shanks are very tender. Discard the bay leaves, stir in 2 to 3 tablespoons of white wine, and taste the orzo for seasonings. Serve hot.

Steps:

  • Peel and dice the red onion, then fry in a hot pan with the oil for a few minutes.
  • Crush the garlic and add to the red onion with the oregano, cinnamon and lamb mince to brown for a few minutes. Add the chopped tomatoes and lamb stock, then simmer for half an hour.
  • Pour in the orzo and let it simmer for about 8 minutes so that the orzo is only just cooked.
  • Divide the pasta into 4 bowls, crumble over the feta and parsley and serve immediately with some garlic breadsticks.

Hearty and aromatic, this braised lamb dish, adapted from my mother, Annette Gertner, takes inspiration from the Middle East by way of Eastern Europe. It simmers mostly unattended and even benefits from being made earlier in the day - or even a day or two in advance - and reheated. The four shanks yield four copious portions. (The recipe will serve six if every guest does not insist on having a bone.) Orzo alongside will sop up the sauce.

4 small-to-medium lamb shanks (3 to 3 1/2 pounds), excess fat and silver skin removed
2 tablespoons extra-virgin olive oil
Salt and ground black pepper
1 large green bell pepper, cored, ribs removed, cut in 1/2-inch strips
1 large red bell pepper, cored, ribs removed, cut in 1/2-inch strips
4 small yellow onions (about 1 pound), peeled and quartered vertically
3 large garlic cloves, smashed
1 teaspoon dill seed, crushed in a mortar
1 teaspoon paprika, preferably Hungarian
1/2 teaspoon ground cinnamon
1 cup chicken stock
1/2 cup dry red wine
3 tablespoons tomato paste
1 tablespoon dried oregano
3 tablespoons lemon juice
2 tablespoons minced fresh dill

Steps:

  • Pat dry lamb shanks. In a heavy casserole or Dutch oven that will hold all the shanks, heat oil on medium-high. Add lamb shanks and brown on all sides, about 10 minutes. Remove to a platter. Season with salt and pepper. Reduce heat to medium-low.
  • Add bell peppers and onions to the pan. Sauté, stirring, until the vegetables wilt and just begin to color, 5 to 6 minutes. Add garlic, dill seed, paprika and cinnamon. Stir. Add stock and wine. Bring to a simmer. Stir in tomato paste and oregano. Season with salt and pepper. Stir in lemon juice. Return lamb shanks to the pot along with any juices on the platter. Cover them with a piece of parchment or waxed paper, cover pot with lid, reduce heat to very low and cook about 2 hours, basting the shanks occasionally and turning them at least once until the meat is very tender when pierced with a knife.
  • Remove shanks from the pot. Increase heat to medium and reduce sauce by about a third, about 10 minutes. Taste and season with salt and pepper as needed. Return shanks to the pot, baste and reheat. Serve directly from the casserole or transfer to a serving dish. Strew with fresh dill before serving.

Lamb shanks are a great meat for novice pressure cookers. The lamb is a great cut of meat with a rich flavor. With traditional cooking, you are looking at a good 2 hours, with the Pressure Cooker just 30 minutes!! The recipe comes from "The New Pressure Cooker Cookbook by Pat Dailey, a great book. Honestly, I didn't taste the garlic that much, not sure whether to add more, or give the garlic cloves a chop or two. I did use port, but I imagine you could substitute a heavy red wine. I served with orzo pasta mixed with green peas. This recipe is for 2, but it would be easy to make for 4 or 6 depending on the size of your PC, just brown them in in a large frying/sauté pan. Enjoy!

2 lbs lamb shanks
salt, to taste
pepper, to taste
1 tablespoon olive oil
10 garlic cloves, peeled and left whole
1/2 cup chicken stock (or other broth)
1/2 cup port wine
1 tablespoon tomato paste
1/2 teaspoon dried rosemary
1 tablespoon unsalted butter
1 teaspoon balsamic vinegar (up to 2 teaspoons)

Steps:

  • Trim excess fat from the lamb shanks and season with salt and pepper. (I admit I like fat on my meat, and the lamb isn't that fatty, so I didn't trim my shanks).
  • Heat the oil in the PC. Add the shanks and brown on all sides. (You can do this in a separate pan if you like).
  • When the shanks are almost completely browned, add the garlic cloves and cook until they are lightly browned but not burned.
  • Add the stock, port, tomato paste, and rosemary, stirring so the tomato paste dissolves.
  • Close the PC and bring up to full pressure (15 pounds).
  • Reduce heat to stabilize pressure and cook for 30 minutes.
  • Remove PC from heat and let pressure release naturally.
  • Remove the lamb shanks.
  • Return pan to heat and boil the liquid, uncovered, for 5 minutes to reduce and thicken the sauce.
  • Whisk in the butter, then add the vinegar.
  • Serve the sauce over the lamb.
  • Enjoy!

7 cups water
1 14 1/2-ounce can chicken broth
3 pounds lamb shanks
1 carrot, chopped
1 onion, chopped
1 celery stalk, chopped
1 bay leaf
3 tablespoons olive oil
1 small onion, sliced
3/4 cup (about 5 ounces) orzo (rice-shaped pasta)*
1 pound fresh spinach, chopped or 1 10-ounce package frozen chopped spinach, thawed
Freshly grated Parmesan cheese
*Available at Italian markets, specialty foods stores and many supermarkets.

Steps:

  • Bring water and chicken broth to boil in heavy large saucepan or Dutch oven over high heat. Add lamb shanks, carrot, chopped onion, celery and bay leaf and bring to boil. Reduce heat and simmer until lamb is tender, about 1 hour 20 minutes. Transfer lamb to plate and cool slightly. Remove meat from bone and cut into 1/2-inch pieces. Strain cooking liquid and reserve.
  • In same pot, heat olive oil over medium heat. Add sliced onion and sauté until tender, about 6 minutes. Add reserved cooking liquid, lamb meat and orzo. Cook soup over medium heat until orzo is tender but still firm to bite, about 20 minutes. Add spinach to soup and cook until wilted, about 2 minutes. Season soup to taste with salt and pepper. (Soup can be prepared 1 day ahead. Cover and refrigerate. Bring soup to simmer before serving.) Ladle soup into bowls. Serve, passing grated Parmesan cheese separately.

1 lb boneless lean lamb, cut into 3/4" cubes
1 cup chopped onion
1 clove garlic, minced
3/4 cup white wine or 3/4 cup chicken broth
1 1/2 teaspoons snipped fresh oregano or 1/2 teaspoon dried oregano, crushed
1 teaspoon finely-shredded lemon, rind of
1/4 teaspoon salt
1/4 teaspoon pepper
6 medium fresh artichokes, trimmed,halved,and blanched or 1 (9 ounce) can artichoke hearts
8 ounces orzo pasta (1-1/3 cups)
1 beaten egg
2 tablespoons lemon juice
1 tablespoon cornstarch
1/2 cup warm chicken broth
2 tablespoons snipped fresh parsley (optional)

Steps:

  • In a Dutch oven or large skillet heat the oil and brown the meat with onion and garlic till onion is tender.
  • Drain fat from the meat and return the meat to pan.
  • Add 3/4 cup wine or chicken broth, oregano, lemon peel, salt, and pepper.
  • Bring to a boil, reduce heat, and cover.
  • Simmer for 20 minutes.
  • Add fresh or canned artichokes and simmer 10 minutes more, or till tender.
  • Meanwhile, in a large saucepan or pasta pot bring 3 quarts water to boiling.
  • Add pasta and reduce heat slightly.
  • Boil for 5-8 minutes stirring occasionally.
  • Immediately drain and return to warm pan; keep warm.
  • In a small mixing bowl combine egg, lemon juice, cornstarch, and 1/2 cup warm chicken broth.
  • Pour egg mixture into the lamb-artichoke mixture.
  • Cook and stir over medium heat for 1 minute, or till thickened and bubbly.
  • Cook and stir for 2 minutes more.
  • Serve lamb mixture over hot cooked pasta.
  • Garnish with parsley (optional).

1kg shoulder of lamb
2 onions, sliced
1 tbsp chopped oregano, or 1 tsp dried
½ tsp ground cinnamon
2 cinnamon sticks, broken in half
2 tbsp olive oil
400g can chopped tomato
1.2l hot low-sodium chicken or vegetable stock
400g orzo (see know-how below)
freshly grated parmesan, to serve

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Cut the lamb into 4cm chunks, then spread over the base of a large, wide casserole dish. Add the onions, oregano, cinnamon sticks, ground cinnamon and olive oil, then stir well. Bake, uncovered, for 45 mins, stirring halfway.
  • Pour over the chopped tomatoes and stock, cover tightly, then return to the oven for 1½ hrs, until the lamb is very tender.
  • Remove the cinnamon sticks, then stir in the orzo. Cover again, then cook for a further 20 mins, stirring halfway through. The orzo should be cooked and the sauce thickened. Sprinkle with grated Parmesan and serve with crusty bread.
