8 rashers of bacon
24 large green olives, stuffed with pimento
(toothpicks)

Steps:

  • Preheat oven to 400º F (205ºC)
  • Cut rashers of bacon into thirds.
  • Wrap one third of bacon rasher around olive and secure with toothpick.
  • Next, place on foil lined tray or pyrex dish.
  • Bake for about 10 minutes, turn the olives, and bake another 8 to 10 minutes or so, or until the bacon is starting to brown and is cooked. Serve hot or warm.

10 slices white bread, crusts trimmed
1 (16 ounce) jar processed cheese sauce
1 (5 ounce) jar pitted green olives, chopped
1 pound sliced bacon, cut in half

Steps:

  • Preheat the broiler
  • Cut bread into thirds. Spread each third with processed cheese sauce. Sprinkle with olives. Roll thirds jelly-roll fashion. Wrap each with half a strip of bacon, securing with toothpicks. Arrange wrapped bread rolls in a single layer on a large baking sheet.
  • Broil, checking frequently, until bacon is evenly browned and has reached desired crispness, about 5 minutes.

  • Wrap each olive with a piece of bacon and secure with a toothpick.

  • With the rack in the middle position, preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.

  • Taste the olives that you’re using to make sure they are not too salty. (Oil-packed olives are usually less salty.) If they are salty, or if they were packed in brine, rinse the olives well, or soak them in water for up to 4 hours to remove some of the salt.
