1/2 cup sour cream
1/4 cup picante sauce
2 tablespoons taco seasoning
Dash garlic powder
1 can (4-1/2 ounces) chopped ripe olives, drained
1 can (4 ounces) chopped green chiles
1 cup finely shredded cheddar cheese
1/2 cup thinly sliced green onions
8 flour tortillas (10 inches)
Salsa

Steps:

  • In a small bowl, beat cream cheese, sour cream, picante sauce, taco seasoning and garlic powder until smooth. Stir in olives, chiles, cheese and onions. Spread about 1/2 cup on each tortilla. , Roll up jelly-roll style; wrap. Refrigerate for 2 hours or overnight. Slice into 1-in. pieces. Serve with salsa.

Can't decide between lasagna and enchiladas? No problem -- these easy enchilada-inspired roll-ups showcase the best of both worlds. Tender lasagna noodles stand in for corn tortillas and the creamy chicken filling is a snap to make.

Kosher salt
12 lasagna noodles
2 cups finely shredded rotisserie chicken (skin and bones discarded)
1/4 cup sliced pickled jalapenos, chopped
1 tablespoon chili powder
1/2 teaspoon ground cumin
2 cloves garlic, thinly sliced
2 cups shredded Mexican blend cheese
Two 10-ounce jars enchilada sauce
1/3 cup sour cream
4 scallions, sliced, white and green parts separated

Steps:

  • Preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil over high heat. Cook the lasagna noodles, stirring occasionally, 1 minute longer than the package directs for al dente. The pasta should be tender enough so that it will roll without cracking. Drain well and rinse with cold water. Lay in a single layer on a baking sheet.
  • Meanwhile, combine the chicken, jalapenos, chili powder, cumin, garlic, 1 cup cheese, 1/2 cup enchilada sauce, 1 tablespoon sour cream and the scallion whites in a large bowl until well combined.
  • Spread 1/4 cup of the enchilada sauce on to the bottom of a 13-by-9-inch baking dish. Lay half the cooked lasagna noodles on a clean work surface and spread a scant 1/4 cup of the chicken mixture over a noodle, covering it entirely. Starting with the short end, roll the noodle up. Transfer to the prepared baking dish seam-side down. Repeat with the remaining noodles and chicken mixture. Pour the remaining enchilada sauce over the lasagna rolls, then sprinkle with the remaining 1 cup cheese. Cover with foil and bake until the rolls are heated through and the sauce is bubbly, about 20 minutes. Remove the foil and bake until the cheese is browned on top, about 10 minutes. Let stand for 5 minutes.
  • Stir 2 tablespoons water into the remaining sour cream and drizzle over the top of the noodles. Sprinkle with the scallion greens.

  • Beat the egg with 1 tbsp water. Heat the oil in a medium non-stick pan. Add the egg and swirl round the base of the pan, as though you are making a pancake, and cook until set. There is no need to turn it.
  • Carefully tip the pancake onto a board, spread with the salsa, sprinkle with the coriander, then roll it up. It can be eaten warm or cold - you can keep it for 2 days in the fridge.

I am requested to make these all the time. They are easy, and people LOVE them. I developed this over the years to suit our tastes. There are recipes close to this one, but I like mine best! The amount of tortillas you need will depend on how thick you spread the mixture. I like them thick. Zaar wont let me list the chilies, olives and pimentos correctly. But I buy the small can of each. They are already chopped small, so they mix in well with the cream cheese.

32 burrito-size flour tortillas
4 (8 ounce) packages cream cheese
1/4 cup salsa
2 tablespoons taco seasoning
4 ounces diced green chilies
4 ounces black olives, chopped
4 ounces diced pimentos

Steps:

  • In a large bowl with an electric mixer cream the cream cheese until smooth.
  • Add the salsa, taco seasoning, green chilies, black olives and pimentos (drained well).
  • Mix well with a spoon.
  • Spread the mixture on the flour tortillas.
  • I use about 1/4 to 1/3 cup for each tortilla.
  • Cut in 1 inch slices and serve with additional salsa to dip into.

1/4 lb jennie-o turkey store extra lean ground turkey or 1/4 lb extra lean ground beef
1 (7 1/2 inch) low-carb whole wheat tortillas
1 tablespoon nonfat sour cream
1/3 cup shredded romaine lettuce leaf
1/3 cup seeded chopped tomato
2 tablespoons salsa

Steps:

  • Place a small nonstick skillet on medium-high heat until it is hot enough for a spritz of water to sizzle on it. With an oven mitt, briefly remove the pan from the heat to mist lightly with oil spray. Add the turkey or beef to the pan. Cook, breaking into chunks with a wooden spoon for 3 to 4 minutes, or until lightly browned and no longer pink. Transfer the turkey or beef to a plate. Cover to keep warm. Return the pan to medium heat. Place the tortilla in the pan. Cook for about 30 seconds per side, or until just warmed. Transfer to a serving plate.
  • Starting at one side, spread the sour cream evenly over two-thirds of the tortilla. Scatter the reserved turkey or beef over the sour cream. Top with the lettuce, tomato, and salsa. Starting at the filled end, roll the tortilla tightly into a tube, being careful not to tear it. Serve immediately.

1 (16 ounce) package lasagna noodles
1 pound ground beef
¾ cup water
1 (1 ounce) package hot taco seasoning mix
1 (1 pound) package shredded Mexican cheese blend, or as needed
1 (4 ounce) can sliced black olives
1 (28 ounce) jar spaghetti sauce
1 (8 ounce) jar taco sauce
¼ cup sour cream, or as desired

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Drain. Pat noodles dry with paper towels.
  • Cook and stir ground beef in a skillet over medium heat until browned and crumbly, about 10 minutes; drain excess grease. Stir water and taco seasoning mix into ground beef; cook and stir until thickened, about 2 minutes. Remove from heat and let meat cool.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Lay a noodle flat on a work surface and place 1 tablespoon seasoned meat at one end of noodle; roll up just to enclose meat filling. Place 1 to 2 tablespoons shredded Mexican cheese blend onto noodle and roll just to cover cheese; sprinkle a few black olives on noodle and roll noodle to the end. Repeat with remaining noodles.

6 leaves romaine lettuce
1 ¼ pounds sliced roast beef
1 cup chopped tomatoes
1 cup chopped red bell pepper

  • For each roll-up, tear off about a 15 inch piece of wax paper or aluminum foil. Place the tortilla on the paper or foil. Place a romaine lettuce leaf on top of the tortilla. I get asked to make these all the time, even though everyone at the office has this recipe. The recipe says to keep in fridge overnight to let flavor set in...I have yet to wait that long. They are just as good if left for an hour. Don't use shells that have been frozen and then unthawed or they may crack when trying to roll the wrap. Use flavored shells to really enchance the flavor. Prep time 30-40 min Refrigerate for 1 -24 hours

Number Of Ingredients 6

1 (4 ounce) can diced /chopped green chili peppers, drained (don't use the ones with jalapeno unless you like it really hot)
1 cup grated cheddar cheese
4 ounces chopped green olives
1 (8 ounce) package Philadelphia Cream Cheese (do not use the soft kind you would spread on a bagel.)
1 cup sour cream (don't add until the end)
5 10-inch flour tortillas

Steps:

  • Mix all the ingredients together except the sour cream.
  • Add sour cream at end just enough to mix it before spreading mixture on shells Spread filling on a flour tortilla and then roll up.
  • Wrap in saran wrap so its airtight and leave overnight for flavour to blend.
  • Cut into pinwheels and serve with salsa dip, garnish with fresh parsley Note: The amount of sour cream will vary depending on the brand of Cream Cheese.
  • If you stick with Philadelphia you shouldn't have a problem.
