Mantecadas - Sweet bread has a culture of its own in Mexico and is a tradition that has been embraced and deeply loved for generations. We have primarily Spain and France to thank for that, as their influence is why we have such a passion for sweet pastry.

Number Of Ingredients 11

2 large eggs
125 grams of sugar (½ cup + 1 tbs*)
½ cup milk
½ cup vegetable oil
1 tsp vanilla or orange essence**
1 tsp orange zest (optional)
125 grams of All Purpose flour (1 cup minus 1 tbs)
1 teaspoon baking powder
1 teaspoon instant yeast
1 pinch of salt
Bowls (whisk, measuring cups and spoons, muffin paper liners, muffin pan, pitcher or a ladle to pour the batter.)

Steps:

  • Preheat oven to 400F. Place muffin paper liners in muffin pan.
  • Sift together flour, baking powder and yeast in one medium size bowl, and set aside. Place egg and sugar in a large bowl and whisk until sugar has dissolved.
  • Add milk and the flavoring of your choice (vanilla, orange essence plus orange zest) and mix.
  • Incorporate the oil in a gentle stream and whisk again to form a homogenous mixture.
  • Slowly stir in the dry ingredients plus the pinch of salt, mixing gently until you have a very uniform batter. Do not over mix. Let the batter rest for 15 minutes.
  • With the help of a pitcher or a ladle, pour the batter into the already prepared muffin pan. Fill it up just a little bit bellow the edge. See picture above.
  • Carefully place in the preheated oven and bake for 20 minutes. Remove from oven and cool for about 5 minutes on a cooling rack. They keep well for 2 to 3 days when stored in an airtight container.

4 English muffins split in half (total of 8 half pieces)
1 link of 14 oz. package Supremo® Brand Pork Chorizo from V&V SUPREMO®
2 cups Shredded Chihuahua® Brand Quesadilla Cheese or Oaxaca Cheese from V&V SUPREMO®
4 large eggs
½ Tbsp. vegetable oil

Steps:

  • Place a non-stick skillet over medium heat for one minute. Add oil. Add eggs into skillet. Turn heat to low and cook eggs for 2-3 minutes on each side. Eggs should be cooked through (or done to your liking). Set eggs aside.; Preheat a medium skillet over medium heat for 1 minute. Remove the plastic casing from the Chorizo and cook for 10-12 minutes. Breaking up while it cooks. Set aside.; Place a non-stick pan or griddle over medium heat. Place the muffins to toast for 3 minutes on each side. Once done, remove the muffins from the pan and set aside.; In the same pan, add ¼ cup of cheese. When cheese starts to melt, add 1 Tbsp. of the chorizo on top.; Place one muffin half open face down on cheese and chorizo press down with your hand. Flip over with spatula and remove from pan.; Place one egg on each muffin half. Top each muffin with its other half. Repeat with the rest of the muffins. Serve and enjoy!

1 1/2 cups all-purpose flour
2/3 cup granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
2 cups mashed bananas (about 2 big bananas)
1 large egg
8 tablespoons (1 stick) unsalted butter, melted
1/4 cup whole milk
1 (3.5-ounce) disc Mexican chocolate, chopped
Special equipment: 1 (12-cup) nonstick muffin tin with 12 paper cupcake liners

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, mix the flour, sugar, baking powder and salt.
  • In a separate mixing bowl, combine the mashed bananas, egg, melted butter and milk until incorporated.
  • Stir the banana mixture into the dry ingredients just until blended (but do not over-mix as it could result in a tough muffin). Stir in the chopped Mexican chocolate.
  • Divide the batter among the prepared muffin cups, filling each about 3/4 full.
  • Bake the muffins until the tops are pale golden and a tester inserted into the center comes out with some melted chocolate attached but no crumbs, about 30 minutes.
  • Transfer the muffins to rack to cool for 15 minutes. Then remove from the muffin tins.

I use bacon, jalapeno pepper and a few other favorite items to put a different twist on a corn muffin mix. The moist bites complement a breakfast of scrambled eggs. They freeze well, too, but with my household of three guys, I can't keep them in the freezer for very long.

1 package (8-1/2 ounces) cornbread/muffin mix
1 large egg
1/3 cup milk
3/4 cup salsa
1 can (8-3/4 ounces) whole kernel corn, drained
1/2 cup shredded Mexican cheese blend or cheddar cheese
1/2 cup sour cream
3 bacon strips, cooked and crumbled
2 tablespoons chopped seeded jalapeno pepper

Steps:

  • In a bowl, combine cornbread mix, egg and milk just until blended. Stir in salsa, corn, cheese, sour cream, bacon and jalapeno. Fill greased or paper-lined muffin cups three-fourths full. , Bake at 400° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. 1 cup tomato sauce
2 teaspoons honey
1 tablespoon white vinegar
1 tablespoon Club House® Taco Seasoning
1 tablespoon olive oil
¼ cup yellow onion, minced
1 clove garlic, minced
2 lb lean ground beef
¼ cup bread crumbs
1 packet Club House® Taco Seasoning
2 large eggs, beaten
nonstick cooking spray, for greasing
12 small flour tortillas
guacamole
salsa
shredded cheese
sour cream

Steps:

  • Make the taco sauce: In a medium bowl, whisk together the tomato sauce, honey, vinegar, and Club House® Taco Seasoning until smooth. Set aside.
  • Make the meatloaf muffins: Preheat the oven to 180°C (350°F).
  • Heat olive oil in a medium pan over medium-high heat. Add the onion and sauté for 4-5 minutes, until softened and starting to brown. Add the garlic and sauté for another minute, until fragrant. Remove the pan from the heat.
  • Add the ground beef to a large bowl with the cooked onion and garlic, bread crumbs, Club House® Taco Seasoning, eggs, and ½ cup taco sauce. Mix until well combined.
  • Divide the beef mixture into 12 4-ounce balls.
  • Grease a muffin tin with nonstick spray. Gently press the tortillas into each muffin cup, making mini bowls. Place a meatloaf ball in each bowl and top each with 1 teaspoon taco sauce.
  • Bake the meatloaf muffins for 30 minutes, or until the internal temperature of the beef reaches 70°C (160°F). Let the muffins cool in the tin for 5 minutes.
  • Remove the muffins from the tin. Serve with guacamole, salsa, shredded cheese, and sour cream for topping.

1/8 teaspoon baking powder
3/4 cup flour
1 teaspoon vanilla extract
2 eggs
1/2 cup cooking oil
1/2 cup chocolate chips
1/2 chopped walnuts
1/4 cup confectioners' sugar

Steps:

  • Note on using lentils: If using canned lentils, drain first and omit salt; if using dry (my preference is dry red lentils) measure 1/3 cup rinsed lentils into saucepan, add 2/3 cup water and bring to boil; reduce heat and simmer 20 minutes (may need to add a small amount of water) cool and measure.
  • Mash lentils with a fork in mixing bowl.
  • Add eggs, oil, sugars, and vanilla extract to lentils.
  • Mix just to combine.
  • Mix flour, baking soda, baking powder, salt, cocoa and cinnamon in separate bowl.
  • Add dry mixture and blend until combined.
  • Fold in chocolate chips and walnuts.
  • Pour into greased muffin tins.
  • Bake at 350 degrees F for 20-25 minutes.
  • Let cool 10-15 minutes for easy turn out.
  • Dust tops with confectioners sugar.
