1/4 cup half-and-half
2 tablespoons onions, chopped fine

Steps:

  • Put all ingredients in a double boiler and heat on medium.

1 1/4 lbs white American cheese, cut into 1-inch cubes
1/4 cup diced green chilis
2 pickled jalapeno peppers, chopped
1 ounce pickled jalapeno juice
2/3 cup whole milk
1/2 cup cold water
cayenne pepper (optional)

Steps:

  • Toss all ingredients into a large microwave-safe bowl. Microwave on high for 5 minutes, stopping to stir after every minute. The mixture might seem watery during the first few stirs, but should come together as a nice runny dip after all the cheese is melted.
  • Serve immediately as a dip with tortilla chips or as a sauce over your favorite Mexican dish.
  • *Recipe Note: White American cheese is found at most deli counters in your local grocery store.

¼ cup butter
¼ cup all-purpose flour
2 cups whole milk
8 ounces monterey jack cheese (freshly grated)
8 ounces pepper jack cheese (freshly grated)
7 ounce can diced green chiles
1 teaspoon crushed red pepper flakes
½ teaspoon chili powder
½ teaspoon dried onion flakes
½ teaspoon garlic powder
¼ teaspoon salt
Garnish: sliced jalapenos, cilantro, diced tomatoes (optional)
Tortilla chips, for serving

Steps:

  • In a large saucepan over medium-low heat, melt the butter. Whisk in the flour and cook for 2 minutes or until lumpy.
  • Whisk in the milk and bring to a simmer (small bubbles). Continue to cook until slightly thickened.
  • Remove the pan from the heat source. Add the shredded monterey jack and pepper jack cheeses to the milk mixture and stir to melt.
  • Add the diced chiles, red pepper flakes, chili powder, minced onion, garlic powder, and salt. Mix one final time, garnish as desired, and serve warm.

12 ounces white American cheese, finely chopped into small squares
4 ounces good quality fontina or 4 ounces mozzarella cheese, shredded
1 cup half-and-half
2 tablespoons canned jalapenos, finely chopped
1 teaspoon chili powder or 1 teaspoon cumin
1/2 teaspoon ground nutmeg (optional)
1 teaspoon red pepper flakes
1/4 teaspoon salt
1/4 teaspoon black pepper
chopped cilantro, tomatoes, and jalapenos for garnish

Steps:

  • Heat 1/2 and 1/2 over medium/high heat in a small saucepan.
  • Once simmering (bring to JUST before boil -- when it starts bubbling up the sides it is ready), reduce heat to low.
  • Immediately stir in the cheese in batches, starting with the White American cheese, then fontina or mozzarella. As you stir in the cheese, increase heat to medium and whisk CONSTANTLY while the cheese melts. Once each batch is melted/creamy, add more. Don't stop stirring, you have to whisk the entire time while adding cheese.
  • Once all the cheese is melted, stir in the jalapenos, chili powder, nutmeg, red pepper, and salt and pepper.
  • Top with cilantro, tomatoes, and more jalapenos if desired.
  • Serve with tortilla chips.

In meantime, rinse and chop chipotle pepper. De-seed and mince serrano pepper. Take sour cream out in a small bowl and set aside. Pour milk in a microwave safe container and heat until lukewarm. Set aside.
  • On low-medium heat, in a wide skillet, add butter and let it melt. When butter just start to melt, swirl it around in hot pan to melt more and then sprinkle flour on top. Cook stirring often for 2-3 minutes. Don't let flour burn/brown. Flour should yield nutty aroma but almost no brown color. Now add milk and keep stirring quickly until milk is mixed with flour-butter mixture, and mixture starts to thicken. It takes another 3-4 minutes to thicken the sauce so that it coats back of a spoon.
  • Turn stove heat to lowest. Add all both grated cheeses, along with all three minced peppers, white pepper, salt, and lemon juice. Mix until cheese melts in the sauce. Now add sour cream and mix to incorporate into the queso. Take queso off heat. Taste and adjust salt/lemon juice. Pour on dip bowl and serve with chips of choice.
