1/4 cup sugar
4 teaspoons cornstarch
1/4 teaspoon salt
1-2/3 cups 1% milk
2 egg yolks, lightly beaten
3/4 teaspoon vanilla extract
3 cups mixed fresh berries

Steps:

  • In a small saucepan, combine the sugar, cornstarch and salt. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. , Stir a small amount of hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. , Gently stir in vanilla. Cool to room temperature without stirring. Transfer to a bowl; press plastic wrap onto surface of custard. Refrigerate for at least 1 hour. , Just before serving, spoon 1/4 cup of berries into each parfait glass; top with 2 tablespoons of custard. Repeat layers.

1 teaspoon Amaretto
1/2 teaspoon vanilla extract
1 cup sliced fresh strawberries
1 cup fresh raspberries
4 whole fresh strawberries

Steps:

  • In a large heavy saucepan, combine sugar, cornstarch and salt. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer., Remove from the heat. Stir a small amount of hot mixture into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Stir in the butter, Amaretto and vanilla. Cool to room temperature., Transfer custard to a small bowl; press waxed paper onto surface of custard. 1 (8 ounce) package cream cheese, softened
1/3-1/2 cup sugar
1 tablespoon lemon juice
6 cups blueberries (and or or cut-up mixed fruit) or 6 cups raspberries (and or or cut-up mixed fruit)
1 (3 3/4 ounce) package sliced butter toffee almonds
honey (optional)

Steps:

  • Remove and discard the rind from the Brie cheese. In a medium bowl beat Brie cheese, cream cheese, sugar, and lemon juice with an electric mixer on medium speed until almost smooth. Set aside.
  • Layer strawberries, cheese mixture, and almonds in eight parfait glasses or water goblets. If desired, drizzle with honey.
  • TO MAKE AHEAD:.
  • If you wish to make these parfaits ahead, do not use apples, pears, or peaches because the fruit will turn brown. Prepare the cheese mixture and fruit as directed.
