3 cans (15 ounces each) black beans, rinsed and drained
2 cans (14-1/2 ounces each) beef broth
1 can (14-1/2 ounces) diced tomatoes, undrained
1-1/2 cups cubed fully cooked ham
1 can (4 ounces) chopped green chilies
1/4 cup red wine vinegar
1 large onion, chopped
3 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon pepper

Steps:

  • In a 3-qt. slow cooker, combine all ingredients. Cover and cook on high for 4-5 hours or until onion is tender.

1 pound Italian sausage
2 smoked ham hocks
3 potatoes, peeled and cubed
3 stalks celery, chopped, with leaves
2 tablespoons dried parsley
3 (15 ounce) cans kidney beans
1 (15 ounce) can tomato sauce
2 (14.5 ounce) cans stewed tomatoes
2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon hot pepper sauce
2 bay leaves
1 teaspoon Worcestershire sauce
2 cloves crushed garlic

Steps:

  • Boil sausage to remove excess fat, and cut into bite-size pieces.
  • Skin ham hocks, and remove excess fat. In a large pot, brown sausage and ham hocks over medium heat. Drain off excess fat.
  • Add potatoes, celery, parsley, beans, tomato sauce, tomatoes, salt, pepper, chili sauce, bay leaves, garlic, and Worcestershire sauce to the meat; add just enough water to cover. Bring to boil, then reduce to simmer. Cover, and continue to cook for 2-3 hours.
  • Remove ham hocks and cut meat into bite-size pieces. Return meat to pot. Serve.

1 pound dry mayocoba beans
2 teaspoons vegetable oil
1 white onion, chopped
4 Roma (plum) tomatoes, chopped
1 serrano chile pepper, minced
½ pound bacon, chopped
2 thick slices fully cooked ham, cut into cubes
1 (12 fluid ounce) can or bottle Mexican beer
1 (7 ounce) can pickled jalapeno pepper slices, undrained
½ bunch fresh cilantro, chopped
1 tablespoon chicken bouillon granules
sea salt to taste

Steps:

  • Put mayocoba beans into a large container with enough cool water to cover by several inches. Let beans soak 8 hours to overnight.
  • Drain mayocoba beans and rinse thoroughly; put into a large stockpot. Pour enough water into the pot to cover beans by a few inches; bring to a boil, reduce heat to medium-low and place a cover on the pot, and cook at a simmer until beans are soft in the center, about 90 minutes.
  • While the beans simmer, heat oil in a large skillet over medium heat. Cook and stir onion in hot oil until tender, about 5 minutes; add tomatoes and serrano pepper and simmer until the tomatoes have softened slightly, about 5 minutes. Reduce heat to medium-low and continue cooking until the liquid begins to thicken, about 10 minutes more. Remove from heat.
  • Cook and stir bacon in a large, deep skillet over medium-high heat until very crispy, about 10 minutes; remove bacon from skillet with a slotted spoon and drain on a plate lined with paper towel.
  • Cook ham cubes in the bacon fat in the skillet until browned, about 5 minutes; remove with slotted spoon to the plate with the bacon to drain.
  • Once the beans have cooked, stir the tomato mixture, bacon, ham, beer, jalapeno peppers, cilantro, and chicken bouillon granules into the beans; season with sea salt. Bring the mixture to a simmer and cook until the beans are completely softened, about 30 minutes.

1 (16 ounce) package 15-bean soup mix
6 cups chicken stock
1 ham bone with some meat
1 cup chopped onion
1 cup chopped carrots
½ stalk celery, chopped
1 tablespoon chopped garlic
2 bay leaves
2 cups chopped ham
2 tablespoons liquid smoke flavoring
1 ½ tablespoons ground mustard powder
1 pinch salt and ground black pepper to taste

Steps:

  • Place bean mix into a large bowl and cover with several inches of water; soak for at least 24 hours. Drain completely.
  • Bring chicken stock to a boil in a pot large enough to hold the beans and, eventually, the ham bone. Add the soaked beans; reduce heat and simmer until tender, about 1 hour.
  • Bring stock and beans back to a boil. Add ham bone, onion, carrots, celery, garlic, and bay leaves. Reduce heat to low and simmer until vegetables are soft, about 1 hour. Add chopped ham, liquid smoke, and mustard powder. Stir and let simmer until flavors blend, about 30 minutes more.
  • Remove ham bone from the soup. Season with salt and pepper.

3 cups beans (great northern, pinto, black, navy, lentils - any or all)
3 ham hocks
8 ounces chopped kielbasa (, or other sausage, if you love meat)
10 cups water (vegetable, chicken, or beef) or 10 cups stock (vegetable, chicken, or beef)
2 medium chopped onions
2 tablespoons minced garlic
1 (28 ounce) can Italian tomatoes
1 tablespoon crushed red pepper flakes
1/2 teaspoon cayenne pepper (optional)
1 -2 tablespoon freshly ground black pepper
2 tablespoons parsley or 2 tablespoons oregano (or any combination of those herbs)
freshly squeezed, lemon, juice of
salt

Steps:

  • If you've got time, cover beans with water and soak, covered, overnight.
  • Otherwise, cover beans with water and bring to a boil for a few minutes, then bring the heat down to low and simmer for 30 minutes or so.
  • Drain (this helps cut down on any, uh, gas issues).
  • Cover again with water, stock, or a combination.
  • Add ham hocks and bring heat back to medium.
  • Simmer for an hour or until beans are softened and meat is coming off the bones.
  • Add water or stock as needed throughout cooking process.
  • Remove ham hocks and set aside to cool.
  • Add onions, tomatoes (with juice), garlic, spice, salt and sausage (if desired).
  • Remove meat from ham hocks, shred into small pieces, and add to soup.
  • Continue to simmer until beans are very soft.
  • and tomatoes have broken down.
  • Add lemon juice.
  • Add salt and pepper to taste.
  • Serve with crusty, rustic bread and a green salad.

Hearty ham and bean soup. Easy to make and a great way to use a leftover ham bone. This soup also has lots of mixed vegetables.

1 pound dry great Northern beans
8 cups water
½ teaspoon salt
1 ham hock
1 cup chopped carrots
½ stalk celery, chopped
1 cup chopped onion
1 teaspoon minced garlic
1 teaspoon mustard powder
2 bay leaves
2 cups chopped ham
½ teaspoon ground white pepper

Steps:

  • Rinse the beans, sorting out any broken or discolored ones. In a large pot over high heat, bring the water to a boil. Add the salt and the beans and remove from heat. Let beans sit in the hot water for at least 60 minutes.
  • After the 60 minutes of soaking, return the pot to high heat and place the ham bone, carrots, celery, onion, garlic, mustard and bay leaves in the pot. Stir well, bring to a boil, reduce heat to low and simmer for 60 more minutes.
  • Remove ham bone and discard. Stir in the chopped ham and simmer for 30 more minutes. Season with ground white pepper to taste.

1 can (16 ounces) kidney beans, rinsed and drained

4 cups water
1 (19 ounce) can black beans, drained and rinsed

1 (11 ounce) can canned corn (such as Green Giant Niblets®), drained
2 tomatoes, chopped
2 tablespoons chopped green chilies

Steps:

  • Place ham bone in a large slow cooker.
  • Heat olive oil in a large saucepan over medium-high heat. Saute celery, onion, and garlic until onion is translucent, about 5 minutes. Pour mixture over the ham bone in the slow cooker.

2 cups chopped onions
2 cups water
1 1/2 cups cubed smoked ham steaks
1 tablespoon chili powder
2 teaspoons ground cumin

5 garlic cloves, minced
2 (14 1/2 ounce) cans diced tomatoes
1/2 teaspoon liquid smoke (optional)
2 chipotle chiles in adobo, diced (freeze remaining chilies and use in chili or whatever)

  • Sort and wash beans; place in large heavy pot.
  • Cover with water to 2 inches above beans; bring to boil.

  • Cover and let stand for 1 hour.

  • Or you may cover the beans with the same amount of water and let stand overnight.
  • Drain and proceed as follows.
  • Combine beans, broth, and next 8 ingredients (broth through garlic) in the large heavy pan and bring to a boil.
  • Partially cover and reduce heat to medium-low.
  • Simmer 1 1/2 to 2 hours or until beans are tender.
  • Stir in tomatoes, diced chilies,and liquid smoke, if desired.
  • Simmer 1 hour.
  • Discard bay leaves and serve.
  • Ladle soup into bowls and top with 1 tablespoon cheese and 1 tablespoon cilantro.

Cooking time includes time to "quick soak" the beans -- this method seems to work well for those of us who never remember to soak in advance. You can eliminate this step if you soak overnight, or use canned beans. This was published in Cooking Light, Oct 2002. It was "paired" in the article with Recipe #198437. It's subtle sweetness is the perfect foil to the smoky spicy flavours of this soup. You could reduce the liquid a little to make this more like a chili or stew.

1 lb dried pinto beans or 2 (15 ounce) cans pinto beans
8 cups fat-free low-sodium chicken broth
2 cups chopped onions
2 cups water
1 1/2 cups cubed smoked ham (about 8 ounces)
1 tablespoon chili powder, blend (not straight chili!)
2 teaspoons ground cumin
2 teaspoons dried oregano
3 bay leaves
3 garlic cloves, crushed
1 (14 1/2 ounce) can diced tomatoes
1 whole dried ancho chiles or 1 whole pasilla chile
1/2 cup shredded cheese (I used white cheddar, but Monterey Jack was the original suggestion)
finely chopped cilantro (optional)
lime juice (optional)

Steps:

  • To "quick soak" beans: Rinse and pick over beans and place in a large pot. Cover with cold water to 2 inches above beans and bring to a boil for 2 minutes. Remove from heat, cover and let sit for at least an hour. Alternatively, you can soak your beans overnight, or use rinsed, canned beans.
  • "Refresh" the dried chile by placing in very hot water for 15 - 30 minutes. Discard seeds and chop finely.
  • Drain beans and put them in a large soup pot with broth, onion, water, ham, and herbs and spices. Bring to a boil, cover lightly, and reduce heat to medium-low.
  • If you are using dried beans: Simmer 1 1/2 hours or until beans are tender. Then, stir in tomatoes (including juice if you wish) and "refreshed" chile; simmer an additional 30 minutes.
  • If you are using canned (or pre-cooked) beans: you can add the tomato and chile with the other ingredients. Cook for a total of 30 minutes or as long as you wish to develop flavours fully.
  • Discard bay leaves.
  • Serve in bowls garnished with cilantro and a squeeze of lime.
  • This freezes well, just freeze (without lime or cilantro) in 1 or 2 serving portions. Thaw in the fridge or microwave straight from frozen. A squeeze of lime after reheating really "freshens" this up after freezing.

2 lbs dried great northern beans, rinsed, drained & picked over
4 ham hocks, 2 fresh and 2 smoked or 4 ham bone
2 onions, chopped
2 cloves, garlic minced
3 potatoes, pared and cubed
3 carrots, diced
1 cup celery, diced
3 quarts water
2 teaspoons dried thyme
1 teaspoon dried marjoram
1 teaspoon pepper
1/2 teaspoon rubbed sage
1/2 teaspoon dried savory
parsley
salt

Steps:

  • Put rinsed beans in pan and cover up to 2 inches past beans in large pot -- let sit overnight.
  • Drain, put beans back in pot, add water and the rest of ingredients.
  • Bring to boil, turn to simmer and cover.
  • Simmer for at least 3 hours or until beans are soft.
  • Take out bones and dice up any meat on bones and put back into pot -- You can add more ham if you want.
  • Discard fat and bones.
  • Season to taste with pepper and salt and parsley.
