This Mexican Gazpacho Fruit Salad is refreshing and light and it makes a perfect summer fruit salad for barbecues, potlucks and dining al fresco.

Number Of Ingredients 10

1 large Mexican papaya (if you can't find it then use 2 regular papayas), peeled, seeded and cut into small dice
1 small jicama (about 1/2 to 3/4 pounds), peeled and cut into small dice
2 large mangoes, peeled, seeded and cut into small dice
2 cups watermelon, peeled, seeded and cut into small dice
1 orange, peeled, seeded and cut into small dice
1 large cucumber, peeled, seeded and cut into small dice
3 tablespoons of lime juice (2 - 3 limes)
2 - 3 tablespoons fresh cilantro, finely chopped
a pinch of sea salt (no more than 1/2 teaspoon) (optional)
1/4 - 1/2 teaspoon chili

Steps:

  • Combine the diced fruit in a bowl. Pour the lime juice over the fruit.
  • Add the cilantro and chili and toss gently to mix well.
  • Chill in the refrigerator before serving.

1/2 seedless cucumber, also known as English cucumber
2 vine ripe tomatoes, seeded
1 green bell pepper, seeded
1/2 red onion, peeled
4 ribs celery from the heart, including leafy tops
3 tablespoons chopped fresh cilantro leaves or flat-leaf parsley
1 tablespoon red wine vinegar
1 lime or 1/2 lemon, juiced
1 to 2 teaspoons hot sauce, for mild to medium-hot heat level (recommended: Tabasco)
1/4 cup extra-virgin olive oil, eyeball the amount
Coarse salt and freshly ground black pepper

Steps:

  • Cut cucumber, tomatoes, pepper, onion and celery into bite-sized chunks. Combine vegetable in a bowl. Sprinkle cilantro or parsley over the vegetables. Combine vinegar, lime or lemon juice and hot sauce in a small bowl. Whisk in extra-virgin olive oil in a slow stream. Pour dressing down over the salad and toss. Season salad with salt and pepper and serve.

2 cups chopped jicama
2 cups chopped fresh mango ( any variety )
2 cups chopped fresh pineapple
2 cups chopped fresh watermelon
2 Mexican limes
1/4 of a small white onion
1 teaspoon salt
1/4 teaspoon ground hot pepper* (chile piquin or similar or 1/2 teaspoon ground black pepper)
1 cup finely shredded or crumbled white cheese (just about any kind)
2 cups orange juice
Optional: additional ground hot pepper and/or bottled hot sauce

Steps:

  • All the fruit should be fresh (not canned) except for maybe the pineapple, which could be canned if fresh is not available. Chop it all into small cubes of roughly the same size - no larger than, say, half an inch in size. Put all the chopped fruit into a large bowl and squeeze all the juice from the limes over it.
  • Dice the onion as small as you can - we want it to add it as a flavor element to this dish without its being noticeable as an ingredient. Add onion to the bowl of fruit, together with the salt, ground hot pepper and/or black pepper, cheese, and orange juice.
  • Dish into bowls or, for the street food effect, transparent disposable cups. Offer additional ground hot pepper and/or bottled hot sauce for those who wish to zip up their gazpachos even more. Serve with a spoon.

3 red bell peppers, diced

4 small avocados - peeled, pitted, and diced

1 (46 fluid ounce) bottle tomato-vegetable juice cocktail (such as V8®)
2 (32 ounce) bottles tomato and clam juice cocktail
1 (12 ounce) bottle hot pepper sauce (such as Cholula®)
⅓ cup red wine vinegar
⅓ cup lemon juice
3 cloves garlic, minced, or more to taste
1 tablespoon garlic powder
salt and ground black pepper to taste

Steps:

  • Combine celery, red and yellow bell peppers, cucumbers, avocados, cilantro, green onions, red onion, tomato-vegetable juice cocktail, tomato and claim juice cocktail, hot pepper sauce, red wine vinegar, lemon juice, garlic, and garlic powder in a large nonreactive bowl. 1 large poblano pepper
1 teaspoon olive oil
1 cucumber - peeled, seeded, and diced
½ cup onion, finely diced
2 ½ pounds fresh ripe tomatoes - stemmed, peeled, and seeded
1 jalapeno pepper, stemmed and chopped
3 cloves garlic, smashed
1 lime, juiced
1 teaspoon white sugar
1 teaspoon salt
½ teaspoon freshly ground black pepper
½ teaspoon ground cumin

Steps:

  • Rub the poblano pepper with olive oil. Roast over the gas flame of your stove, turning often, until the skin is black, 7 to 10 minutes. Place pepper into a paper bag and seal; set aside to cool, about 10 minutes.
  • Combine cucumber and onion in a bowl. Set aside.
  • Take cooled poblano from the bag and scrape off the burned skin. Remove stem and seeds; roughly chop the pepper.
  • Place tomatoes, poblano, jalapeno, garlic, lime juice, sugar, salt, pepper, and cumin into the bowl of a food processor and pulse until thick and not runny. Add cucumber and onion; pulse 3 to 4 times to incorporate. Refrigerate until chilled, about 30 minutes. Serve.

2 cucumbers, peeled and diced
2 green peppers, seeded and diced
1 medium onion, diced

DRESSING:
1/2 cup olive oil
1/4 cup white vinegar
Juice of 1 lemon (about 1/4 cup)
1 tablespoon chopped fresh parsley
2 garlic cloves, minced
2 teaspoons chopped green onions
1/2 teaspoon salt
1/4 teaspoon ground cumin

Steps:

  • In a 1-1/2-quart bowl, layer one-third to one-half of the tomatoes, cucumbers, green peppers, onion, olives, salt and pepper. 1 large garlic clove, minced
1 tablespoon extra-virgin olive oil
3/4 teaspoon salt
1/4 teaspoon black pepper
2 pounds tomatoes, coarsely chopped
6 tomatillos, husked, rinsed, and chopped
1 large red bell pepper, cut into 2/3-inch dice
1/2 English (seedless) cucumber, cut into 1/2-inch dice
1/4 red onion, sliced
1 jalapeño pepper, seeded and minced
3 cups cooked skinless chicken breast, sliced
3 tablespoons chopped fresh cilantro

Steps:

  • To make dressing, whisk together lime zest and juice, garlic, oil, salt, and black pepper in large bowl. Add all remaining ingredients except chicken and cilantro to dressing; toss until mixed well. Divide vegetable mixture evenly among 6 plates or large shallow bowls. Top each serving with 1/2 cup chicken; sprinkle with cilantro. TIP: The easiest way to husk a tomatillo is to hold it under cool running water while peeling off the husk. Be sure to rub the outside of the tomatillo until any residual stickiness is washed away.

12 very ripe homegrown tomatoes
4 large green peppers
4 large cucumbers
4 bunches scallions
32 ounces tomato juice
6 -8 tablespoons red wine vinegar
pepper, to taste
Tabasco sauce, to taste

Steps:

  • Core and quarter tomatoes.
  • Peel cucumbers and cut in chunks.
  • Seed peppers and cut in chunks.
  • Combine tomatoes, cucumbers, peppers, and scallions in batches in a blender or food processor. Blend, not until pureed, but until there are no large chunks.
  • Add tomato juice, vinegar, pepper, and Tabasco sauce.
  • Chill well.
