I got this from a Pampered Chef season's best book about 8 years ago Since then, I have made them alot, both for catered functions and my own lunches or kids picnics

8 ounces cream cheese
2 tablespoons Dijon mustard
1 tablespoon honey
1 1/2 cups thinly sliced iceberg lettuce
1 large tomatoes
1 mediumyellow bell pepper, diced
6 (8 inch) whole wheat tortillas
8 ounces thinly sliced deli roast beef
3/4 cup shredded muenster cheese
6 slices bacon, crisply cooked, drained and crumbled

Steps:

  • Combine cream cheese, mustard and honey in Small Batter Bowl; mix well using Small Mix 'N Scraper®. Slice lettuce and dice tomato and bell pepper using Chef's Knife.
  • Using Medium Scoop, top each tortilla with a level scoop of cream cheese mixture; spread to within 1/4 inch of edge using Small Spreader. Cover with 1/4 cup lettuce, pressing lightly. Place two ham slices over lettuce. Grate 2 tablespoons cheese over ham using Deluxe Cheese Grater. Top evenly with tomato, bell pepper and bacon.
  • . Roll up each tortilla tightly. To serve, cut each wrap diagonally in half with Serrated Bread Knife.

3 flour tortillas (10 inch)
6 slices provolone cheese
6 slices deli ham
6 slices bologna
30 slices pepperoni
18 banana pepper rings
9 slices tomatoes
6 lettuce leaves
2 tablespoons mayonnaise
roasted red pepper
green olives
artichoke heart

Steps:

  • Spread butter on one side of each tortilla. Layer each with cheese, ham, bologna, pepperoni, banana peppers, tomato, lettuce and/or optionals to within 2 inches of edge. Spread mayonnaise over lettuce. Roll tightly.
  • Serve immediately or wrap in plastic or waxed paper and chill up to 2 hours.

Low Carb Wraps that are Gluten Free. This recipe was suggested to me to try . I changed it a bit to suit ingredients I had in the kitchen. Baking the wraps worked great. I also tried to fry one in a cast iron pan - that did not work at all as they were not strong enough to lift and flip into a frying pan.

3 tablespoons flax seed meal
2 tablespoons almond meal
1 tablespoon buckwheat flour
1/2 teaspoon powdered egg yolk
1/2 teaspoon guar gum
1 dash salt
1/4 teaspoon baking powder
1/2 teaspoon olive oil
1 tablespoon heavy cream
4 tablespoons water

Steps:

  • Method:.
  • Heat oven to 375 degrees.
  • Wisk dry ingredients together in small bowl. Wisk wet ingredients together in another small bowl. With a fork mix the wet into the dry ingredients and stir well for at least 1 minutes. Let rest 1-2 minutes. Oil your hands and divide the dough in two. Roll into a ball. Spray large baking sheet with Pam and put dough ball in center of each half of the pan. Cover ball with plastic wrap and roll out into a thin circle. Repeat with other dough ball.
  • Place in oven and bake for 7-8 minutes or until done. Store in plastic bag between paper towels. I tried frying these but they did not work - they fell apart. Works way better in the oven.

5 (2 1/2 ounce) packages thin sliced deli lunch meat

  • drain pickles and pat dry.
  • arrange deli lunch meat on dry large cutting board.
  • spread room temp cream cheese on meat.
  • put pickle on meat and cheese wrap up and cut in half.
  • place pickle wraps in refrigerator in air tight container 2 hours before serving.

A simple snack that children and adults will enjoy. Indeed depending on their age, kids can either be helpers or make this on their own. Based on a recipe found in Everyday Food. This includes my modification to adapt it to our tastes.

3 tablespoons plain nonfat yogurt
1 tablespoon reduced-fat mayonnaise
1 -2 teaspoon Dijon mustard
1 large tart apple, preferably Granny Smith
4 ounces cheddar cheese (I use a reduced fat variety)
4 ounces deli turkey, thinly sliced

Steps:

  • Mix together the yogurt, mayo and mustard in a small bowl. Set aside for dipping.
  • Core the apple and cut into 16 uniform wedges.
  • Slice the cheese into 16 equal sized wedges. The 2 inch square blocks of cheese work especially well for this.
  • Cut the turkey into 16 1-inch strips.
  • Start with a wedge of apple, top with cheese. Take the turkey ribbon and wrap around the little parcel. Repeat.
  • Serve wedges and dip together.
