GRILLED MEXICAN CHICKEN BREAST

This recipe is from the LA Lite Cookbook. It sounds very similar to Tequila Lime Chicken, but without the tequila. This recipe will be my next grilled chicken dish to try.

2 garlic cloves, minced
3 tablespoons fresh lime juice
3 tablespoons orange juice
1 teaspoon cumin
2 tablespoons cilantro, minced
1/2 jalapeno pepper, seeded and minced
1 teaspoon morton lite salt
1/4 teaspoon pepper
3 tablespoons oil
4 chicken breasts, skinless, boneless and pounded (I cut through a boneless breast lengthwise to get two thin cutlets)
1 tablespoon sour cream, fat free

Steps:

  • Combine the first nine marinade ingredients in a bowl. Add the chicken breasts and toss to coat. Cover and refrigerate for as little as 30 minutes or up to 4 hours. Grill the chicken over medium heat until just cooked through, being careful not to overcook as they will dry out. Serve with a squirt of lime and a dollop of fat-free sour cream.

Been in a mood lately to just throw a dish together and this one was not disappointing. It had tons of flavor!!!!!!!!!!!!! I did not measure my ingredients but will try to post it and walk you through it. I hope you will try it as I said it was so good, even leftover the next day!

4 - skinless and boneless chicken breast
- jeffrey saabs mexican spice blend rub
1 jar(s) of whole button mushrooms marinated in vinegar, halapenos and shaved carrots (see note below)
1/2 box(es) of medford farms veggie stock or any veggie stock (see not below)
2 - small heads of broccoli cut into florets
- cornstarch and water to use as a thickener

Steps:

  • I took 4 breast and used my meat tenderizer on both sides. I didn't flatten them just tenderized them a little. Then I took a little olive oil and drizzled one both side and added the mexican seasoning blend and rubbed it on both sides of the breasts.
  • Then in a baking dish (13 x 9). I poured the veggie stock and added the mushrooms. I then put a wire rack on top and added my chicken. I sprayed the rack with cooking spray. Place the broccoli florets all around the outside of the baking dish.
  • I tented aluminum foil over top of the chicken and baked it in a preheated oven at 350° for 30 to 35 minutes or until a meat thermometer reads 160 - 165°.
  • Remove chicken and keep warm. I just put foil on top of it. Pour the drippings in a saucepan and bring to boil. I used cornstarch to make a thickener. Just add about a few tablespoons of cornstarch and then add water until you get a nice smooth paste. Once the stock comes to a boil add the thickener with a wire wisk. Plate chicken and broccoli and pour gravy over it. Yummy!!
  • Note: If you can't find a jar of marinated mushrooms you could just take a regular jar and add some halapenos to it probably about a tablespoon or two. Take your veggie peeler if you have one and clean 1 carrot and run the peeler over again to shave some of the carrots. Add to the broth.
  • Note: The veggie stock I used was amazing! It is very low in sodium! 75 mg per serving! I love it as it does not overpower the chicken or any meat for that matter. It just enhances the flavor of your recipe! It is the only stock I will use from now on!

1 cup grated cheddar cheese
tortilla chips

Steps:

  • Preheat oven to 350*.
  • Line bottom of a 9x13 pan.
  • Put raw chicken breast on top of tortilla chips.
  • Mix soups, milk,taco seasoning, and chilies.
  • Pour over chicken in pan.
  • Sprinkle with cheddar cheese on top of soup mixture.
  • Bake at 350* for 40-50 minutes.

Steps:

  • Place chicken breasts and taco seasoning in a seal able plastic bag; shake to coat well.

  • Place breasts in casserole.
  • Bake 30 minutes at 375 degrees.
  • Top with salsa about 5 minutes before breasts are done.

cooking spray
1 clove garlic, minced
1 pinch salt
1 pinch ground black pepper
1 pinch ground cumin
1 cup salsa
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat a greased skillet to medium. Rub chicken pieces with garlic, salt, pepper and cumin to taste; place in hot skillet. Cook until brown on both sides and no longer pink, 10 to 15 minutes.
  • Transfer chicken to 9x13-inch baking dish or casserole dish, top with salsa and cheese, and bake in preheated oven until cheese is bubbly and starts to brown, 15 to 20 minutes.

Mexican Taco Flavored Stuffed Chicken Breasts image

Tasty taco flavored stuffed chicken breasts using ingredients readily avaliable. I serve with Knorr Taco Flavored Rice but could easily be made using white rice and adding in some taco seasoning. Added 3/1/06(Note- You don't have to use all of the mayo mixture, just enough to lightly coat each breast so the Doritos stick.)

2 -4 boneless skinless chicken breasts
2 1/2-3 cups crushed cool ranch Doritos
2 -3 ounces Mexican blend cheese
1/2 cup mayonnaise
1/3 cup salsa or 1/3 cup picante sauce
0.5 (1 1/4 ounce) packet taco seasoning

Steps:

  • Pre-heat oven to 400.
  • Meanwhile, crush Doritos using rolling pin.
  • Mix the mayo and taco seasoning together in a bowl.
  • Butterfly each chicken breast almost all the way through creating a pouch for the filling.
  • Spoon some salsa into the middle of each chicken breast, generously sprinkle cheese on top of salsa and close, securing with several toothpicks.
  • Spread mayo mixture over chicken breasts (1 side at a time) and dip into cruched Doritos(or sprinkle Doritos over chicken) to coat.
  • Repeat on other side.
  • Place on a cookie sheet (I line mine with non-stick foil) and bake 20-25 minutes or until no longer pink.
  • Serve with rice & enjoy!

  • Pour half of the enchilada sauce in the bottom of the baking dish. Place the chicken breasts on top of the sauce. Sprinkle lightly with kosher salt and ground black pepper.
