  • Add butter to a 1-1/2 quart casserole dish and place into a cold oven. Preheat the oven to 350 and let butter melt.

Combine flour, baking powder and salt; add to creamed mixture., Spread 3 cups batter into an ungreased 15x10x1-in. baking pan. Spread pie filling over batter. Drop remaining batter by teaspoonfuls over top., Bake 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Steps:

  • Preheat oven to 425 degrees F.
  • In mixing bowl, combine cherries, flour and sugar; toss to coat evenly.
  • Place in 8" square pan and bake for 25-30 minutes until bubbly.
  • Meanwhile, sift flour into bowl; add baking powder, soda, and salt; and cut in chilled butter with pastry blender or 2 knives. When pea-sized texture, add buttermilk -all at once- stir just to blend.

1 small lemon (juiced)

1 cup milk
1 large egg
1 tsp pure vanilla extract
1/2 tsp pure almond extract

Steps:

  • Preheat the oven to 350°F. Spritz a 13 x 9 inch baking dish with cooking spray. Set aside.
  • In a medium size mixing bowl, mix together the sliced peaches, cornstarch, granulated sugar, lemon juice and cinnamon.

29 ounce can of peaches in light syrup (drained (the big can, it may be 28 oz))
1 cup milk
1 cup self-rising flour
1 cup sugar
1 stick butter
1 teaspoon (or two) of cinnamon

Steps:

  • Preheat oven to 350 degrees. Drain peaches and set them aside.
  • Melt the stick of butter in an 8x8 baking dish (I just stick it in the oven while it is preheating).
  • Mix together the flour, sugar, and teaspoon of cinnamon until blended. Pour in milk and stir until blended again. After butter is melted, take the dish out of the oven and pour the batter on top of the butter, DON'T STIR.
  • Use a big spoon to set your peach slices down all over the top of the cobbler dough, DON'T STIR. They will sink down and it will all be fine. Just distribute them as best you can but don't move them around once you set them down.
  • If you want, sprinkle about a tablespoon of sugar and another teaspoon of cinnamon over the top of your peach mixture. Sometimes I do this, sometimes I don't.
  • Bake for 45 to 55 minutes, or until it's set in the center and golden brown on top. Let it cool and thicken for about 30 minutes before serving with vanilla ice cream.

8 large, ripe pieces, pitted and chopped
1/2 cup white sugar
2 Tbsp lemon juice
2 tsp flour
1 tsp kosher salt
1 tsp nutmeg
1 tsp cinnamon
1 tsp vanilla extract
1/4 cup packed brown sugar
1 cup all purpose flour
3/4 cup sugar, divided
1 tsp kosher salt
1 tsp baking powder
1/4 cup heavy cream
1/4 cup water
8 Tbsp unsalted butter, chilled
1 egg white, beaten with water added

Steps:

  • Preheat oven to 400° F.
  • Add filling ingredients EXCEPT brown sugar (basically, your peaches, sugar, lemon juice, flour salt, nutmeg, cinnamon and vanilla extract) to a large bowl and stir gently to combine.
  • Grease an 8x8 baking pan. Add peach mixture in an even layer. Sprinkle brown sugar over the top and bake for 10 minutes.
  • In the meantime, add flour, 1/2 cup sugar, salt and baking powder into a medium bowl and stir to combine. Chop the butter into small pieces. Add them to the bowl and use your fingertips or a pastry cutter to work them into dough until pea sized pieces are formed. (See notes for alternative method).
  • Add the heavy cream and flour to the mixture and mix until just combined. Do not overmix.
  • Remove the baking pan from the oven after 10 minutes. Carefully spoon the dough over the top. It doesn't have to cover everything, that's why this is a "cobbler"!
  • Place the cobbler into the oven and bake for 10-15 minutes until the topping begins to brown.
  • This step is part way optional. But if you give the top a brush (or a dab) with egg wash and a sprinkle of sugar, it will look extra pretty when it comes from the oven as it finishes baking.
  • Oh, and an egg wash is just some egg white mixed with a little liquid - or in this case water. It gives the cobbler a glossy finish and also gives the sugar sprinkled on top something to adhere to.
  • I say it's worth the extra effort. But if you choose to forgo this step, you'll need to still cook the cobbler for another 10-15 minutes or so until the top is golden brown and the peaches are bubbly.
  • Let it cool slightly before topping with ice cream or whipped cream.
