4 tablespoons butter
1 small white onion (chopped)
1 jalapeno (minced)
5 cloves garlic (minced)
3 tablespoons flour
2 teaspoons ground cumin
1 teaspoon chili powder
4 cups chicken stock
6 cups frozen corn kernels (about 30 ounces)
1 tablespoon sugar
2 teaspoons salt
1 1/2 cups heavy cream (half and half, or milk)
1 cup freshly chopped cilantro
1/2 lb bacon (cooked and crumbled)
1/2 cup crumbled cotija cheese
1 jalapeno (sliced)

Steps:

  • Melt the butter in a large saucepan over medium heat. Add in the onions and minced jalapeno and sauté for about 5 minutes, then stir in garlic and cook an additional 1 minute.
  • Stir in the flour, cumin, and chili powder and cook 1-2 minutes. Stir in the chicken stock until smooth and bring to a boil. Add in the corn, sugar, and salt. Once it returns to a boil, reduce the heat to low and simmer 10 minutes.
  • Stir in cream and cilantro. Serve topped with crumbled bacon, cotija, and jalapeno slices.

5 ears sweet corn (, shucked, silks removed)
olive oil
2 tablespoons butter or ghee
1/2 onion (, diced)
2 ribs celery (, diced)
1 small poblano pepper (, diced)
3/4 pound Yukon Gold potatoes (, scrubbed, peeled, and diced)
3 cups vegetable or chicken stock
1 cup half n half or heavy cream
kosher salt
1 block of cotija or queso fresco cheese
1/4 cup Mexican crema ((or sour cream))
1 lime
1 teaspoon ancho or guajillo chili powder
1 tablespoon minced cilantro (, for garnish)
1 green onion (, sliced or chopped, for garnish)

Steps:

  • Preheat your grill to high. Brush four of the ears of corn with olive oil. Grill the ears of corn, turning occasionally for 8 to 10 minutes, until all sides have a light char on the kernels. Optional: add your favorite wood chips to the grill as the corn cooks. The smoky flavors will enhance the corn very nicely.
  • Remove the corn from the grill and cool. When the ears can be handled, cut the kernels from all of the ears (including the 5th, uncooked ear).
  • Using the edge of a knife, scrape down the ears of corn to remove the creamy corn. Add to the corn kernels. Slice one of the cobs into three pieces and set aside.
  • Heat the butter in a 4 quart Dutch oven or stock pot over medium until melted.
  • Add the onions, celery, and poblano and saute until soft (about 5 minutes). Add the potatoes, stock, and sliced corn cob. Raise the heat to high to bring the soup to a boil, then reduce to maintain a gentle simmer. Cook until the potatoes can be easily pierced with a knife (about 15 minutes). Remove and discard the cobs.
  • If a thick soup is desired, mash the potatoes in the pot with a potato masher until broken down (they won't necessarily be smooth at this point). Reduce heat to medium/low.
  • Stir in the corn and dairy, plus a couple pinches of salt. Cook for five minutes.
  • Observe the texture of the soup. If you want something smoother and thicker, use a stick blender in pulses to smooth out part of the soup. For a completely smooth soup, blend the soup in batches in a high-speed blender.
  • Add about 1/4 cup of cotija cheese crumbles, plus the crema to the soup, stirring well. Taste, and add more cheese as needed. It's salty, so it's unlikely you'll need to add more salt at this point.
  • Squeeze half of a lime over the soup, and taste. Use the remaining half, if a brighter flavor is desired.
  • To serve, sprinkle chili powder over the soup, along with the cilantro and green onions.

1 small yellow onion, diced
6 cloves garlic, thinly sliced
1.5 teaspoons chili powder

32 oz. vegetable broth
1/2-1 cup heavy cream
2 tablespoons lime juice

Steps:

  • Heat oil in a large pot over medium-high heat.
  • Add onion along with a couple pinches of salt and pepper. Cook for 3-4 minutes, stirring frequently.
  • Add garlic, chili powder, cumin, paprika, coriander, and a couple more pinches of salt and pepper. Cook for 1 minute, stirring frequently.
  • Add corn and cook, stirring occasionally, for 5 minutes on medium-high heat.
  • Add half the corn mixture to a blender along with the vegetable broth. Blend until smooth and creamy.
  • Pour blended soup back into the pot and stir to combine. Simmer for 5 minutes.
  • Stir in heavy cream and lime juice and season to taste with salt and pepper.
  • Garnish with your favorites and enjoy!

1 large onion, chopped
2 tablespoons unsalted butter

Steps:

  • Cut off and discard top of lemongrass, leaving a 6-inch stalk, then smash stalk with side of a large heavy knife.
  • Cook lemongrass, onion, and 1 teaspoon salt in butter and oil in a heavy medium pot over medium-low heat, stirring occasionally, until onion is softened, about 10 minutes. Add squash, corn, water, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper and bring to a boil over high heat.
  • Reduce heat and simmer, covered, stirring occasionally, until squash is tender, about 10 minutes. Remove from heat and discard lemongrass.
  • Purée soup in 3 or 4 batches in a blender until very smooth (use caution when blending hot liquids), straining each batch as blended through a fine-mesh sieve into a large heatproof bowl, pressing hard on and then discarding solids. Season with salt and pepper and reheat if necessary.

1 large onion, coarsely chopped
2 cloves garlic, coarsely chopped
1 large carrot, peeled and coarsely chopped
2 stocks celery, coarsely chopped
7 cups vegetable stock, or water
1 1/2 cups pumpkin puree (not flavored pie filling)
1/4 teaspoon ground Mexican cinnamon, plus 1 teaspoon (canella)
1/4 teaspoon allspice
1/4 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
2 tablespoons honey
2 teaspoons chipotle puree
3/4 cup creme fraiche or sour cream
Salt and freshly ground pepper
1/2 cup toasted pumpkin seeds
4 ounces pancetta, medium dice
1 small shallot, minced
1/4 cup sherry vinegar
1 teaspoon Dijon mustard
1 teaspoon finely chopped fresh thyme
1/4 cup olive oil
Salt and freshly ground pepper
10 ounces fresh spinach leaves
2 Bosc pears, halved, cored and thinly sliced
1 small red onion, finely sliced

Steps:

  • Heat the butter in a medium stockpot over medium heat. Add the onions, garlic, carrots and celery and cook until soft. Add the water and bring to a boil. Reduce heat and simmer for 20 to 30 minutes. Strain the stock into a clean medium saucepan and whisk in the pumpkin puree until smooth. Bring to a simmer and add the 1/4 teaspoon cinnamon, spices, honey and chipotle. Cook for 15 to 20 minutes. Add water, if the soup is too thick. Remove from the heat and whisk in 1/4 cup of the creme fraiche and season with salt and pepper to taste. Mix together the remaining creme fraiche and remaining 1 teaspoon cinnamon until combined. Divide the soup among 4 bowls and garnish with the cinnamon creme fraiche and a handful of pumpkin seeds.
  • For the Spinach, Pear and Pancetta Salad: Saute pancetta in skillet over medium heat until crisp. Drain on paper towels. Pour all but 1 tablespoon of the drippings out. Add shallots and cook until soft. Add vinegar, mustard and thyme; whisk to blend. Add oil and whisk to blend. Season with salt and pepper. Keep warm. Combine spinach, pears, red onion and pancetta in a large bowl. Toss with enough dressing to coat.

4 ears fresh or 3 cups frozen, thawed corn kernels
2 medium tomatoes, roughly chopped
2 cups chicken broth
1/2 teaspoon dried oregano
4 slices thick cut bacon
1/2 onion, chopped (about 1 cup)
2 cloves garlic, finely chopped
Coarse salt and freshly ground black pepper
1/2 cup heavy cream, optional
3 tablespoons chopped fresh flat-leaf parsley
1/2 cup queso fresco, fresh farmer's cheese, feta cheese, or sour cream, optional
Tortilla chips or fried tortilla strips, optional

Steps:

  • If using fresh corn, scrape kernels from cobs using small sharp knife or spoon. Place half of the corn kernels in blender with tomatoes, 2 cups of broth, and oregano. Puree until smooth. Set aside.
  • In a large saucepan over medium heat, cook bacon, turning once until brown and crisp, about 10 minutes. Remove bacon to a paper towel lined plate to drain. Set aside. Add onion to bacon fat in saucepan and cook, stirring frequently until onion is soft and translucent. Add garlic and stir for another minute.
  • Add tomato-corn puree to saucepan with remaining 2 cups of broth. Bring to a low boil and add remaining whole corn kernels. Simmer over medium-low heat until thickened, about 20 minutes. Stir occasionally and remove any foam as it develops with a large flat metal spoon. Season with salt and pepper.
  • Mix in half of the parsley and cream, if desired, and heat through.To serve, garnished with crumbled bacon, remaining parsley, crumbled cheese and tortilla chips or strips.

1 tbsp vegetable oil
3 x 198g cans sweetcorn, drained
1 small onion, chopped
1 large potato, peeled and cut into 1cm cubes
1 tsp smoked paprika, plus extra to serve
½ tsp ground cumin
900ml fresh vegetable stock
1 lime, ½ juiced, ½ thinly sliced
1 green chilli, thinly sliced
60g feta, crumbled

Steps:

  • Heat half the oil in a wide, deep saucepan over a medium-high heat. Tip in the sweetcorn, keeping it in a single layer as much as possible. Cook undisturbed for 2 mins so the kernels turn golden on the bottom. Stir, spread out again and repeat until the sweetcorn is golden and charred in spots. Cook for another 1 min, stirring, then tip into a large bowl.
  • Add the remaining oil to the pan and fry the onion and potato for 3-4 mins until slightly softened and pale golden. Add the spices and cook for a further minute, then pour in the stock. Spoon 3 tbsp of the sweetcorn into a small bowl, then add the rest to the pan. Bring to the boil, then reduce the heat to a simmer, cover and cook for 5-10 mins, or until the potato is fully softened.
  • Remove the pan from the heat and squeeze in the lime juice. Blitz using a hand blender (or tip into a blender to do this) until smooth and creamy. Season to taste. Divide the soup between four bowls and top with the reserved sweetcorn, the chilli, lime slices, feta and a sprinkle of paprika.

1 large onion, coarsely chopped

1 large carrot, peeled and coarsely chopped

1 1/2 cups pumpkin puree (not flavored pie filling)
1/4 teaspoon ground mexican cinnamon, plus
1 teaspoon ground mexican cinnamon
1/4 teaspoon allspice

1/4 teaspoon freshly grated nutmeg
2 tablespoons honey
2 teaspoons pureed chipotle chiles
3/4 cup creme fraiche or 3/4 cup sour cream
salt & freshly ground black pepper
1/2 cup toasted pumpkin seeds

Steps:

  • Heat butter in a medium stockpot over medium heat.
  • Add the onions, garlic, carrots and celery and cook until soft.
  • Add the water and bring to a boil.
  • Reduce heat and simmer for 20 to 30 minutes. Strain the stock into a clean medium saucepan and whisk in the pumpkin puree until smooth.
  • Bring to a simmer and add 1/4 Teaspoon cinnamon, spices, honey and chipotle.
  • Cook for 15 to 20 minutes.
  • Add water, if the soup is too thick.
  • Remove from the heat and whisk in 1/4 cup of the creme fraiche and season with salt and pepper to taste.
  • Mix together the remaining creme fraiche and remaining 1 teaspoon cinnamon until combined.
  • Garnish with the cinnamon creme fraiche and a handful of pumpkin seeds.
