SHRIMP DEAN MARTINIS

I just loved the Rat Pack -- supper clubbing in Vegas. Too cool. (So is this shrimp cocktail...)

Number Of Ingredients 10

1 1/2 pounds super-size jumbo shrimp -- precooked or, peeled and deveined, tail on
2 ribs celery, finely chopped
2 rounded spoonfuls prepared horseradish
1/2 lemon, juiced
1 teaspoon hot sauce
1/2 cup chili sauce
1/2 cup ketchup
1/2 cup vegetable juice (recommended: V8)
Salt and black pepper
1 lemon, wedged

Steps:

  • If you bought raw shrimp, steam shrimp until pink, about 5 minutes, then cold shock under running water. Place in freezer until ready to serve.
  • Mix celery, horseradish, lemon juice, hot sauce, chili sauce, ketchup and vegetable juice together and season with salt and pepper. Pour sauce into 4 martini glasses and surround rim with chilled shrimp. Serve lemon wedges alongside glasses on cocktail forks.

PEAR-LEMON MARTINIS



Pear-Lemon Martinis image

1 lemon, sliced into half moons
1/4 cup sugar
1 teaspoon pure vanilla extract
4 ounces pear-flavored vodka
1 ounce dry vermouth
1 ounce pear nectar
Pear slices and lemon twists, for garnish

Steps:

  • Combine the lemon slices, sugar and vanilla in a resealable container; cover and shake vigorously until the lemon slices are coated. Set aside, shaking occasionally, until the sugar dissolves, about 30 minutes. Smash the lemon slices with a fork to release the juices. Let sit 30 minutes, then refrigerate until ready to use.
  • Fill 2 martini glasses with ice and set aside. Shake the lemons again, then strain the juice into a liquid measuring cup. Combine the vodka, vermouth, pear nectar and 1 1/2 ounces of the lemon syrup in a cocktail shaker. Fill with ice and stir until cold. Discard the ice in the martini glasses and strain the drink into the chilled glasses. Garnish with pear slices and lemon twists.

1/3 cup olive oil
2 tablespoons red wine vinegar
2 tablespoons sugar
1 teaspoon Dijon mustard
1 clove garlic, finely chopped
3 medium tomatoes, seeded, chopped (1 1/2 cups)
2 cloves garlic, finely chopped
3 tablespoons chopped fresh basil leaves
2 tablespoons small capers, drained
1/2 teaspoon salt
1/2 teaspoon pepper
24 medium cooked shrimp (thawed if frozen), peeled, deveined (tail shells removed)
8 fresh basil leaves, sliced

Steps:

  • In small bowl, beat vinaigrette ingredients with whisk until smooth.
  • In medium bowl, mix tomato relish ingredients.
  • To serve, divide tomato relish evenly among 8 martini glasses. Top each with 3 shrimp. Spoon about 1 tablespoon vinaigrette over each. Garnish with sliced basil leaves.

1 1/2 pounds (about 60) cooked peeled deveined medium shrimp, thawed if frozen
1/2 cup tomato juice
1/4 cup vodka, if desired
1/2 teaspoon red pepper sauce
1/2 teaspoon sugar
1/2 teaspoon celery salt
2 tablespoons chopped fresh parsley
1 cup cocktail sauce
1/4 cup finely chopped green olives

Steps:

  • Arrange shrimp in single layer in rectangular glass or plastic dish, 11x7x1 1/2 inches.
  • Heat tomato juice, vodka and pepper sauce to boiling in 1-quart saucepan over medium-high heat. Stir in sugar; reduce heat. Simmer uncovered 5 minutes, stirring occasionally. Stir in celery salt and parsley; pour over shrimp. Cover and refrigerate 2 to 3 hours.
  • Mix cocktail sauce and olives; pour into small serving bowl. Remove shrimp from marinade with slotted spoon; arrange on serving platter. Serve shrimp with sauce and toothpicks.

For the shrimp:
2 bay leaves
1 lemon, quartered, plus wedges for serving
1 tablespoon black peppercorns
1 tablespoon coriander seeds
Kosher salt
1 pound (about 24) large shrimp, peeled and deveined, tails intact
For the cocktail sauce:
1/3 cup sweet chili sauce (such as Heinz)
1/4 cup ketchup
Juice of 1 lemon
2 tablespoons horseradish, drained
1 teaspoon hot sauce
1/4 teaspoon Worcestershire sauce

Steps:

  • Make the cocktail sauce: Combine the chili sauce, ketchup, lemon juice, horseradish, hot sauce and Worcestershire sauce in a small bowl. Season with salt and pepper. Refrigerate at least 1 hour before serving.
  • Make the shrimp: Combine 8 cups water, the bay leaves, quartered lemon, peppercorns, coriander seeds and 2 tablespoons salt in a large saucepan. Bring to a boil, then reduce the heat to medium low and add the shrimp. Simmer until the shrimp curl slightly and are just cooked through, about 4 minutes. Remove the shrimp to a plate with a slotted spoon; refrigerate until chilled, about 1 hour. Serve with the cocktail sauce and lemon wedges.

2 ounces Tequila (preferably aged blue Agave)
4 ice cubes
1/2 teaspoon TripleSec
Twist of lime zest
1 strip (1/4 x 3/4inch) of serrano chile (stem and seeds removed)

Steps:

  • In a pitcher or a cocktail shaker, combine the tequila and the ice cubes and stir or shake 20 times. Place the Triple Sec in a chilled cocktail glass, swirl it around to coat the inside of the glass, and discard it. Strain the tequila into the glass. Thread the twist of lime and the strip of chile onto the cocktail skewer, perch it on the rim of the glass, and serve at once.

2 stalks green onions
2 tablespoons Dijon mustard
1/2 cup peanut oil
1 tablespoon sesame oil
1/4 cup rice wine vinegar
1/4 cup sweet chili sauce
1/4 cup honey
Salt and freshly ground black pepper
1 head Napa cabbage
1/2 head red cabbage
4 green onions
4 carrots, peeled
1 pound ahi tuna
1 container daikon sprouts
2 avocado

Steps:

  • To make the Asian vinaigrette: Roughly chop the green onion and put in blender. Add the mustard and make a paste. Slowly add the peanut oil and sesame oil until smooth. Add the vinegar, chili sauce and honey, Add salt and pepper, to taste. Set aside.
  • To make the Asian salad: With a very sharp knife, shred the cabbages into thin strips approximately 3 to 4 inches long. Cut the green onions into thin slices. Using a regular kitchen grater, shred the carrots. Mix the cabbage, green onions and carrots together. Set aside.
  • To assemble: Toss the slaw with the dressing and set aside. In a martini glass, place coleslaw. Slice the tuna into pieces that are about 1 ounce each, approximately the size of a stick of gum. Place 2 to 3 slices on the coleslaw and garnish with diced or sliced avocado and a few daikon sprouts.
