Gordon Ramsay gives us a masterclass in meringues - the perfect prepare-ahead pudding

Provided by Gordon Ramsay

Categories     Afternoon tea, Buffet, Dessert, Treat

Time 2h40m

Number Of Ingredients 11

3 egg whites
½ tsp lemon juice
150g caster sugar
200ml tub crème fraîche
200ml natural yogurt
300g strawberry , hulled
250g raspberry
small bunch mint , leaves stripped and finely chopped
small knob fresh root ginger , peeled and finely grated
5 tbsp icing sugar (you may not need it all)
9 little sprigs of mint and icing sugar, to decorate

Steps:

  • Heat oven to 110C/fan 90C/gas ¼. Tip the egg whites and lemon juice into the clean bowl of a food mixer. Whisk until the whites double in volume and hold a peak when the whisk is drawn through them. Keep the whisk running and add the sugar a tbsp at a time, incorporating completely before adding the next. Whisk until all the sugar has been added and the whites are glossy.
  • Place a square of baking parchment on a large baking sheet. Pencil nine circles, about 7cm each, onto the parchment. Spoon the meringue into a large piping bag fitted with a plain nozzle and pipe concentric rounds to fit each drawn circle, piping two or more rings around the edge to form a nest. Bake for 2 hrs until they are crisp and lift off the paper easily. Leave to cool completely.
  • Whisk the crème fraîche until stiff, then fold in the yogurt. Set 2 strawberries and 9 raspberries aside and roughly chop the rest. Tip the chopped berries, mint and ginger into a bowl. Sprinkle with a little icing sugar and use a wooden spoon to mash to a rough purée. Gently fold the berries into the yogurt mix, adding icing sugar to taste.
  • To assemble, cut the remaining strawberries into 9 slices and place a slice inside each meringue case. Generously share the rippled cream between the cases, then top with a raspberry and a mint sprig. Dust with a little icing sugar just before serving. ( Meringues keep in an airtight container for 2 days.)

LIGHTER SUMMER PAVLOVA

Lighter summer pavlova image

We've reinvented this fruit-topped meringue dessert to reduce the calories, sugar and fat while keeping it as irresistible as the original

Provided by Angela Nilsen

Categories     Dessert, Treat

Time 1h35m

Number Of Ingredients 17

1 tsp cornflour
1 tsp white wine vinegar
½ tsp vanilla extract
3 large egg whites , at room temperature
75g golden caster sugar
50g icing sugar
edible red food colouring (optional)
100ml whipping cream
200g 2% Greek yogurt
85g half-fat crème fraîche
2 tsp golden caster sugar
350g strawberries , hulled and sliced
150g punnet raspberries
150g punnet blueberries
2 passion fruits
1/8 tsp icing sugar , for sifting
a few small mint leaves (optional)

Steps:

  • Heat the oven to 150C/130C fan/gas 2. Cover a large baking sheet with baking parchment and use a pencil to draw a 20cm circle in the middle. Turn the parchment over.
  • For the meringue, mix together the cornflour, vinegar and vanilla, and set aside. Whisk the egg whites in a large bowl until the mixture stands in stiff peaks. Tip in 1 tsp of the caster sugar, beat for a few seconds, then carry on adding and whisking in the caster sugar, 1 tsp at a time - this will give you a thick, glossy mixture. Sift and gently fold in half the icing sugar with a large metal spoon. Add the rest of the icing sugar in the same way, being careful not to overmix. Fold in the reserved cornflour mixture.
  • Secure the parchment with some meringue mixture (see tip) if you want. Dollop a couple of big spoonfuls of the mixture into the middle of the circle on the baking parchment, then spread it out gently to make a 15cm circular base, about 1.5cm thick. (At this point you can give the remaining meringue mixture a pink ripple effect, if you like, by briefly swirling some food colouring through it with a knife.)
  • Place a large spoonful of meringue on the edge of your meringue base to come out to the edge of the pencil circle. Repeat with 7 more spoonfuls in the same way, creating the raised edging for the pavlova and leaving a wide hollow for the fruit and cream to go in later. Fill any gaps in the edging with a blob of meringue. Bake for 1 hr - if you gently tap the meringue, it should sound crisp. Turn off the oven but leave the meringue inside for 1 hr to cool gradually. Remove, carefully peel off the baking parchment and leave to cool completely on a wire rack. Can be made up to three days ahead and stored in an airtight tin, or wrapped in foil.
  • When you are ready to serve the pavlova, prepare the filling. Whisk the whipping cream to stiff peaks. Fold in the Greek yogurt, then the crème fraîche and sugar. Scatter half the strawberries, raspberries and blueberries onto the base of the meringue. Cut the passion fruits in half widthways, scoop out the pulp and seeds, and scatter over the berries. Spoon about half of the yogurt mixture on top. Scatter over some of the remaining berries, top this with more spoonfuls of the yogurt mix, then finish off with the rest of the berries. Dust lightly with icing sugar and a scattering of mint leaves, if you like. Serve straight away - if you leave it sitting for too long, the creamy filling and juicy fruits will cause the meringue to start to soften.

PAVLOVA WREATH WITH BERRIES AND CREME FRAICHE

Pavlova Wreath with Berries and Creme Fraiche image

When you want to keep things simple in the kitchen but still enchant your guests with dessert, a ring of mini pavlovas served with jewel-like, sugar-encrusted berries and a pillow of whipped cream and creme fraiche just might do the trick.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Number Of Ingredients 9

6 large egg whites, room temperature
1 1/2 cups plus 3 tablespoons sugar
1 teaspoon cornstarch
1 teaspoon distilled white vinegar
1 teaspoon pure vanilla extract
Blackberries, raspberries, and strawberries, for serving
1 1/4 cup creme fraiche
Zest of 1 lemon
1/2 cup heavy cream

Steps:

  • Preheat oven to 250 degrees. Use a pencil to trace a 10-inch-diameter circle on a piece of parchment. Trace a 6-inch-diameter circle in center of larger circle. Place on a baking sheet, tracing-side down.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat egg whites on medium-high speed until soft peaks form. Gradually add 1 1/2 cups sugar, beating until stiff peaks form. Beat in cornstarch, vinegar, and vanilla.
  • Divide mixture between two large piping bags fitted with a 3/4-inch plain round tip. Pipe 10 evenly spaced mounds (each about 2 1/4 inches in diameter and 2 inches high) onto parchment in a circle using traced ring as a guide. With the back of a spoon, create a hollow in each mound. Bake until ring easily lifts off parchment, about 1 hour, 10 minutes. Turn off oven; let stand in oven 1 hour.
  • Gently roll some of the berries in a damp paper towel, then roll in remaining 3 tablespoons sugar to lightly coat.
  • To serve, whisk creme fraiche until thickened, then fold in lemon zest. Whisk cream to medium peaks, then fold into creme fraiche; divide among hollows in pavlovas. Garnish with sugared and unsugared berries.

Estimated Reading Time 2 mins
  • Cocoa Crème Fraîche Cupcakes. These rich cupcakes double up on the crème fraîche, using the thick cream both inside the batter and as a topping. Go to Recipe.
  • Almond Cake with Lemon and Crème Fraîche Glaze. This unique cake comes from Jessica Hicks of Astro Coffee in Detroit, who combines hand-ground almonds with polenta to give the batter some texture.
  • Summer Berries with Cumin Meringues and Crème Fraîche. This recipe comes from Barbara Lynch, who makes a simple berry and crème fraîche dessert more complex by adding a meringue, which is flavored with a pinch of cumin.
  • Strawberry Crème Fraîche Biscuits. >These buttery biscuits are made even better when spread with some strawberry-swirled crème fraîche, which adds the perfect amount of tartness.
  • Gianduja Mousse. This gianduja mousse is kind of like fluffy Nutella, but instead of simply whipping the chocolate-hazelnut spread, the recipe calls for folding in whipped cream and crème fraîche.
  • Tarte Tatin with Crème Fraîche. Andrew Zimmern’s tart tatin is made of spiced apples cooked in caramel, which pairs perfectly with a dollop of silky crème fraîche.
  • Red Velvet Beet Cake with Crème Fraîche Icing. Don’t knock the beet puree ‘till you try it. And trust us, it’s really good — especially when paired with that just-thick-enough crème fraîche frosting.
  • Blueberry-Almond Shortcakes with Crème Fraîche. While shortcakes are most often made of strawberries, pound cake, and whipped cream, this spin-off sandwiches whipped crème fraîche and blueberry compote between two cornmeal-almond biscuits.
  • Chess Pie with Crème Fraîche and Vanilla. When it comes to desserts, crème fraîche is typically used as a topping. But this buttery chess pie uses the cream in the custard itself.
  • Crème Fraîche Biscuits. With these biscuits, chefs Allison Vines-Rushing and Slade Rushing opt for crème fraîche instead of buttermilk for extra fluff.
