- Place potatoes and celery in a 5-qt. slow cooker. Cut brisket in half. In a large skillet, brown beef in oil on all sides; transfer to slow cooker. In the same pan, saute onion until tender. Add garlic; cook 1 minute longer. Add to slow cooker., Add beer and bouillon granules to skillet, stirring to loosen browned bits from pan; pour over meat. In a large bowl, combine the remaining ingredients; add to slow cooker. , Cover and cook on low until meat and vegetables are tender, 8-10 hours. Discard bay leaf. To serve, thinly slice across the grain.

- Preheat the oven to 325 degrees F.
- On a cutting board, mash the garlic and 1/2 teaspoon of the salt together with the flat-side of a knife into a paste. Add the rosemary and continue to mash until incorporated. Put the garlic-rosemary paste in a small bowl and add 2 tablespoons of olive oil; stir to combine.
- Season both sides of the brisket with a fair amount of kosher salt and ground black pepper. Place a large roasting pan or Dutch oven over medium-high flame and coat with the remaining olive oil. Put the brisket in the roasting pan and sear to form a nice brown crust on both sides. Lay the vegetables all around the brisket and pour the rosemary paste over the whole thing. Add the wine and tomatoes; toss in the parsley and bay leaves. Cover the pan tightly with aluminum foil and transfer to the oven. Bake for about 3 to 4 hours, basting every 30 minutes with the pan juices, until the beef is fork tender.
- Remove the brisket to a cutting board and let it rest for 15 minutes. Scoop the vegetables out of the roasting pan and onto a platter, cover to keep warm. Pour out some of the excess fat, and put the roasting pan with the pan juices on the stove over medium-high heat. Boil and stir for 5 minutes until the sauce is reduced by 1/2. (If you want a thicker sauce, mix 1 tablespoon of flour with 2 tablespoons of wine or water and blend into the gravy).
- Slice the brisket across the grain (the muscle lines) at a slight diagonal. Serve with potato pancakes.
- Using a box grater or food processor, coarsely grate the potatoes and onions. Put the grated potatoes and onions together in cheesecloth or a tea towel and twist it to squeeze out the excess liquid. Put the dry potatoes and onions in a bowl and season with salt and pepper. Fold in the egg whites and chives to bind the mixture together.
- Heat a large non-stick skillet over medium heat and coat with 1/4-inch of oil. For each pancake, take about 2 tablespoons of the potato mixture and drop into the hot oil; gently flatten with a spatula so they fry up thin and crispy. Fry for 3 to 4 minutes on each side, until golden. Remove to paper towels to drain; season with salt while the potato pancakes are still hot. Continue frying, adding more oil as needed, until all of the mixture is used up. Serve immediately with apple sauce, if desired.
OVEN-BAKED BRISKET

- Sauté onions until browned.
- Add peppers until soft.
- Add mushrooms.
- Combine onion soup mix, wine, and ketchup.
- In foil lined pan, place 1/3 of the sauteed peppers.
- Place meat seasoned with the pepper, garlic powder, and paprika.
- Pour wine mixture on top.
- Arrange potatoes around sides.
- Add remaining peppers.
- Wrap airtight in foil and bake at 325 degrees Fahrenheit for 3 to 4 hours.

BRISKET BAKED POTATO
Steps:
- Preheat oven to 350° and wash and dry potatoes. Pierce each potato with the tines of a fork a couple times and then wrap potatoes in aluminum foil.
- Place on a baking sheet and place in the oven. Bake for an hour or until when a sharp knife is inserted into the potatoes, they are soft.
- Remove from oven and set aside.
- While the potatoes are baking, using a medium saucepan, add leftover brisket, barbecue sauce and beef broth.
- Heat over low heat until heated through.
- Once potatoes are cool enough to handle, remove foil from potatoes.
- Using a sharp knife, make a slice on the top of the potatoes starting on the top of one side and going across to the other side, basically making a canoe shape.
- Next, using a spoon, scoop out some of the potato and place it in a bowl.
- Do this with all of the potatoes then add butter and 1 cup of shredded cheese. Let butter and cheese melt, stir and then put back into the potatoes. Salt and pepper to taste, if desired.
- Once potatoes are filled back up, top with remaining cheese, barbecue brisket, additional BBQ sauce drizzled over the top, and onion strings, if desired.
- Serve immediately.

- Preheat oven to 350 degrees F.
- Sprinkle beef brisket with salt and pepper; place in large skillet.
- Brown meat, on fat side only, over high heat.
- While meat is browning, prepare vegetables: Slice onions very thin.
- Pare carrots; cut carrots and celery in 1-inch pieces.
- Pour boiling water over tomato in bowl; let stand several minutes.
- Holding tomato on fork, peel skin with sharp knife.
- Cut tomato in chunks.
- When meat is well browned, remove it from skillet to a large Dutch oven.
- Add onion to skillet; sauté until golden.
- Spoon onion over meat; surround with carrot, celery, tomato.
- Add 1 cup water.
- Roast, covered, 2 1/2 to 3 hours, until meat is tender.
- Prepare potatoes during LAST hour: Place in saucepan; add boiling water to measure 2 inches and 1/2 teaspoon salt.
- Bring potatoes to boiling; boil gently, covered, 20 minutes.
- Drain; cool.
- Peel while warm, using a sharp knife.
- Set peeled potatoes on piece of paper towel, and salt them lightly; turn with fingers to salt all over.
- Melt butter in large skillet over moderate heat.
- Add potatoes; cook 5 minutes; then turn carefully with broad spatula to brown all overseveral minutes.
- Remove brisket to warm serving platter; surround with browned potatoes; keep warm.
- Make gravy: Strain pan juices to remove vegetables.
- Press vegetables through strainer.
- Skim fat from pan juices.
- In small bowl, combine flour with 1/4 cup water; stir until smooth.
- Add to pan juices, along with pureed vegetables.
- Bring to boiling, stirring until thickened.
- Serve with brisket.

This is my mom's brisket recipe passed down to her by her mother. You can use it to make brisket or pot roast. Recipe is made on stovetop in or slow cooker. Mom also makes it in the oven.

- Combine 2 tablespoons flour, onion powder, garlic powder, and black pepper in a large plastic bag; place brisket into bag, seal, and shake bag to coat meat with seasoned flour.
- Heat vegetable oil in a large heavy pot or Dutch oven over medium-high heat. Brown meat on all sides; reduce heat to low. Whisk onion soup mix in hot water in a bowl until dissolved; pour over the brisket. Pour beer over meat. Add more water as needed to bring level of liquid to halfway up side of the brisket.
- Cover and simmer until beef is tender, about 2 hours, adding more water if needed. Remove meat to a platter and cool for 15 minutes. Stir ketchup, applesauce, and Worcestershire sauce into pan juices; whisk 2 tablespoons quick-mixing flour into mixture. Simmer until gravy is thickened, about 5 minutes.
- Slice brisket very thinly against the grain and return sliced meat to pot with gravy. Stir to coat meat; simmer 1 more hour.
- Transfer meat and gravy to a casserole dish and cover; refrigerate overnight. Skim hardened fat from the meat and gravy before bringing back to a simmer over low heat to serve.
