ROASTED TOMATO AND TOMATILLO SALSA



Roasted Tomato and Tomatillo Salsa image

This is a delicious Salsa to add to your repertoire! It uses both tomatoes and tomatillos to create a completely unique flavor. Yum!!

2 roma tomatoes
4-5 tomatillos
1/3 small onion
1 garlic clove
1-2 jalapenos (or serranos)
10-12 sprigs cilantro
pinch of salt
squeeze of lime

Steps:

  • Husk the tomatillos and then rinse both the tomatoes and tomatillos. I usually remove the stems from both of them knowing that any juices leftover in the roasting pan will go into the blender.
  • Roast the tomatoes and tomatillos in a 400F oven for 20-25 minutes. Here's why roasting tomatillos is better than boiling them.
  • Add the roasted tomatoes and tomatillos to a blender along with 1/3 small onion, 1 peeled garlic clove, 1 rinsed and de-stemmed jalapeno (or less for a milder version), 10-12 sprigs rinsed cilantro. Combine well (I usually leave it a bit chunky.)
  • Take a taste for seasoning. I added another 1/2 jalapeno, a pinch of salt, and a generous squeeze of lime.
  • Serve immediately or chill in the fridge for a bit before serving.
  • Store leftovers in an airtight container in the fridge where they will keep for a few days.

1 medium tomato, quartered
1 small onion, cut into chunks
1 jalapeno pepper, seeded
3 tablespoons fresh cilantro leaves

1/8 teaspoon pepper
Tortilla chips

Steps:

  • In a large saucepan, bring 4 cups water to a boil. Add tomatillos. Reduce heat; simmer, uncovered, for 5 minutes. Drain., Place the tomatillos, tomato, onion, jalapeno, cilantro, garlic, lime juice and seasonings in a food processor. Cover and process until blended. Serve with chips.

8 tomatillos (removed from husks, washed, and halved)
2: 15 ounce cans diced tomatoes
Juice of one lime
Handful of parsley leaves (or cilantro if you prefer)
Salt and pepper (to taste)

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Put tomatillo halves onto a baking sheet and drizzle with olive oil and season with salt.
  • Roast in the oven for 15 minutes, or until tomatillos are softened and blistered. Let cool for 10 minutes.
  • Place the roasted tomatillos, diced tomatoes, lime juice, parsley leaves, salt and pepper into the bowl of a food processor and carefully pulse until you get the desired consistency of salsa that you like.
  • Dump into a bowl and serve with tortilla chips!

I was looking for a tomatillo salsa recipe for canning & couldn't find one that suited our Taste so, I came up this this one. Everyone that has tried it likes it. We have a lot of tomatillos in the garden, so I wanted a way to use them.

6 cups tomatillos, chopped
3 cups onions, chopped
3 jalapeno peppers, chopped
6 garlic cloves, chopped
1/2 cup cilantro, chopped
1/2 cup lemon juice
2 teaspoons cumin
1 tablespoon salt
1 teaspoon black pepper

Steps:

  • Combine all ingredients in a large pot & stir frequently over high heat until mixture boils.
  • Reduce heat.
  • Simmer 20 minutes.
  • Ladle into pint jars.
  • Leave 1/2 inch head space.
  • Adjust lids, process in a hot water bath for 20 minutes.
  • Be sure to wear gloves when chopping peppers as they will burn fingers.
  • Also, have good ventilation when cooking--I have found this to be true when cooking ALL salsa.
  • I use a food processor for chopping.
  • If you want it hotter use more jalapeños & you can use more or less cumin, as cumin makes it hot, BUT gives a good flavor.

4 tomatoes
4 fresh tomatillos, chopped
1/2 small red onion, diced
2 jalapeno peppers, minced
1 garlic clove, minced
2/3 cup fresh coriander, chopped
1/4 cup extra virgin olive oil
3 tablespoons orange juice
1/4 teaspoon salt and pepper, each

Steps:

  • In a pot of boiling water, blanch tomatoes for about 30 seconds. Immediately place in ice cold water, then peel, seed and chop to make about 2 cups.
  • In a medium bowl, combine all the ingredients together. You can also make this ahead of time, by putting the salsa in an airtight container up to 24 hours, and draining just before serving.

12 tomatillos (about 1 pound), husked and rinsed
6 scallions
2 jalapenos
2 tablespoons olive oil, plus more for drizzling
Kosher salt
1 cup packed fresh cilantro leaves and stems
1/2 teaspoon ground cumin
2 cloves garlic, peeled
Juice of 2 limes

Steps:

  • Set up your grill for even medium-high heat. If using a charcoal grill, distribute the coals evenly. If using a gas grill, heat both sides evenly.
  • Place the whole tomatillos, scallions and jalapenos on a cooling rack in a single layer. Drizzle with olive oil and sprinkle with salt. Place the cooling rack on the grill and cook, pulling the cooling rack off the grill to flip the vegetables, until softened and charred on both sides, about 5 minutes per side. Using a knife, scrape off the skin from the jalapenos. If you want the salsa to be spicy, leave in the seeds. If you do not, remove the seeds and ribs from the jalapenos.
  • To a blender or a food processor, add the tomatillos, scallions, jalapenos, cilantro, cumin, garlic, lime juice and olive oil. Blend until a salsa forms. Blend as much as you need to reach the consistency of the salsa you like. Add salt to taste. The sauce will keep in the refrigerator for up to 1 week.

TOMATILLO SALSA

This is a standard Mexican salsa that you find everywhere in Mexico. Tomatillos have a natural acidic and fresh note that gives them a little sparkle. (They keep that sparkle even after they're cooked.) Tomatillo salsa is a natural with the flavors of grilled meat, but it is a great do-ahead, have-on-hand salsa to freshen up anything off the grill or out of a skillet.

1 pound fresh tomatillos
1 large Spanish onion (about 12 ounces), cut into large chunks (about 3 cups)
3 cloves garlic
1/2 packed cup coarsely chopped cilantro leaves
1/2 jalapeno (seeds and all if you like heat)
1/2 lime, juiced
Kosher or fine sea salt

Steps:

  • Pull the husks from the tomatillos and wash them under cool water until they no longer feel sticky. Cut them into quarters and put them into the work bowl of a food processor. Add the onion and garlic and process until smooth. Add the cilantro, jalapeno and lime juice and process until the jalapeno is finely chopped.
  • Scrape the mixture into a small saucepan. Season lightly with salt and bring to a boil over medium heat. Cook, stirring occasionally, until most of the liquid is boiled off and the salsa looks relish-y, about 15 minutes. Cool before using. The sauce can be refrigerated for up to 1 week. If refrigerated, you may want to add a little salt and/or lime juice to the salsa before serving.

GREEN TOMATO (OR TOMATILLO) SALSA

Try this one. It's from National Center for Home Food Preservation. It's a great way to use up those green tomatoes at the end of the season. Note: I do not peel the green tomatoes or the peppers. This is great for enchiladas or burritos.

5 cups tomatillos, chopped (or green tomatoes)
1 1/2 cups green chilies, seeded, chopped
1/2 cup jalapeno, seeded, finely chopped (or other hot peppers)
4 cups onions, chopped
1 cup lemon juice, bottled bottled or 1 cup lime juice, bottled
6 garlic cloves, finely chopped
1 tablespoon ground cumin (optional)
3 tablespoons dried oregano leaves (optional)
1 tablespoon salt
1 teaspoon black pepper

Steps:

  • Caution: Wear plastic or rubber gloves and do not touch your face while handling or cutting hot peppers. If you do not wear gloves, wash hands thoroughly with soap and water before touching your face or eyes.
  • Preparing Tomatillos: Remove the dry outer husks from tomatillos; wash thoroughly. They do not need to be peeled or seeded.
  • Preparing Peppers: The skin of long green chiles may be tough and can be removed by heating the peppers. Usually when peppers are finely chopped, they do not need to be skinned. If you choose to peel chiles, slit each pepper along the side to allow steam to escape. Peel using one of these two methods:.
  • Oven or broiler method to blister skins - Place chiles in a hot oven (400°F) or broiler for 6 to 8 minutes until skins blister.
  • Range-top method to blister skins - Cover hot burner (either gas or electric) with heavy wire mesh. Place peppers on burner for several minutes until skins blister.
  • To peel, after blistering skins, place peppers in a pan and cover with a damp cloth. (This will make peeling the peppers easier.) Cool several minutes; slip off skins. Discard seeds and chop.
  • The peppers do not need to be peeled, but seeds are often removed.
  • Hot Pack: Combine all ingredients in a large saucepan and stir frequently over high heat until mixture begins to boil, then reduce heat and simmer for 2O minutes, stirring occasionally.
  • Ladle hot into clean, hot pint jars, leaving ½-inch headspace. Remove air bubbles and adjust headspace if needed. Wipe rims of jars with a dampened, clean paper towel; apply two-piece metal canning lids.
  • Process pints for 15 minutes in a BWB.
  • Note: You may use green tomatoes in this recipe or tomatillos.
  • Important: The only other change you can safely make in this salsa recipe is to change the amount of spices and herbs. Do not alter the proportions of vegetables to acid and tomatoes because it might make the salsa unsafe. Do not substitute vinegar for the lemon juice.

Steps:

  • Place tomatillos, onion, garlic, and chile pepper into a saucepan. Season with cilantro, oregano, cumin, and salt; pour in water. Bring to a boil over high heat, then reduce heat to medium-low, and simmer until the tomatillos are soft, 10 to 15 minutes.
  • Using a blender, carefully puree the tomatillos and water in batches until smooth.

This recipe is my own modification of the one made famous by Linda McDaniel. Her recipe, for green tomato relish, is fantastic. But when the time came for me to make it, green tomatoes were not available. I did, however, have tomatillos. The flavor is decidedly different but I've come to love this sweet-n-tangy relish even more. I always keep a jar in the fridge but it never lasts too long. I have found it goes really well with ham (on English Muffins) or even just served with eggs (sunny-side up or poached) for an unusual but bright-tasting breakfast. This recipe makes about 5-1/2 Cups of relish and was configured to be served in 2-Tablespoon portions.

10 tomatillos
1 medium red bell pepper
1 medium green bell pepper
2 medium vidalia onions
1/2 tablespoon kosher salt
1 1/2 tablespoons yellow mustard seeds
1 1/2 tablespoons celery seeds
2 1/2 cups granulated sugar
1 cup apple cider vinegar

Steps:

  • Peel the papery wrapping off of the tomatillos, remove the seeds and inner ribs from the bell peppers, and peel the onions.
  • Quarter the tomatillos and set aside. Roughly chop the onions and bell peppers and set aside.
  • In your food processor, finely puree the tomatillos, peppers, and onions together. I usually have to do this in two batches. On high speed, this takes me about 3 minutes per batch; when done it should resemble a fine-grain blend.
  • Line a strainer with cheese cloth and drain the minced vegetables for at least 1 hour. I have drained this over night, before, and had no problems.
  • After the minced vegetables have drained, combine them with the remaining ingredients in a non-reactive pot.
  • Place the pot over high heat on your stove and bring to a boil.
  • Stirring, to prevent scorching, lower the heat to a simmer and cook for another 5 minutes.
  • Remove to mason jars and refrigerate. Once it is chilled, serve in dollops with sausages, chips, eggs, ham, or anything else that needs a sweet-n-tangy boost.

6 fresh serrano chilies
2 cloves peeled garlic
1/4 cup chopped fresh cilantro

Steps:

  • Remobe husks from tomatillos and rinse.
  • Place them on a baking sheet, on top rack under broiler.
  • Broil about 4 minutes on one side, unrit blackened and soft, then turn and roast other side.
  • Let cool on sheet.
  • Heat a skillet over medium heat, and chiles and garlic.
  • Roast chiles 5 to 10 minutes, until blackened and soft, turning occasionally.
  • Roast garlic about 15 minutes.
  • Remove and let cool, then pull stems from chiles, and peel garlic.
  • Put tomatillos, garlic, and chiles in a food processor and coarse-blend.
  • Transfer to a bowl and add 1/4 cup of water to bring to"salsa consistency.
  • "Stir in onion, cilantro, salt and pepper to taste.

2 large granny smith apples, 3 cups diced
1 small onion, diced
1 large red pepper, 1 1/4 cups diced
3/4 cup apple cider vinegar
1 -2 fresh habaneros or 4 -6 fresh jalapenos, minced
1/3 cup cilantro, chopped
1/4 cup sugar
1/2-1 teaspoon cumin
1 teaspoon pickling salt
1 lime, zest, meat chopped, pith discarded
2 -3 garlic cloves, minced
1/2 teaspoon black onion seeds, Nigella Sativa
fresh cracked black pepper, 10 turns
pickling lime (crisp granules 1/8 teaspoon per pint calcium chloride) (optional)

Steps:

  • Prepare jars for canning.
  • In a large pot combine all ingredients except for the granules.
  • bring to a boil and simmer uncovered for 15 minutes.
  • Place 1/8 teaspoon of the granules in each pint if using.
  • Ladle into hot sterlized jars leaving 1/2 inch head space.
  • Wipe rims and top with lids.
  • Process for 10 minutes in a hot water bath covered by at least 1 inch of water.
  • Remove jars a leave in a draft free spot for 24 hours.
  • Lable and store in a pantry fo up to 1 year.
