ROASTED ASPARAGUS WITH CREAMY LEMON DRESSING

Roasted Asparagus with Creamy Lemon Dressing image

This lemon sauce would perk up pretty much any kind of roasted vegetable.

Provided by Katie Workman

Categories     Side Dish

Time 25m

Number Of Ingredients 9

2 pounds medium-thick asparagus
1 tablespoon olive oil
Kosher salt and freshly ground pepper (to taste)
3 tablespoons fresh lemon juice
½ teaspoon finely grated lemon zest
3 tablespoons crème fraiche or sour cream
½ teaspoon hot sauce (such as Sriracha, or to taste)
⅓ cup extra virgin olive oil
Kosher salt and freshly ground pepper (to taste)

Steps:

  • Preheat the oven to 400°F. Trim the bottom 2-inches from the asparagus, and if desired, peel the lower 2 inches of the stalks. Place the asparagus in a baking pan. Don't worry if the stalks overlap a bit. Drizzle the tablespoon of olive oil over them and toss gently to coat the asparagus evenly. Sprinkle on the salt and pepper, toss again, and spread out in the pan.
  • Roast the asparagus for 10 to 14 minutes, until just tender and slightly browned. Remember that they will continue to cook a bit after you remove them from the oven, so take them out while they're still a little firmer than you would like.
  • Meanwhile, in a small bowl, whisk together the lemon juice, zest, crème fraiche, and Sriracha until smooth. Slowly pour in the ⅓ cup olive oil, whisking all the while until the dressing is thick, then season with salt and pepper.
  • Let the asparagus cool slightly, and while still warm drizzle over some of the lemon sauce. Serve right away with the rest of the sauce passed on the side if desired.

HOLLANDAISE SAUCE

Hollandaise Sauce image

Hollandaise, a sauce made from egg yolks and butter, is easy to make at home. Use it to dress up veggies, make the perfect Eggs Benedict or spoon over fish or chicken.

Provided by Sara Bir

Categories     Breakfast     Brunch     Sauce

Time 20m

Number Of Ingredients 7

10 tablespoons (142 grams) unsalted butter, at room temperature, cut into 1 tablespoon pieces
3 egg yolks
1 tablespoon lemon juice
1 tablespoon water
1/4 teaspoon salt
Freshly ground black or white pepper
Pinch of cayenne pepper (optional)

Steps:

  • How to keep hollandaise warm before serving and how to store: You may hold the sauce for up to 30 minutes on the stovetop with the burner on its lowest setting. You may need to slide the pan on and off the burner in order for the hollandaise to not overheat and break. Refrigerate leftover hollandaise within 2 hours of making it and use the leftovers to spread on toast within 3 days. It does not reheat well, but if you decide to try to reheat it do so in a double boiler whisking continuously.

  • Snap the ends off the asparagus where they break naturally, without wasting too much. Heat a pot of water for poaching your eggs and separately, heat a shallow amount of water in either a tall pot to cook the asparagus directly, or a wide one which will take a steamer on top that will hold the stems of asparagus.
  • Set the asparagus to steam, either with the bottom of the stems in a shallow amount of water or in a steamer, and steam for around 5-7mins, depending on thickness (keep a close eye on it). Remove once tender to a knifepoint.
  • Meanwhile, start on the hollandaise sauce - put the egg yolk into a blender container along with the cayenne pepper, mustard and lemon juice and blend until smooth.
  • Next, poach your two whole eggs in slightly salted water until the whites are translucent and the yolks are still slightly soft.
