250 g butter
1/3 cup icing sugar (U.S confectioner's sugar)
1/3 cup cornflour (U.S corn starch)
1/4 cup sugar
1/2 teaspoon vanilla
2 1/3 cups plain flour

Steps:

  • Melt butter over low heat, allow to cool slightly.
  • Sift icing sugar and cornflour into bowl, add sugar.
  • Add butterand vanilla, beat mixture until thick and creamy.Add sifted flour, mix well.
  • Press mixture into 18 cm x 28 cm (7in x 11in) baking pan (lamington tin in AUS), smooth over with a spatula; mark into fingers with sharp knife.
  • Prick each finger decoratively with a fork.
  • Bake in moderate oven for 30 minutes or until light golden.
  • Cut into fingers while still warm. Cool in tin.

1 cup butter, softened
½ cup confectioners' sugar
¼ cup cornstarch
1 ½ cups all-purpose flour

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Whip butter with an electric mixer until fluffy. Stir in the confectioners' sugar, cornstarch, and flour. Beat on low for one minute, then on high for 3 to 4 minutes. Drop cookies by spoonfuls 2 inches apart on an ungreased cookie sheet.
  • Bake for 12 to 15 minutes in the preheated oven. Watch that the edges don't brown too much. Cool on wire racks.

This is my favourite shortbread cookie, and I always have the ingredients on hand. So simple to make and so delicious, it produces a very delicate shortbread that is sure to please.

1 cup butter
1 1/2 cups flour
1/2 cup icing sugar

Steps:

  • Preheat oven to 350°F.
  • Combine all ingredients and mix for a FULL 10 minutes.
  • Yes, I said a full 10 minutes!
  • Mixture will start out very dry and crumbly but will become batter like after the full 10 minutes.
  • I like to use my stand mixer for this, but a hand mixer will do the trick if it is a strong one.
  • Drop from teaspoons or a piping bag onto a cookie sheet, I find teaspoons work best.
  • Decorate with maraschino cherries or sprinkles if you feel fancy.
  • Bake for approx 15 minutes or until bottoms are very lightly brown.
  • Watch that the tops don't turn brown!

2 teaspoons vanilla (or you 1 teaspoon almond extract)
1/2 cup confectioners' sugar
1/4 cup cornstarch
1 1/2 cups flour
1/3 cup mini chocolate chip
confectioners' sugar, for dusting (optional)

Steps:

  • Set oven to 350 degrees (set oven rack to second-lowest position).
  • Prepare an ungreased cookie/baking sheet.
  • In a medium bowl beat softened butter with vanilla using an electric mixer until fluffy (about 4 minutes).
  • Add in confectioners sugar, cornstarch and flour; beat on low speed for about 1 minute, then on high speed for 3-4 minutes more.
  • Add in the mini chocolate chips; mix to combine.
  • Drop by spoonfuls about 2-inches apart on the baking sheet.
  • Bake for about 10-12 minutes (watch that the edges don't brown too much).
  • Cool completely on wire racks then lightly dust with confectioners sugar if desired.

In North Africa & the Middle East are many variations of the humble shortbread, they all go by different names but are all very similar in taste & appearance. This Turkish recipe is very similar to my favourite Algerian shortbread called Ghraybia. I also like to make these using 2 cups of Self Rising flour (omitting the baking powder) & to use a mix of 3 tbsp ghee plus margarine to make 2 cups (when doing this I omit the vanilla as I like to taste the sweetness of the ghee).

1 cup unsalted butter, room temperature
2 cups flour
1 cup icing sugar (split into 2 half cups) or 1 cup confectioners' sugar (split into 2 half cups)
1 teaspoon vanilla
1/2 teaspoon baking powder

Steps:

  • Preheat the oven to 160c.
  • In a medium sized mixing bowl, cream 1/2 a cup of the icing sugar, the butter & the vanilla.
  • Sift the flour and the baking powder, slowly add to the creamed butter. Mix well with a wooden spoon.
  • One thoroughly combined, roll a teaspoonful of the dough at a time into balls. Place the balls on a baking tray lined with parchment or baking paper.
  • Bake for 15-20 minutes, they should be cooked through - firm - but remain pale in colour.
  • Dust the shortbread straight from the oven with some of the remaining icing sugar (sieved).
  • Allow to cool, then just before serving dust again with the rest of the icing sugar.

  • Now weigh out your ingredients carefully.
  • sieve the plain flour and caster sugar. Then cube the butter. Put it all in together and make sure caster sugar and plain flour is perfectly smoothly mixed. then start rubbing in the butter into plain flour and the caster sugar do this in long enough and efficiently enough so that all the butter melts from your warmth and after quite a while the dough will form into a large ball.
  • Then what you need to do is roll them into a sausage on a clean working table in your kitchen. And then cut them into the sizes you want and make them square or round.
  • Put them in oven about 170*C for 30 mins note all ovens are different so may differ this is an approximate so keep checking your oven
