DEEP FRIED SUMMER SQUASH
Deep-fried summer squash is a tasty alternative for vegetarians and veggie lovers. The fried squash slices make a great snack with marinara sauce.

Steps:
- Gather the ingredients.
- Heat about 2 to 3 inches of vegetable oil in a heavy saucepan to 360 F. Or use an electric deep fryer.
- Combine eggs, milk, and salt in a bowl and whisk to blend.
- Put the flour in a wide, shallow bowl or plate.
- Dip squash in the egg batter and then dredge the slices in flour until well coated.
- Fry in batches in deep hot fat, about 360 F, until golden brown.
- Drain on paper towels.
- Season the fried squash slices with salt and pepper or a Creole or seasoned salt blend.

DEEP FRIED YELLOW SQUASH
WE EAT THESE OFTEN IN THE SUMMER WHEN THE SQUASH ARE FRESH OFF THE VINE.I ALSO COOK EXTRA CRISPY AND DIP IN RANCH DRESSING AS A SNACK.

Steps:
- 1. Peel squash with a potato peeler(my preference)
- 2. Slice thickness you prefer
- 3. Put squash in milk
- 4. Put all dry ingredients in a bowl and blend
- 5. Put squash in dry mixture to coat then add to hot oil.
- 6. Cook until golden brown remove and drain.
SWEET FRIED SUMMER SQUASH
Sliced yellow squash is dredged in flour and sugar, then fried until golden brown.

Steps:
- Allow squash to rest for 5 minutes after cutting to release its moisture. Stir the flour, sugar, and salt together in a shallow bowl. Dredge the squash slices in the flour mixture, shaking off any excess, and set aside until needed.
- Melt the shortening in a large skillet over medium-high heat. Arrange the squash in a single layer in the skillet. Cook, turning once, until golden brown, about 5 minutes. Drain on paper towels.

MOM'S YELLOW SQUASH FRITTERS
In the mid-Atlantic coastal area, we make our fritters with raw grated squash. I didn't find any recipes here that did, so I hope you will try these. Mom always made a huge batch of these for us. She had the magic touch! I always look forward to making squash fritters every summer. Note: I use either Canola oil or olive oil to make them healthier. I still use the butter because the fritters just taste better fried in butter. Even better, go out in your garden and bring in fresh squash to make this dish! Note: Corrections on July 17 include: 1 egg, beaten and 1 tsp. baking powder I cannot believe I left those ingredients out - I must have been tired. Sorry.

Steps:
- In a medium bowl, combine the squash, onion, salt, sugar, oil and beaten egg. Stir to blend.
- Combine the baking powder with the flour. Add to squash mixture and blend together until you do not see any flour.
- In a heavy skillet, over medium high, melt the butter.
- Drop spoonfuls of the squash batter into the hot butter. Watch carefully as you do when making pancakes. After a couple of minutes, carefully turn to lightly brown the other side.
- As you continue to fry the fritters, you may find that you need to add more butter to the pan and melt it before adding more spoonfuls of the squash batter.
- Cooking time denotes making the whole batch.
- Note: Add more sugar and flour if you desire.
MELT -IN-YOUR MOUTH DEEP FRIED YELLOW SQUASH
Steps:
- Cut Yellow Squash crosswise into 1/8 inch thick slices, sprinkle with salt & black pepper to taste, toss in a bowl then set aside. In another bowl mix all the remaining dry Ingredients together and gradually add the cold water until you get a smooth consistency of a thick batter (like thick pancake batter)add more water if needed. Heat 1 1/2 inch oil in a 10-inch heavy skillet until it reaches 375°F. Add Yellow squash slices one by one into the thick batter; let the excess batter drip off back in the bowl. Carefully Drop it in the oil. Do the same with the rest of the yellow squash until you have enough in the skillet but do not over crowd the heavy skillet. Cook each side for 1 1/2 minutes or until golden brown. Drain the deep fried Yellow squash on a paper towel. Serve it right away with a Sweet Chili dipping sauce or Marinara sauce.
