INSTANT POT 3-INGREDIENT CHICKEN AND GRAVY
I was worried this would be too salty, and the ingredients didn't sound appealing to me at all. I couldn't figure out how it would make a delicious gravy, but surprise surprise--it sure did. Great over the top of chicken or mashed potatoes. Surprisingly simple but delicious. I used chicken thighs because I prefer dark meat, but you could use chicken breasts (cook for 12 minutes if using breasts).

Steps:
- Add water or broth into instant pot. Add chicken.
- Sprinkle onion soup mix over top, and dump cream of mushroom soup on top of chicken. Do not stir.
- Cover and make sure the valve is on sealing. Set the timer to manual (high pressure) for 15 minutes.
- When the timer beeps let the pressure release naturally for 5 to 10 minutes and then release the rest of the pressure by moving the valve to venting. Remove the lid.
- Use a spoon to break up the chicken.
- Serve chicken and gravy over potatoes, noodles, toast, biscuits, or rice.

CHICKEN, ROSEMARY AND MUSHROOM GRAVY
I made this with some left overs and found it to be a lovely, light accompaniment to a traditional English chicken roast dinner.

- Once you have roasted (and served if you wish) your chicken and it has cooled, carefully peel the skin off and put to one side.
- Boil four cups worth of water and place in a small pan on a high heat. Boil the chicken in this water for about 10 minutes.
- After ten minutes add wine, rosemary and crushed garlic.
- Leave to boil for another 5 minutes.
- Once you can smell the flavours really starting to come together, transfer into a skillet on a medium heat on a larger ring (the ring that you cook on should always correspond to the size of the pan you're using). Add the mushrooms.
- Let the mix really boil down and reduce.
- When reduced to your liking, sieve out the solids, putting the liquid back into the original pan.
- Over a heat, add the double cream to the mixture and whisk with a sauce whisk. It should start to thicken.
- If you've had problems getting it to thicken, feel free to "cheat" with a little cornflour.

CHICKEN IN MUSHROOM GRAVY
This is the best chicken dish I have ever come up with. I threw it together one day when the cupboard was pretty bare and have been making it regularly ever since. It is quick and easy, and apart from the chicken, all the ingredients will keep dry in the cupboard for months. It is low in fat for a meat dish but the gravy doesn't taste like either shiitake mushrooms or tomatoes - instead they combine to taste like the richest, meatiest gravy ever.

- Skin the chicken thighs and remove any visible fat from them.
- Put them in a stove-top casserole with the broken up shiitake and the tomatoes, snipped into small pieces.
- Pour the 2 cups of water, the tamari or soy sauce and the Worcestershire sauce over them and simmer until tender.
- Mix the cornstarch with 1/2 cup of cold water and stir it into the broth.
- Simmer, stirring well to blend, until the broth thickens and clears.
- Serve over mashed potatoes, or better yet, a combination of equal parts potatoes, carrots and rutabagas mashed together.

- Wash the chicken and pat dry with paper towels. Generously season all sides with salt and pepper. Set aside.
- Turn on the Instant Pot and press the Sauté mode on medium heat. When the monitor displays HOT, add olive oil and butter to coat the bottom. Add mushrooms and cook for 2-3 minutes until the mushrooms start to brown, stirring occasionally.
- Add garlic and saute until fragrant. Add thyme, salt, pepper and continue to saute for 2 more minutes. Add stock and stir together until well-mixed. Turn off the Sauté mode.
- Add chicken to the pot in a single layer, nudging the mushrooms to the sides. The chicken should be sitting at the bottom of the pot, submerged in the liquid.

- Sauté Mushrooms: Select sauté mode on pressure cooker (Note 4) for medium heat. Once heated, add olive oil and mushrooms. Stirring occasionally, cook until juices are released, a few minutes. Stir in cream, water, garlic, and cayenne until well-mixed. Turn off sauté mode.
- Pressure Cook: Add chicken breasts to pot in single layer, nudging aside mushrooms so that chicken breasts sit along bottom of pot, submerged in liquid. Secure lid and seal vent. Cook for 6 minutes (Note 5) at high pressure, followed by 5-minute natural release. Manually release remaining pressure by turning knob to venting position. Uncover and transfer only chicken onto serving plates.
- Thicken Gravy: Stir remaining liquid in pot, and scoop 1/4 cup into small bowl. Combine with corn starch and stir until completely dissolved. Add corn starch mixture to pot. Gradually stir in parmesan cheese. Simmer on sauté mode until thickened to form gravy, about 5 minutes, stirring frequently. Turn off sauté mode. Add salt and pepper to taste.
