VEGETARIAN CHILI

2 tablespoons canola oil
1 1/2 cups chopped yellow onions
1 cup chopped red bell peppers
2 tablespoons minced garlic
2 to 3 serrano peppers, stemmed, seeded, and minced, depending upon taste
1 medium zucchini, stem ends trimmed and cut into small dice
2 cups fresh corn kernels (about 3 ears)
1 1/2 pounds portobello mushrooms (about 5 large), stemmed, wiped clean and cubed
2 tablespoons chili powder
1 tablespooon ground cumin
1 1/4 teaspoons salt
1/4 teaspoon cayenne
4 large tomatoes, peeled, seeded and chopped
3 cups cooked black beans, or canned beans, rinsed and drained
1 (15-ounce) can tomato sauce
1 cup vegetable stock, or water
1/4 cup chopped fresh cilantro leaves
Cooked brown rice, accompaniment
Sour cream or strained plain yogurt, garnish
Diced avocado, garnish
Essence, recipe follows, garnish
Chopped green onions, garnish
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • In a large, heavy pot, heat the oil over medium-high heat. Add the onions, bell peppers, garlic, and serrano peppers, and cook, stirring, until soft, about 3 minutes. Add the zucchini, corn, and mushrooms, and cook, stirring, until soft and the vegetables give off their liquid and start to brown around the edges, about 6 minutes. Add the chili powder, cumin, salt and cayenne, and cook, stirring, until fragrant, about 30 seconds. Add the tomatoes and stir well. Add the beans, tomato sauce, and vegetable stock, stir well, and bring to a boil. Reduce the heat to medium-low and simmer, stirring occasionally, for about 20 minutes.
  • Remove from the heat and stir in the cilantro. Adjust the seasoning, to taste.
  • To serve, place 1/4 cup of brown rice in the bottom of each bowl. Ladle the chili into the bowls over the rice. Top each serving with a dollop of sour cream and spoonful of avocado. Sprinkle with Essence and green onions and serve.

4 cloves Garlic, Minced
1 whole Large Onion, Diced
1 whole Red Bell Pepper, Seeded And Diced

2 whole Carrots, Peeled And Diced
2 stalks Celery, Diced
1 whole Jalapeno, Seeded And Finely Diced
3 c. Vegetable Broth (can Sub Chicken Or Beef Broth If You Prefer)
1 can (12 To 14 Ounces) Plain Tomato Sauce
1 can (10 Ounce) Ro-tel (diced Tomatoes And Chiles)
1/2 tsp. Salt, More To Taste
1 tsp. Ground Oregano
1 tbsp. Ground Cumin
2 tbsp. Chili Powder (more To Taste)
1 can (14 Ounces) Kidney Beans, Drained And Rinsed
1 can (14-ounce) Pinto Beans, Drained And Rinsed
1 can Garbanzo Beans, Drained And Rinsed
1 can Black Beans, Drained And Rinsed
1 whole Large Zucchini (or 2 Medium Zucchini), Diced
1/4 c. Masa (corn Flour) Or Regular Cornmeal
1/2 c. Warm Water
Cotija Cheese, For Serving (optional)
Pico De Gallo, For Serving (optional)
Cilantro Leaves, For Serving (optional)

Steps:

  • In a large pot, heat the oil over medium heat. Add the garlic, onion, 3 colors of bell pepper, carrots, celery, and jalapeno, then cook for about 5 minutes, stirring occasionally, until starting to soften. Add the oregano, cumin, chili powder, and salt. Stir and cook for a few more minutes. Pour in the broth, tomato sauce, and Ro-tel. Stir, bring to a boil, then reduce the heat to low, cover, and simmer for 30 minutes. Add the beans and zucchini, stir, then cover and simmer for 30 more minutes.Mix the masa with the warm water and stir it into the pot. Simmer for 15 more minutes. Taste and adjust seasonings. Serve with Cotija cheese, pico de gallo, and cilantro.Variations• Add 2 tablespoons tomato paste for a richer tomato flavor.• Substitute 1 cup of the stock with a bottle of Mexican beer.• Add chopped mushrooms, diced butternut squash, parsnips, or any vegetable you'd like.• Top with a big spoonful of pico de gallo or chopped tomatoes.• Top with a dollop of sour cream.• Top with grated sharp cheddar.Serve• With corn or flour tortillas• With corn chips or tortilla chips, for dipping• With baked potatoes• On top of a plate of cheese nachos• Inside crisp taco shells with cheese, lettuce, and tomatoes

1 Tbsp. olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 tsp. kosher salt
2 Tbsp. chili powder
1 Tbsp. cumin
2 tsp. dried oregano
1 28 oz. can crushed tomatoes
4 cups vegetable stock
1 15.5 oz. can great northern beans, drained and rinsed
1 15.5 oz. can pinto beans, drained and rinsed
1 15.5 oz. can black beans, drained and rinsed
1 15.5 oz. can kidney beans, drained and rinsed
1 15.5 oz. can cannellini beans, drained and rinsed
3 Tbsp. cornmeal

Steps:

  • Heat a heavy bottom pot over medium low heat. Add olive oil and onion. Saute 2 to 3 minutes, until soft and translucent. Add garlic and salt and cook another minute. Stir in chili powder, cumin, oregano, crushed tomatoes and vegetable stock. Bump up heat to medium and bring to a simmer. Cook, stirring occasionally, for 30 minutes.
  • Stir in beans and cornmeal. Cook another 10 to 15 minutes, until beans are heated through and chili has thickened.

1 to 2 tablespoons chili powder
2 tablespoons sugar
1 teaspoon ground cumin
3/4 teaspoon dried oregano
1 small zucchini, sliced 1/4 inch thick
1 small yellow squash, sliced 1/4 inch thick
2 cans (28 ounces each) crushed tomatoes
1/3 cup ketchup
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained

Steps:

  • In a Dutch oven, saute onions and green pepper in oil until tender. Add garlic; cook 1 minute longer. Stir in water and carrots; cover and cook over medium-low heat for 5 minutes. , Add the potatoes, broth, chili powder, sugar, cumin and oregano; cover and cook for 10 minutes. , Add the zucchini, squash, tomatoes and ketchup; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Stir in beans and peas; simmer for 10 minutes.

1 medium onion, chopped
1 medium green bell pepper, seeded and chopped
1 medium carrot, diced
2 cups unpeeled unseeded fresh tomatoes
6 garlic cloves, finely chopped
1 (16 ounce) can pinto beans, undrained
1 (15 1/2 ounce) can red kidney beans, undrained
1 (15 ounce) can crushed tomatoes
1 lb firm tofu, rinsed, patted dry and crumbled
2 cups water (or can use vegetable broth)
2 cups frozen whole kernel corn
2 teaspoons salt (I use seasoned salt)
1 -2 tablespoon chili powder
1 tablespoon cumin
1/4 teaspoon cayenne pepper
fresh ground black pepper

Steps:

  • Heat oil in a 5-qt Dutch oven.
  • Add onions, green peppers and carrots; sauté over med heat until tender.
  • Add fresh tomatoes, garlic, beans, crushed tomatoes, tofu, water, corn, salt, chili powder, cumin and cayenne pepper.
  • Simmer for 45-60 minutes or until done, stirring often, adjusting all seasonings to suit taste.
  • About halfway through cooking time season with black pepper and more salt if needed.

3 pounds carrots, chopped
4 medium zucchini, chopped

1 large bunch broccoli (or 2 smaller ones), chopped
1 bunch celery, chopped
1 gallon chopped tomatoes packed in juice
3/4 cup chili powder
1/2 cup all-purpose seasoning, such as Spike
1/2 cup onion powder
1/3 cup dried basil
1/3 cup garlic powder
1/3 cup dried oregano
2 teaspoons ground black pepper
4 cups textured vegetable protein, soaked in hot water to reconstitute, then rinsed and drained
6 cups canned kidney beans, rinsed and drained

Steps:

  • Heat the olive oil in a large pot over medium heat. Add the cumin seeds, crushed red pepper and fennel seeds and cook until very aromatic, 3 to 4 minutes. Add the carrots, zucchini, onions, broccoli and celery and saute until the veggies are tender, about 10 minutes. Add the tomatoes, 8 cups water, chili powder, all-purpose seasoning, onion powder, basil, garlic powder, oregano and black pepper and stir to combine. Stir in the textured vegetable protein, then the beans. Simmer for 10 to 15 minutes. Taste and adjust seasoning if need. Serve hot.
