SPANAKOPITA CHICKEN MEATBALLS WITH SPICY CUCUMBER AND YOGURT SAUCE



Spanakopita Chicken Meatballs with Spicy Cucumber and Yogurt Sauce image

1 tablespoon extra-virgin olive oil, plus some for liberal drizzling
1 small onion, finely chopped
4 cloves garlic, chopped, divided
2 boxes frozen chopped spinach, defrosted.
3/4 cup crumbled feta cheese
1 pound ground chicken
1 tablespoons grill seasoning (recommended: McCormick Montreal Seasoning)
1 1/2 cups Greek style plain yogurt
1/3 seedless cucumber, peeled and chopped
3 tablespoons fresh dill
1/2 lemon, juiced
1 1/2 teaspoons, 1/2 a palm full, cumin
1 1/2 teaspoons, 1/2 a palm full, coriander

Steps:

  • Preheat the oven to 400 degrees F.
  • In a bowl combine onion and 3 cloves of garlic. Squeeze the water out of the spinach until completely dry. Separate the spinach as you add it to garlic and onion. Add feta, chicken and grill seasoning to the bowl and a liberal drizzle of extra-virgin olive oil. Mix the meat with veggies and feta and form 18 (1 1/2-inch) meatballs. Place the meatballs on a nonstick cookie sheet and bake 10 to 12 minutes until they are golden and juices run clear.
  • Place yogurt, garlic, cucumber, dill, lemon juice, cumin, coriander and a little salt in food processor and process until smooth. Adjust seasonings and transfer to a serving bowl. Serve meatballs alongside sauce with toothpicks.

Crustless Lemon or Vanilla Cheesecake With Greek Yogurt (Lowfat) image

This recipe is similar to my Breakfast Cheesecake for South Beach Diet but this uses cream cheese (or neufchatel) and Greek yogurt. I've been trying to convert some recipes using whipped cottage cheese to recipes that use Greek yogurt, and this one is another keeper, I think. The vanilla and lemon versions are the same except that the lemon version calls for lemon rind and lemon juice, plus some additional sweetener.

8 ounces cream cheese or 8 ounces neufchatel cheese
16 ounces plain lowfat Greek yogurt (2 cups)
1/2 cup sugar (you may want more if making the lemon version)
1 1/2 teaspoons vanilla extract
1/4 teaspoon grated lemon rind (or to taste) (optional)
2 tablespoons lemon juice (or to taste) (optional)
4 large eggs
cooking spray

Steps:

  • Have all ingredients at room temperature, but if your cream cheese or neufchatel cheese is still cold, microwave it for about 25 seconds to soften it.
  • Beat the softened cream cheese with an electric mixer on medium speed until blended and smooth. Add Greek yogurt and mix to incorporate.
  • Add sugar and vanilla, lemon rind and juice (if using); beat until incorporated.
  • Lightly beat one egg, add to batter and beat briefly just to combine. Repeat with remaining eggs, one at a time.
  • Spray an 8-inch square baking pan with cooking spray. Pour batter into pan.
  • Bake in middle of oven at 325 degrees for about 40 minutes, until center is almost set (the center should jiggle slightly when pan is gently shaken).
  • Remove from oven and cool on a rack. When completely cool, chill for at least 12 hours (or place in freezer for about 30-40 minutes).
  • NOTE: I just tried making this with honey and did not like the result as much as when it is made with sugar.

Grilled Chicken/Veggie Kabobs With Greek Yogurt Sauce image

Always loved the taste of Greek Yogurt sauce that accompanies Chicken Souvlaki and Gyros. Created this recipe so that I could enjoy it at home.

16 ounces plain yogurt (if skim or low-fat yogurt is used, strain in coffee filter overnight before using, to remove excess)
1 cucumber, peeled and seeded, grated
4 teaspoons olive oil
3 garlic cloves, minced (pressed through a garlic press)
1 teaspoon white vinegar
salt and pepper
6 boneless chicken cutlets
2 (2/3 ounce) packets Good Seasons salad dressing mix, prepared according to packet instructions
3 zucchini, sliced into 2 inch rounds
2 large onions, quartered
2 green peppers, trimmed an cut into 2 inch squares
potato, small, whole, 2 cans
skewer
pita bread (optional)
olive oil (optional)

Steps:

  • For yogurt sauce: Mix all ingredients and refrigerate overnight.
  • For chicken and veggies: Cut chicken breasts into 2" pieces.
  • Marinate in one of the prepared Good Seasons dressing for at least 1 hour. (The other one will be used for basting)
  • Remove chicken from marinade--discard marinade.
  • Alternately thread chicken, zucchini, onions, and green peppers on skewer (can cook veggies separately from chicken if desired) On separate skewers thread potatoes.
  • Preheat grill until hot.
  • Baste potatoes with dressing and place on grill, turning and basting occasionally--cook until browned.
  • Grill chicken until cooked, basting occasionally.
  • Veggies are done when they're tender and darkened around the edges.
  • Brush both sides of pita with olive oil and grill for 3 minutes each side.
  • Serve chicken, veggies, and potatoes with yogurt sauce and pitas.

My twist on a Rachel Ray recipe. If you can't find Greek yogurt, you could use a combination of sour cream and mayo. Fresh mint is a nice variation to the sauce. This recipe originally called for ground chicken.

1 tablespoon extra virgin olive oil
1 small red onion, finely chopped, divided
4 garlic cloves, chopped, divided
5 ounces frozen chopped spinach (defrost and squeeze out moisture)
3/4 cup crumbled feta cheese
1/2 lb ground beef
1/2 lb ground lamb
1 tablespoon grill seasoning (recommended ( McCormick Montreal Seasoning)
1 egg, slightly beaten
1/4 cup Italian breadcrumbs
1 1/2 cups Greek yogurt
1/3 seedless cucumber, peeled and chopped
3 tablespoons fresh dill or 3 tablespoons of fresh mint, chopped
1/2 lemon, juiced
1/2 teaspoon oregano, dried
salt, to taste

Steps:

  • Preheat the oven to 400 degrees F.
  • In a bowl combine 3 cloves of garlic and all of red onion EXCEPT 2 tablespoons, reserve 1 garlic clove and onion for yogurt sauce.
  • Squeeze the water out of the spinach until completely dry. Separate the spinach as you add it to garlic and onion.
  • Add feta, egg, breadcrumbs, ground beef, lamb and grill seasoning to the bowl. Mix and combine well.
  • Form mixture into 1 1/2-inch, bite-sized meatballs. Place the meatballs on a nonstick cookie sheet. ***At this point you could refrigerate until ready to bake.
  • Bake meatballs at 375 degrees for 20 minutes until they are cooked through.
  • To make the sauce, place yogurt, 1 garlic clove, 2 Tablespoons onion, cucumber, dill, lemon juice, oregano and a little salt in food processor and process until smooth. Adjust seasonings to taste and transfer to a serving bowl. Serve meatballs alongside sauce with toothpicks.
