Whenever I go to a party, everyone requests that I bring this Mediterranean dip. If you enjoy hummus and veggies, you will like this dip! Serve with homemade pita chips or tortilla chips.

1 (8 ounce) package cream cheese, softened
3 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon Italian seasoning
1 ¼ cups hummus
1 cup chopped, seeded Roma tomatoes
1 cup chopped cucumbers
½ cup kalamata olives, sliced
⅓ cup chopped red onion
½ cup crumbled feta cheese

Steps:

  • Mix cream cheese, garlic, lemon juice, and Italian seasoning together. Spread mixture onto the bottom of a round 10-inch dish. Spread hummus on top.
  • Mix tomatoes, cucumbers, olives, and red onion together in a bowl; spread over the hummus. Sprinkle feta cheese on top. Refrigerate for at least 1 hour.

1 roasted red pepper, diced
1 (1 ounce) envelope dry onion soup mix
½ cup crumbled feta cheese
1 (8 ounce) package cream cheese
½ cup sour cream
10 pitted kalamata olives

Steps:

  • In a food processor, combine the garlic, red pepper, onion soup mix, feta cheese, cream cheese, sour cream and olives. Process until smooth and well blended. Transfer to a bowl, and refrigerate for 30 minutes to blend flavors before serving.

Baked pita chips

Steps:

  • Spread hummus into a 9-in. pie plate. Top with sour cream, red peppers, cheese, onion and olives. Sprinkle with parsley. Refrigerate until serving. Serve with pita chips.

1 diced roasted red pepper
1/2 cup crumbled feta cheese
8 oz. softened cream cheese
1/2 cup sour cream

Steps:

  • Combine all ingredients in food processor; process until smooth and well-blended. Place in serving bowl; chill 30 minutes. Serve with Bountiful Beer Bread, pita wedges or Italian bread. Makes 8-10 servings.

1 loaf (16 ounces) frozen white or whole wheat bread dough
3 tablespoons olive or vegetable oil
3 large onions, thinly sliced
1 tablespoon chopped fresh basil or thyme leaves or 1 teaspoon dried basil leaves or thyme leaves
1/8 teaspoon white pepper
2 cans (2 ounces each) anchovy fillets, drained
10 oil-cured Greek olives, cut in half and pitted

Steps:

  • Thaw bread dough as directed on package. Lightly grease cookie sheet.
  • Heat oil in 10-inch skillet over medium heat. Stir in onions; reduce heat to low. Cover and cook about 25 minutes, stirring occasionally, until onions are very tender. Stir in basil and white pepper.
  • Flatten dough into rectangle on lightly floured surface. Roll dough with floured rolling pin into 14x11-inch rectangle. Place on cookie sheet; let stand 15 minutes.
  • Spoon onion mixture evenly over dough to within 1 inch of edges. Arrange anchovies in lattice pattern on onions. Top with olives. Let stand 15 minutes.
  • Heat oven to 425°F. Bake 15 to 20 minutes or until crust is golden brown.

2 tablespoons milk
1 tablespoon dried basil
10 ounces frozen spinach, thawed and well-drained
1 large tomatoes, chopped
3 green onions, chopped
1/4 cup sliced black olives

Steps:

  • In a mixing bowl, beat cream cheese, 1 cup of feta, milk and basil until well-blended. Spread in bottom of 9" pie plate.
  • Top with drained spinach, then tomato, then green onion, then black olives, then remaining feta cheese.
  • Cover and refrigerate about 1 hour before serving.
