INSTANT POT GREEK CHICKEN BOWLS



Instant Pot Greek Chicken Bowls image

The flavors of the Mediterranean are cooked up in 30 minutes in an Instant Pot® for a quick and filling, souvlaki-inspired weeknight dinner.

1/2 teaspoon dried oregano
1/2 teaspoon Spanish paprika
Pinch crushed red pepper flakes
1/4 cup plus 2 tablespoons olive oil
3 cloves garlic, grated
1 1/2 pounds boneless, skinless chicken breasts, sliced 1/2-inch thick
Kosher salt and freshly ground black pepper
1 cup couscous
1 cup full-fat Greek yogurt
Juice of 1 lemon
1 English cucumber, chopped
1 cup cherry tomatoes, quartered
1/2 cup pitted Kalamata olives, chopped
1/2 cup crumbled feta
2 tablespoons chopped fresh dill

Steps:

  • Whisk together the oregano, paprika, red pepper flakes, 1/4 cup olive oil, 2 cloves garlic and 1/2 cup water in the pot of a 6-quart Instant Pot®. Add the chicken, 2 teaspoons salt and a few grinds of pepper and toss until well coated.
  • Follow the manufacturer's guide for locking the lid and preparing to cook. Set the pot to pressure cook on high for 3 minutes (see Cook's Note). After the pressure cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Be careful of any remaining steam and unlock and remove the lid. Transfer the chicken to a medium bowl and turn the pot off. Add the couscous, 1/2 teaspoon salt and a few grinds of pepper to the pot and stir to combine with the hot liquid. Place the glass lid on the top and let the couscous sit until tender and fluffy, 6 to 7 minutes. Fluff with a fork.
  • Meanwhile, mix together the yogurt, lemon juice, remaining clove garlic and 2 tablespoons water in a medium bowl until well combined. Spread 1/4 cup of the yogurt sauce on the bottom of a plate. Top with a quarter of the couscous, cucumbers, tomatoes, Kalamata olives and feta. Repeat with the remaining ingredients 3 more times. Garnish each plate with the dill and a drizzle of the remaining 2 tablespoons olive oil.

1 cup bulgur
Kosher salt
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1/2 small shallot, minced
1 teaspoon ground cumin
1 teaspoon Dijon mustard
Freshly ground pepper
2 cups shredded rotisserie chicken
2 cups shredded kale
1 cup shredded romaine
1/2 cup chopped cucumber
1/2 cup chopped red bell pepper
1/2 cup chopped cherry tomatoes
Hummus, for topping
Chopped fresh parsley, for topping
Pita bread, for serving

Steps:

  • Cook the bulgur as the label directs; season with salt.
  • Whisk the olive oil, vinegar, shallot, cumin and mustard in a medium bowl, then season the dressing with salt and pepper. In a separate bowl, toss half of the dressing with the chicken. Toss the remaining dressing with the kale, romaine, cucumber, bell pepper and tomatoes.
  • Divide the bulgur among 4 bowls, then top with the kale mixture and chicken. Top with hummus and sprinkle with parsley. Serve with pita bread.

2 tablespoons all-purpose flour
Pinch of cayenne
2 tablespoons California extra-virgin olive oil
3 large chicken breast cutlets, pounded or thinly sliced
Juice of half a lemon, plus four slices of lemon
2 large cloves garlic, sliced
1/3 cup sliced kalamata olives, pitted
1/3 cup green olives (we use some marinated in herbs de Provence), pitted
3 tablespoons fresh Italian parsley, chopped
1/2 teaspoon kosher salt
Fresh pepper, to taste
2 teaspoons butter

Steps:

  • Combine the flour and cayenne in a shallow bowl. Heat the olive oil in a medium skillet on medium flame until hot.
  • Dredge the chicken in the flour mixture, shaking off any excess flour. Place the chicken in the hot skillet and cook until lightly golden, about 3 minutes.
  • Turn the chicken over, add the lemon juice, lemon slices, garlic, olives, 1 1/2 tablespoons of the parsley, and the salt and pepper. Cook for 8 to 10 minutes, shaking the pan occasionally and stirring the olive mixture gently to avoid burning the garlic.
  • Add the butter to the pan, shaking to combine the sauce.
  • Place the chicken breasts on a serving plate, then pour the olive mixture over the top. Garnish with the remaining 1 1/2 tablespoons of the fresh parsley.

I had the leftovers cold for lunch today, and it was just as good as last night. I used about 2 oz of feta, and I used a deli-roasted chicken.

1 1/4 cups fat-free low-sodium chicken broth
1 (5 5/8 ounce) package toasted pine nut couscous
3 cups chopped cooked chicken
1/4 cup chopped fresh basil
1 (4 ounce) package crumbled feta cheese
1 pint grape tomatoes, halved
1 1/2 tablespoons fresh lemon juice
1 teaspoon grated lemon rind
1/4 teaspoon pepper

Steps:

  • Heat broth and seasoning packet from couscous in the microwave on high for 3-5 minutes or until broth begins to boil. Place couscous in a large bowl, and stir in broth mixture. Cover and let stand 5 minutes.
  • Fluff couscous with a fork; stir in chicken and next 6 ingredients. Serve warm or cold.
  • Note: Substitute 4 tsp dried basil if you can't get fresh.

1 (5 5/8 ounce) package near east roasted garlic & olive oil couscous
2 tablespoons olive oil (I used the oil from the sun-dried tomatoes)
1/2-1 lb raw boneless skinless chicken breast (about 2)
1 garlic clove, minced
2 cups Baby Spinach
1 1/3 cups water
1/3 cup chopped sun-dried tomato packed in oil, drained
1/2 teaspoon red pepper flakes (I only use 1/4 tsp.)
1/4 cup feta cheese, crumbled
2 tablespoons toasted pine nuts (optional)

Steps:

  • In a large saucepan, heat the olive oil over medium heat. Add chicken and garlic and cook 5 minutes, stirring frequently or until the chicken is no longer pink. Add the spinach during the last 1-2 minutes of cooking chicken.
  • Stir in water, tomatoes, red pepper flakes, and spice pack from couscous. Bring to a boil.
  • Stir in couscous. Cover and remove from heat. Let stand 5 minutes.
  • Stir with a fork to fluff couscous. Stir in feta cheese and pine nuts if using. Serve.
