2 cups 2% milk
1 cup chicken or vegetable broth
1 cup water
1 teaspoon salt
1 cup uncooked old-fashioned grits
2 to 3 cups shredded sharp cheddar or Monterey Jack cheese
Pepper and additional salt to taste

Steps:

  • Combine milk, broth and water in a large saucepan; bring to a boil. Add salt. Whisk in grits; reduce heat to low. Cook, stirring frequently, until creamy, 15-20 minutes., Stir in cheese until melted. Season with pepper and additional salt to taste.

Whisk butter, whole milk and sharp cheddar together with ground cornmeal for Alton Brown's creamy Cheese Grits recipe from Good Eats on Food Network.

2 cups whole milk
2 cups water
1 1/2 teaspoons kosher salt
1 cup coarse ground cornmeal
1/2 teaspoon freshly ground black pepper
4 tablespoons unsalted butter
4 ounces sharp Cheddar, shredded

Steps:

  • Place the milk, water, and salt into a large, heavy-bottomed pot over medium-high heat and bring to a boil. Once the milk mixture comes to a boil, gradually add the cornmeal while continually whisking. Once all of the cornmeal has been incorporated, decrease the heat to low and cover. Remove lid and whisk frequently, every 3 to 4 minutes, to prevent grits from sticking or forming lumps; make sure to get into corners of pot when whisking. Cook for 20 to 25 minutes or until mixture is creamy.
  • Remove from the heat, add the pepper and butter, and whisk to combine. Once the butter is melted, gradually whisk in the cheese a little at a time. Serve immediately.

1 tablespoon sweet paprika
2 1/2 teaspoons salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried thyme
3/4 teaspoon ground black pepper
3/4 teaspoon ground white pepper
1/2 teaspoon cayenne
1 stick (8 tablespoons) unsalted butter, softened
1 1/2 cups whole milk
1/2 cup heavy cream
1 teaspoon salt
1 cup quick-cooking grits
5 ounces Muenster cheese, coarsely grated
2 tablespoons grated Parmesan

Steps:

  • For the blackened butter: Combine everything but the butter in a small bowl and mix until well blended.
  • Add 1 1/2 teaspoons of the spice mixture to the softened butter and blend completely. (Reserve the remaining spice mixture for another use.)
  • Lay a piece of plastic wrap on a work surface. Place the spiced butter on the lower third of the plastic in a 2- to 3-inch-wide oblong shape. Gently wrap the shorter end of the plastic up and over the butter, using it to help shape and roll the butter into a log. Twist the ends of the plastic closed, like a hard-candy wrapper. Chill until firm, at least 30 minutes, preferably 1 hour. (Makes 1/2 cup.)
  • For the cheesy grits: Combine the milk, 3/4 cup water, cream and salt in a medium saucepan over medium heat. Bring to a boil and slowly whisk in the grits, making sure there are no lumps. Reduce the heat to low, cover and cook, stirring occasionally, until thickened and soft, about 8 minutes. Remove from the heat, add the Muenster and Parmesan and stir until blended.
  • Top each serving with 1 tablespoon of the blackened butter.

3/4 cup quick grits
1 cup milk
1/2 cup shredded mozzarella
1/2 cup shredded Cheddar

Steps:

  • In a saucepot over medium-high heat, add 3 cups water and a pinch of salt. Bring the water to a boil, and then stir in the grits and milk. Raise the heat to bring to a boil again, and then lower to a simmer and cook for about 4 minutes. When the grits begin to thicken but there is still plenty of moisture left, add the mozzarella and Cheddar along with a few grinds of pepper. Stir to melt the cheese, taste and season with salt, if needed. Serve warm.

  • Heat oven to 350°F.
  • Cook and stir peppers and onions in nonstick skillet on medium heat 5 min. or until crisp-tender, stirring frequently. Place in medium bowl. Add cooked grits, 3/4 cup cheese; stir until blended. Add eggs; mix well.
  • Pour into 8-inch square baking dish sprayed with cooking spray; sprinkle with remaining cheese.
  • Bake 30 min. or until center is set. Let stand 10 min. before serving.

Sausage, Shrimp and Peppers over Cheesy Grits image

2 cups low-sodium chicken stock, plus more if needed
2 cups cream, plus more if needed
4 tablespoons unsalted butter
3/4 cup grits or polenta
4 ounces American cheese, torn into pieces
1/2 cup grated Parmesan
Kosher salt and freshly cracked black pepper
1 small orange bell pepper, cut in small dice
1 small red bell pepper, cut in small dice
1/2 Spanish onion, cut in small dice
3 tablespoons olive oil
1 pound Parmesan-parsley pork sausage, cut into 1/4-inch-thick rounds
4 cloves garlic, minced
1 pound uncooked large shrimp, peeled, deveined and cut into thirds
1/2 cup low-sodium chicken stock
1 tablespoon unsalted butter
Chopped fresh parsley, for garnish

Steps:

  • For the grits: Bring the chicken stock, the cream and butter to a simmer in a heavy saucepan. Gradually whisk in the grits. Reduce the heat and simmer until the grits have thickened, 15 to 20 minutes, stirring occasionally to avoid lumps. Once the grits are thick and creamy, stir in the cheeses and adjust the consistency with stock and/or cream and season with salt and pepper. These grits provide a wonderful bed to soak up the flavor from the sausage, shrimp and veggies.
  • For the sausage, shrimp and peppers: Heat the olive oil in a large skillet. Add the sausages and brown. Then transfer to a plate with a slotted spoon, leaving all of the fat in the skillet. Add the garlic, bell peppers and onions to the skillet, sprinkle with salt and pepper and saute until tender, 5 to 7 minutes. Add the shrimp and saute until they begin to turn pink, 1 to 2 minutes. Add the reserved sausage and the chicken stock to the skillet and let reduce a bit to intensify those flavors. Stir in the butter at the end and garnish with parsley.
  • Serve the sausage mix over the grits.
