1 7-ounce container 2% plain Greek yogurt (about 3/4 cup)
1/3 cup crumbled feta cheese (about 2 ounces)
1 Persian or Kirby cucumber, grated
2 tablespoons chopped fresh mint
2 cloves garlic, grated
Kosher salt and freshly ground pepper
1 1/4 pounds lean ground turkey
2 tablespoons extra-virgin olive oil
4 sesame hamburger buns or potato rolls, split and toasted
Lettuce and tomato slices, for topping

Potato chips, for serving

Steps:

  • Combine the yogurt, feta, cucumber, mint, half of the garlic, 1 tablespoon water, 1/2 teaspoon salt and a few grinds of pepper in a small bowl. Refrigerate until ready to serve.
  • Combine the turkey, the remaining garlic, 1 teaspoon salt and a few grinds of pepper in a medium bowl. Form into four 1/2-inch-thick patties. Heat a large nonstick skillet over medium-high heat. Add the olive oil, then add the patties and cook until browned and cooked through, 4 to 5 minutes per side. Transfer to a plate.
  • Spread the yogurt sauce on the buns. Sandwich with the burgers; top with lettuce and tomato. Serve with potato chips.

1/4 cup roasted red peppers, finely chopped
2 tablespoons chopped fresh parsley
1/2 teaspoon oregano
1 teaspoon cumin
1/2 teaspoon paprika
1/8 teaspoon garlic powder
1 teaspoon salt
1/8 teaspoon black pepper
4 Hamburger buns
Crumbled feta cheese
Roasted red peppers, chopped
Fresh arugula

Steps:

  • Combine ground chuck, roasted red peppers, parsley, oregano, cumin, paprika, garlic powder, salt and pepper, mix well. Portion into four patties and grill to 160° F internal temperature. Serve burgers on buns and top each burger with crumbled feta cheese, roasted red peppers and fresh arugula.

4 pita breads
2 lbs ground lamb
1 1/2 cups onions, finely chopped
1 cup parsley, finely chopped
2 teaspoons salt
1 teaspoon cinnamon
1 teaspoon paprika
1/2 teaspoon cayenne pepper
2 cups yogurt
1/2 cup cucumber, finely chopped
1 tablespoon lemon juice
dill pickle, sliced
tomatoes, sliced
red onion, sliced

Steps:

  • Cut each pita bread in half, crosswise, to form a pocket. Wrap pitas in foil and warm in a 300 degree oven while preparing burgers.
  • Make sauce by combining yogurt, cucumber, and lemon juice to serve as a sauce.
  • Thoroughly combine remaining ingredients by gently kneading with your fingers. Shape into 8 1/2-inch thick, oval patties to accommodate the pita halves. Barbecue or broil, leaving them a little pink in the middle keeps the burgers from tasting dry.
  • Let your diners fill each pita half with a burger and choices of sliced pickles, tomatoes, and red onion,then a dollop of sauce.

DH and I made this recipe last night. It is from the Once Again Brand of products listed in an ad in the Vegetarian Times. I was really glad we tried this recipe. We really enjoyed it. Do use a nice store bought or homemade tzatziki sauce on top of the burgers as they benefit from the added moisture. While the ingredient list looks long, most go right into a food processor and it does not take long to prep at all.

2 (15 ounce) cans low sodium garbanzo beans, drained
1/3 cup tahini
1 cup panko breadcrumbs
1 large egg
1/2 cup frozen chopped spinach, defrosted
1/2 cup sliced green onion
1/4 cup chopped cilantro
2 tablespoons fresh lemon juice
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1 1/2 teaspoons kosher salt
1/2 cup chopped roasted red pepper
1/2 cup crumbled feta cheese
1/4 cup chopped kalamata olive
cooking spray

Steps:

  • Preheat oven to 400°F Place the garbanzo beans, tahini, breadcrumbs, egg, spinach, onions, cilantro, lemon juice, olive oil, garlic, cumin, coriander, and salt in the food processor. Pulse until the garbanzo beans are mostly smooth. DO NOT over-process--a few chunks are fine.
  • Scoop the mixture into a bowl and fold in the roasted red peppers, feta, and olives.
  • Spray a cookie sheet well with pan spray. Shape the mix into 6 equally sized patties, flattening slightly, and place on the cookie sheet.
  • Bake the burgers in the oven for 20 minutes. Use a spatula to flip the burgers and continue to cook for an additional 20 minutes, until golden brown.
  • Serve on a toasted burger bun with lettuce, tomato and tzatziki sauce if desired.

1 tablespoon oil
1 red capsicum, thinly sliced
1 yellow capsicum, thinly sliced
1 small red onion, sliced
1 cup passata
500 g Italian sausages
1/4 cup fresh basil, finely chopped
1/4 cup parmesan cheese, grated
40 g baby spinach leaves
4 Italian rolls, lightly toasted

Steps:

  • Heat oil; cook capsicum and onion for 8-10 minutes or until soft and golden, stir in passata, season with salt and pepper. Cook stirring for 1 minute. Remove from heat and keep warm.
  • Preheat an oiled BBQ.
  • Remove casings from sausages and place sausage mince in a mixing bowl, add basil and parmesan; mix well to combine.
  • Shape mixture into 4 patties, cook for 3-4 minutes each side or until done.
  • Place spinach on base of rolls, top with patties, then capsicum mixture and serve.

1 lb ground beef
1/4 cup of grated feta
1/4 cup of chopped olive (dont sqeeze out all the juice)
1/4 cup prepared salsa
1 tablespoon oregano
1 teaspoon garlic granules
1 teaspoon onion powder
1 teaspoon cayenne
4 tablespoons mild paprika
1/2 teaspoon pepper
1 teaspoon cayenne

Steps:

  • Mix all of the ingredients together and let sit in the fridge for 15 minutes or so . Remove from fridge and make 8 patties . BBQ till done. Serve with grilled eggplant and lettuce or anything else you like on your burger . Can also be called sausage burger. ENJOY!
