GREEK-INSPIRED BURGERS WITH HERB-FETA SAUCE
These healthy burgers get a Mediterranean twist with a yogurt sauce seasoned with oregano, lemon and feta cheese. If you can't find ground lamb, ask the butcher to grind some for you.

Steps:
- Preheat grill to medium-high or preheat broiler to high.
- Mix yogurt, feta, 1 tablespoon oregano, lemon zest, lemon juice and 1/4 teaspoon salt in a small bowl.
- Cut 1/4-inch-thick slices of onion to make 1/4 cup. Finely chop more onion to make 1/4 cup. (Reserve any remaining onion for another use.) Mix the chopped onion and meat in a large bowl with the remaining 2 tablespoons oregano and 1/2 teaspoon each salt and pepper. Form into 4 oval patties, about 4 inches by 3 inches.
- Grill or broil the burgers, turning once, until an instant-read thermometer registers 160 degrees F, 4 to 6 minutes per side. Serve in pita halves, with the sauce, onion slices, cucumber and tomato.

Steps:
- Heat oil; cook capsicum and onion for 8-10 minutes or until soft and golden, stir in passata, season with salt and pepper. Cook stirring for 1 minute. Remove from heat and keep warm.
- Preheat an oiled BBQ.
- Remove casings from sausages and place sausage mince in a mixing bowl, add basil and parmesan; mix well to combine.
- Shape mixture into 4 patties, cook for 3-4 minutes each side or until done.
- Place spinach on base of rolls, top with patties, then capsicum mixture and serve.

- To make the burgers, combine the ground beef, egg, dried basil and oregano, breadcrumbs, ketchup, garlic, onion and feta in a large bowl and shape into 4 burger patties.
- Grill or sauté in a pan lightly coated with cooking spray. Cook on 1 side for 7 minutes, then turn over and cook 3 to 5 minutes or just until beef is done.
- Combine all the sauce ingredients in a food processor and purée until smooth.
- Serve the burgers with the sauce.

MEDITERRANEAN VEGGIE BURGERS
DH and I made this recipe last night. It is from the Once Again Brand of products listed in an ad in the Vegetarian Times. I was really glad we tried this recipe. We really enjoyed it. Do use a nice store bought or homemade tzatziki sauce on top of the burgers as they benefit from the added moisture. While the ingredient list looks long, most go right into a food processor and it does not take long to prep at all.

- Preheat oven to 400°F Place the garbanzo beans, tahini, breadcrumbs, egg, spinach, onions, cilantro, lemon juice, olive oil, garlic, cumin, coriander, and salt in the food processor. Pulse until the garbanzo beans are mostly smooth. DO NOT over-process--a few chunks are fine.
- Scoop the mixture into a bowl and fold in the roasted red peppers, feta, and olives.
- Spray a cookie sheet well with pan spray. Shape the mix into 6 equally sized patties, flattening slightly, and place on the cookie sheet.
- Bake the burgers in the oven for 20 minutes. Use a spatula to flip the burgers and continue to cook for an additional 20 minutes, until golden brown.
- Serve on a toasted burger bun with lettuce, tomato and tzatziki sauce if desired.

- In a tiny bowl, combine minced garlic and oil. Season well with salt and pepper and allow it to sit for 10 minutes or so, mixing it occasionally.

- In a medium bowl, mix the cucumbers, onions, vinegar and olive oil. Toss and salt and pepper to taste. Refrigerate until ready to use.
- Preheat the grill (or a skillet) to medium heat. Chop the Garden Tomato Crunchies into small pieces.
